What Is French Onion Soup Made Of

Traditionally French onion soup is made by slowly caramelizing onions on the stove top, which can require lots of babysitting and stirring to make sure the onions dont burn. The onions are then coated in flour and simmered for longer with broth. This Slow Cooker French Onion Soup recipe however takes all the amazing flavors of this bistro classic and tosses them all in the slow cooker to make while you are busy doing other things! The first step is to cook all the onions for about 6 hours, which doesnt require any stirring. How To Caramelize Onions:

The first step is to melt a stick of butter in a pan.

Add the onions and sauté 5 minutes until the onions become soft.

Add coconut sugar and spices. I normally wouldn’t add sugar to a soup recipe, but the sugar helps the onions caramelize. Cover and allow the onions to cook for 20 minutes, or until they are caramelized like the next picture.

Add the caramelized onions to a soup pot.

Pour in the beef broth. Add two bay leaves and thyme. Cover and allow to simmer for one hour.

Use a ladle to fill bowls with the gluten free French onion soup.

This is my favorite part. Grab a bag of Milton’s Gluten Free Sea Salt Crackers. Take about 4 or 5 crackers and place them on top of the onion soup.

Top with a thick slice of gruyere cheese. Place the soup bowls in a baking dish and place under a broiler until the cheese gets all melty.

Are Lipton Soup Mixes Still Gluten Free

The oven-roasted potatoes recipe on the Lipton Onion Soup mix box has been a favorite side dish in our house for years.

So when an observant celiac support group leader from Philadelphia called Gluten-Free Living to ask if we knew if it was still gluten-free despite a change in the ingredients, I ran to my pantry. I had just bought a six pack of the mix at a warehouse club.

I am sorry to admit I did not look at the multi-pack in the store, especially since Gluten-Free Living always says you have to read the ingredients list every time you buy a food!

Both Liptons Recipe Secrets Onion and Vegetable soup mixes now list autolyzed yeast extract made from barley. A consumer representative said this is a change in the formulation.

Lipton has a policy of always listing any potentially gluten-containing ingredient on its labels. Allergen labeling laws require wheat to be noted, but Lipton, a Unilever brand, voluntarily also lists any barley or rye. Consumers are advised to use the labels to determine if products are gluten free.

But the consumer representative said the onion soup is estimated to contain only 0.09 parts per million of gluten and the vegetable only 0.04 ppm. These levels are far below the 20 ppm of gluten the Food And Drug Administration has proposed as the cut-off for foods that can be considered gluten free.

Like all things gluten free, you have to weigh the facts that are available in deciding whether to keep using the Lipton soup mixes.
