Does Chicken Noodle Soup Cure A Cold
Growing up, chicken noodle soup seemed to be the cure-all for any ailment. Interestingly, research shows that chicken soup has mild anti-inflammatory effects and can help clear nasal passages. Also, the broth helps hydrate you and the chicken is a delicious source of protein both of which can help you feel better. While it may not cure all illnesses, Chicken Noodle Soup is a feel-good soup.
Storing Leftover Chicken Noodle Soup
We love making a big pot of chicken soup and enjoying it throughout the week. Keep in mind, if the soup is stored too long, the noodles will turn mushy. If storing longer than 1-2 days, its best to store the soup and the noodles separately and recombine right before serving.
- Refrigerated: Cool the soup completely and store covered in the refrigerator. Once noodles are in, the soup should be enjoyed within 2 days. The soup will keep up to a week if you store the noodles separately and combine when reheated.
- To Freeze: If you plan to freeze the soup, wait to add the noodles when you reheat the soup. Chicken soup can be frozen up to 3 months.
- Reheating: Recombine noodles and soup in a pot or microwave-safe bowl and heat to the desired temperature on the stovetop or in the microwave. If using uncooked noodles, reheat on the stove until the mixture boils and noodles are tender.

The Chicken Noodle Soup Recipe That Gets Me Through Winter
It was perfect for my first foray into the world of chicken soup.
Can I make a confession? Until recently, I’d never made chicken noodle soup. My childhood memories crowd with the smell and flavor of a certain tasty and salty canned version that never seemed to have enough noodles and always way too many chicken bits. Furthermore, this was the fare strictly reserved for when you were sick. There didn’t seem to be much reason to eat it, otherwise.
In adulthood, chicken noodle soup stayed very much on the back burnerliterally. There is no chicken noodle without the chicken. So unlike a few good chili recipes with great all-veggie adaptations, this was something my vegetarian self never thought to make. There is one commandment, and only one, that exists in my kitchen: Thou shall not touch raw meat . And every good chicken noodle soup recipe seemed to require me boiling a whole raw bird and making my own broth. Nope. No thanks.
However, a few weeks ago, I had chicken noodle on the brain as the temperatures dropped from boiling 90s to more tolerable 70s and 80s. That, it seems, is enough justification for an onslaught of all things cozy. Thus, I found myself casually scrolling through chicken noodle recipes, dreaming about a cozy bowl but not ready to take up the challenge. But, then I happened upon the Rotisserie Chicken Noodle Soup recipe, and suddenly, a whole new world was open to me.

How To Make Homemade Chicken Stock
Typically a homemade chicken stock is made with leftover chicken bones and skin, but since I actually needed chicken in the soup, I bought a whole 4-pound chicken, cut out the backbone, and threw it into a giant pot filled with water.
Also included in my version of chicken stock lots of onion, garlic, carrots, celery, bay, black peppercorns, flat-leaf parsley, thyme and salt. All of the veggies and chicken are covered in cold water, everything is brought to a boil and reduced to a simmer for an hour and half or so until the chicken is cooked through.
Be warned: At this point your house will be perfumed with the most delicious homey smells.
Make Ahead And Freezing Instructions:
To make ahead: This soup is best made ahead of time when you are using homemade egg noodles, since they dont get soggy and overcooked like regular store bought noodles. If you wanted to use regular noodles, I recommend making the broth first, and then boiling it with the noodles, and adding the chicken, the day of serving.
To store: Store in an airtight container in the refrigerator for 4-5 days, depending on the freshness of the chicken used.
To freeze: Allow the soup to cool completely and store it in a freezer safe container for 2-3 months. Thaw overnight in the fridge, or over medium heat on the stove. If using store bought noodles I would suggest undercooking the noodles before freezing the soup, to avoid them getting soggy upon reheating.

Can You Add Uncooked Noodles To Soup
Yes! Keep in mind, however, noodles that cook a long time will get mushy and eventually disintegrate, adversely affecting the texture of your soup.
You can either add the noodles in the last minutes of cooking, or add pre-cooked noodles right before serving. The hot stock will warm the noodles.
The noodles in leftover soup will continue to absorb liquid, so you may need to add more stock before serving. Leftover soup is best consumed in the next day.
What Can I Add To My Chicken Noodle Soup For Flavor
We like adding just a sprinkle of parsley, onion,s salt and pepper for a very mild flavor. If youd like more of a kick, here are a few other spices or additions to try:
- Minced garlic. Garlic is always a good idea, right?
- Thyme can give a warm, deeper flavor.
- Basil gives an Italian flair.
- Cayenne pepper adds a little heat.
- Rosemary can bring a comforting taste.

The Best Bones For Making Pho
We make this at least once a month and always make sure there is leftover broth to freeze for another day. While it takes a bit of time, most of that is hands-off, so lets get going towards amazing pho at home, shall we?
You cant make an excellent soup without great beef bones. So, look for knuckle and leg bones that contain marrow. We buy beef knuckles from a local Asian market and find them to be pretty inexpensive.
Substituting store-bought beef broth for this homemade beef broth just wont cut it. We know our process takes longer than some, but trust me, this homemade pho broth has so much more flavor. You wont regret it.

How To Make The Best Chicken Tortilla Soup
If youre sitting here with a leftover or rotisserie chicken in the fridge, use it! This soup is perfect for bringing it back to life. If youre starting from scratch, go for chicken thighs skin-on, bone-in chicken thighs. Theyre cheaper and tastier than chicken breast.
To cook the chicken, we use a two-part process. Crisp the chicken skin in the same pot as we plan to make the soup in then transfer the chicken to the oven and roast until cooked through, but still juicy. Then we shred the chicken and save the crispy skin for a topping or snack .
Throw lots of goodies like onion, celery, jalapeño, garlic, chili powder, and cumin into a big soup pot and cook until soft and sweet.
Follow with chicken stock, corn, a bay leaf and corn tortillas that have been chopped small. After 20 minutes of simmering, the house will smell insanely good, and the soup will have become slightly thickened and perfumed from the tortillas. Tomatoes are next they lighten and freshen up the soup. Use fresh or canned.
After ten more minutes of simmering and the addition of shredded chicken and fresh lime juice, you will have THIS. Delicious, slightly thickened and ultra-flavorful chicken tortilla soup.
Its up to you to add your favorite toppings. We go for fresh cilantro, an extra squeeze of lime, diced avocado, crispy tortilla strips and the crispy chicken skin.

What Can I Add To Healthy Chicken Noodle Soup For More Flavor
With the flavor that the seared chicken + sauteed veggies add to the soup, you really dont need a whole lot else. If youre looking to really kick up the flavor and put a fun spin on traditional chicken noodle soup, though, you could add a couple tablespoons of your favorite red pepper sauce ! My mom actually does this sometimes, and its really yummy. You could also stir in a dollop or two of pesto for another fun take . Lastly, fresh lemon juice is always a great way to punch up the flavor of this soup just before you serve it.

The ingredients in this soup are simple: chicken, carrots, celery, onions, noodles, broth, and herbs.

I remember when I was a new mom, the world nearly stopped when my baby got sick for the first time. Sure enough the weather turned, and soon enough we were in the thick of cold and flu season. He was right under a year and when I picked him up I could just feel the heat radiating from him. There is something so helpless not knowing if it is just a little bug or something super serious and there isnt much you can do! The one thing I could do was take his temperature. That way I knew whether I was over reacting, you know being that mom, or there really was something to worry about. I am so glad I had an accurate thermometer on hand because once I took it, I knew immediately with it nearing 104 I needed to call the doctor right away.
How To Ensure Your Soup Broth Is Clear
One of the things we all love about a great chicken noodle soup is how clear the broth is. Transparent yet full of flavour! Theres a few tricks to the clear broth:
Simmer the chicken really gently. Harder boil gets the chicken jiggling around = murkier broth
Scoop the scum off the surface
Let the broth settle . Youll find that the bottom of the broth becomes darker as stuff settles on the base of the pot. Then gently pour the broth into the soup pot, leaving behind the darker broth that settled to the bottom of the pot
Dont brown the sautéed onion, carrots and celery. Brown veggies = brown broth!
Dont stir the pasta while it boils. That activates the starch in the pasta, making the broth cloudier.

When you simmer bones they release scum or impurities. If you dont get rid of this, youll be stuck with a cloudy broth. Not good. We like our soup to be as clear and clean as possible, so we add an extra step.
Add the bones to a large stockpot, cover with cold water then bring to a boil. Boil for a few minutes, and then pour the water and bones into a strainer.
