In addition to being gluten free, this soup is also dairy free, getting its creaminess from the potato that is added to the mixture while it is cooking. But if you want to make it even creamier, you can add milk of your choice before serving. Coconut milk or cashew milk work great.

I love this soup for its simplicity and smooth creamy texture without any added dairy. The creaminess comes from blended tomatoes with cooked onions, carrots, celery and garlic mixed with some coconut milk stirred in at the end. I added some vegan parmesan cheese and it melted perfectly on the top. So good!

How To Make Vegan Tomato Soup

This creamy vegan tomato soup comes together easily in just 30 minutes.

Start by rinsing the canned beans well under cold water . Set aside to drain.

Sauté the diced onion in a little veggie broth or water until soft and translucent . Add the garlic, basil, salt and pepper and sauté for a minute to release the flavors .

Add the broth, tomatoes and beans and stir to combine. Cook for 10 minutes.

Take off the heat and add the non-dairy milk . Using an immersion blender purée the soup until smooth and creamy .

Add the balsamic vinegar, if using. Taste and adjust seasoning as necessary.

Optional garnish with fresh basil, drizzle of balsamic, fresh cracked black pepper and croutons or hemp seeds.

What Kind Of Tomatoes Work Best In This Soup

For this recipe I use 3 lbs of tomatoes. Sometimes I like to use up the tomatoes I have on hand so I may mix medium sized tomatoes and cherry tomatoes. If you want to do something like that keep in mind that 15 20 cherry tomatoes equals about 1 lb and 3 medium tomatoes also equal 1 lb. So you could use 20 cherry tomatoes and 6 medium tomatoes or some combination that gets you to the 3 lb mark. Or just use a food scale to weight it all so you know you get it right.

Upon defrosting, the bread wasbread-like. Woot! Soft and pliable, not dry or crumbly. The Whole Grain White Bread tastes like white bread and holds together really well. All I could get from Carter was a Yum! as he stuffed his face with his grilled cheese sandwich and tomato soup.
