A Hearty Soup For The Winter
Yes! You read that right, its Keto tomato soup. You can eat tomatoes on the Keto diet and dont let anyone tell you otherwise. Tomato soup is one of those dishes that brings back memories of long distance train journeys. As a kid and even later on when I traveled by train one of the highlights was tomato soup. There were vendors walking up and down the compartments shouting tomatoo shouuuupppp and all of us would scrounge together our money and buy a cup. It used to be great on cold nights in the train.
For this recipe however I have to credit my friend Anu Narayan who made this for me on my recent UK trip. I was totally floored by the soup and I just knew I had to make it for you guys. At 5g net carbs per serving this is really Keto friendly and can easily fit into your daily allowance. Anyway enough jibber jabber. Enjoy!
Tomato Soup Vs Tomato Bisque
If youre wondering what the difference is between tomato soup and tomato bisque, it is texture.
Tomato soups broth is thin where tomato bisques broth is thick and creamy.
Tomato bisque is pureed. Tomato soup can also be pureed, but tomato bisque soup is thickened by creating a roux with heavy cream and flour. The roux thickens the tomato soup and transforms it into a hearty, yet smooth tomato bisque.

Rach uses fresh tomatoes and a handful of pantry staples to make this warm weather version of tomato soup
If you don’t have fresh tomatoes, you can use canned tomatoes insteadjust swap in two large 28-ounce cans or three 15-ounce cans.
Rach likes to pair this soup with a grilled cheese sandwich, and she’s made two to celebrate warm weather:
- 5 to 6 large tomatoes
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons butter
- 2 medium or 1 large Vidalia onion, chopped
- Salt and pepper
- 1 large leafy stem basil, plus torn leaves, for topping
- 2 cups homemade or store-bought vegetable stock or chicken bone broth or stock
Ingredients In Tomato Soup
- heavy cream
Naturally, the fresher the ingredients the better the recipe. But nature has a way of making fresh produce hard to come by during the cooler months. Feel free to substitute the fresh herbs with dried herbs.
Using quality canned tomatoes makes making this tomato soup so much quicker and easier too!
**Pro tip: Use crushed tomatoes, not whole tomatoes, chopped tomatoes, or tomato sauce .**

How To Make Homemade Tomato Soup
I adore this fresh tomato soup because it is SO easy to make. Its one of those recipes that tastes like you spent all day in the kitchen, but actually only requires 15 minutes of hands on time. If you dont believe me, let me outline how incredibly easy this really is
What To Serve This Fresh Tomato Soup With:
This tomato soup is delicious on its own, but I think we can all agree that the best part of tomato soup is what you get to eat with it. Serve up your tomato soup with
- Parmesan Cheese: This is a non-negotiable for me. tomato soup is not tomato soup without a healthy topping of shaved parm. The cheese melts into the hot soup and gives it a delicious nutty bite!
- Goldfish Crackers: Okay so this is if you really want to lean into that tomato soup nostalgia. Top your tomato soup with some goldfish crackers and youll immediately be transported back to the cafeteria.
- Heirloom Tomato Flatbread: Still have a million tomatoes lying around? This heirloom tomato flatbread is to die for!
- Grilled Cheese: I think we can all agree that tomato soup and grilled cheese is the food of the gods. The buttery, crunchy, salty grilled cheese perfectly complements the creamy, slightly sweet tomato soup. It is pure perfection.

Substituting Other Canned Tomato Products
Crushed tomatoes are already broken down so there are fewer texture options for the final soup, but its a quick swap. A puree is often added to make it thicker, therefore you may need to thin out the soup with more stock. Diced tomatoes can be used, but often have calcium chloride added to the can to keep the pieces firm. Skip the mashing step and use the blender to break them down later.

How To Make Broccoli Cheese Soup
Ready to see how to make broccoli cheese soup without added carbs or weird ingredients? Its super simple, just a few easy steps:
- Saute garlic in a large pot or Dutch oven. It takes about 45-60 seconds, until fragrant.
- Add chicken broth, heavy cream, and chopped broccoli. Simmer until the broccoli is tender, about 10-20 minutes.
TIP: The simmer time will vary depending on the size of your florets. Smaller florets = faster simmer time.
- Add the shredded cheddar cheese gradually, stirring constantly, and continue to stir until melted. This will help thicken the soup.
TIP: Avoid having the heat too high when adding the cheese or after, to avoid seizing. See more tips about how to make broccoli cheese soup perfectly, without carbs and without clumping, below.
OR, go with my preferred method to avoid clumping altogether
- Puree the broccoli into the soup along with the cheddar cheese using an immersion blender. I like to remove about 1/3 the florets using a slotted spoon first, so that you can toss the florets back in afterward and have some broccoli pieces in your soup.
TIP: The more broccoli you leave in before pureeing, the thicker your broccoli soup will be. The cheese helps thicken your broccoli cheddar soup, but the pureed broccoli florets will, too!

How To Make Classic Tomato Soup
In a large nonreactive pot, heat the olive oil and 2 tablespoons of butter over medium-low heat. When butter is melted, add the onions and cook over medium-low/medium heat, stirring occasionally, until soft and translucent. Do not brown.
Add the garlic and cook for a few minutes more, stirring to be sure garlic does not burn. Add the flour and continue cooking and stirring for 1 to 2 minutes more.
Add the chicken broth, tomatoes, sugar, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper.
Bring to a simmer over medium-high heat while stirring to make sure that the flour is not sticking to the bottom or sides of the pan. Reduce heat to low, cover and simmer for about 30 minutes.
Use a hand-held immersion blender to puree soup until very smooth. Season to taste with salt and pepper.
Stir in remaining 3 tablespoons of butter.
Ladle soup into bowls and garnish with fresh basil, croutons, and a generous sprinkling of Parmigiano-Reggiano.

Save Time And Use Rotisserie Chicken Or Leftover Chicken
For the easiest chicken noodle soup, if you have a rotisserie or leftover chicken, instead of adding chicken thighs to the pot, add two to three cups of shredded or diced cooked chicken to the soup at the same time as adding the dried noodles.
Since there is no need to cook the chicken thighs anymore, reduce the simmer time by 10 minutes. We use this method whenever weve roasted a whole chicken the night before.

Fresh Vs Canned Tomatoes For Our Tomato Soup Recipe
I mentioned earlier that I love using fresh roma tomatoes at their peak ripeness for our recipe and its true! Fresh roma tomatoes are my first preference because they have amazing flavor .
That doesnt mean you cant get amazing results with whole canned tomatoes. I love that high quality canned tomatoes are so readily available. The flavors are also already nicely concentrated, so the roasting step can be skipped all together . Just add a 28 ounce can of whole peeled tomatoes to the pot, as you would with the roasted tomatoes.
Overall, the most important aspect of out tomato soup recipe is to use high quality tomatoes that have great flavor!

Fresh Versus Canned Tomatoes
There are so many approaches to making tomato soup at home. Some start with canned tomatoes, others with fresh. While there is certainly a convenience to using tomatoes from a can, it does not quite compare with the fresh variety.
In order to get the kind of soup we are looking for, skip the can and go right to the fresh tomatoes that are perfectly ripe. You will be rewarded with the sweetness that can only be derived from the best tasting tomatoes.
Beyond the debate of fresh versus canned tomatoes, some recipes will rely on tomato paste to bring a concentrated flavor to their soup. What this tends to contribute is a deeper, cooked tomato taste with a sweeter tomato essence.
While that certainly works, this is not the flavor profile we are going for, so it really has no place in this recipe.
How Do You Reduce The Acid In Tomato Soup
You are likely going to need to add more salt and/or, if the soup is too acidic, a pinch of baking soda . You want the soup to taste balanced and delicious. Keep adding and stirring and tasting, even if it feels like its taking a long time to get it exactly right.

How To Make The Easiest Tomato Soup From Scratch
This simple homemade tomato soup is quick, easy, and insanely delicious. It is excellent with canned tomatoes, but you can also use fresh tomatoes. Tips for canned and fresh tomatoes are found in the recipe below. If you love quick, no-fuss recipes, this is it!
This tomato soup is inspired by one of the most famous recipes out there .
Butter, tomatoes, and onion are simmered until slightly thickened. Out comes the onion and the sauce is ready to be spooned over pasta.
Its genius and absolutely delicious. We use the same three ingredients in this tomato soup, but add a little water and blend everything together just before serving.
We love serving this with a grilled cheese sandwich, but a slice of this rosemary focaccia bread is also an excellent idea!
Lets Make Something Delicious
Start this soup by crisping up some bacon in a large pot or, even better, a Dutch oven.
Once things are looking crispy, toss in your cut-up veggies. Give things a little stir to coat everything in the bacon grease.
Plop in some tomato paste with a little bit of flour and watch things start to carmelize. Okay, gosh. This soup, folks! Were not even done and its so good!
Pour your can of San Marzano tomatoes in along with some dried spices and broth and just let the soup simmer. The high maintenance, if you can even call it that, part of the soup is done.
To finish, give your soup a quick blitz in the blender to puree it , splash in some cream and a lil salt and pepp treatment and boom. Thats all! An incredibly easy and delicious soup in an hour.
