This diet is designed to be followed for a maximum of seven days, and not to be a long-term healthy eating plan. It consists of homemade cabbage soup, along with a few additional low-calorie foods such as fruit, vegetables and skimmed milk. Loosely speaking, you can consume the following along with unlimited cabbage soup:
- Day 1: Fruit, but no bananas
- Day 2: Leafy green vegetables, raw or cooked, and no fruit
- Day 3: As many fruits and vegetables as you can eat, but no baked potatoes or bananas
- Day 4: Skimmed milk, and as many bananas as you like
- Day 5: 280-570g lean beef or chicken and tomatoes
- Day 6: Beef and green leafy vegetables
- Day 7: Brown rice, unsweetened fruit juice and vegetables

What Should I Do If I Cant Find Some Of The Ingredients Called For In The Keto Soup

If you cant find celery root where you live, you may substitute an equal amount of cauliflower, turnips, jicama, or rutabaga for roughly the same amount of carbs. DO NOT USE PARSNIPS they are much too high in carbs and it could skew your results.
If you cant find swiss chard, collards are an excellent substitute for about the same amount of carbs DO NOT SUB KALE FOR THE SWISS CHARD ITS TOO HIGH IN CARBS AND CAN IMPEDE YOUR WEIGHT LOSS.

Though this unstuffed cabbage roll soup recipe is labeled a slow cooker soup, it can be easily converted to an Instant Pot or stove top recipe. I share the adaptations for each method below.
The general method is the same: cook the beef and drain off any fat. Add the remaining ingredients and stir well. Cover and allow the cabbage to cook down and give the flavors a chance to meld.

With the meat and healthy fat in there, this soup actually feels like a real meal. And, the nutrient profile is incredible. Youre going to love it.
The veggies in this cabbage soup are a little different from the usual, to keep it low carb. For example, carrots are almost entirely omitted. I say almost, because I used shredded coleslaw mix. This has just a little bit of carrots, but not enough to make the carbs too high.
The bagged coleslaw mix makes this recipe super quick and easy. I love the convenience!
If you would rather buy a whole head of cabbage and chop it up, thats totally fine. Feel free to throw in a handful of shredded carrots if you go that route, or skip them if you want.
The main advantage of the head of cabbage is it will store in the fridge for a longer time than the pre-shredded mix. Thats something to consider, depending on when you will be making the soup. In general, though, cabbage stores pretty well even in a pre-shredded state, so it shouldnt be a big issue.
