What You Need To Make Easy Chicken Noodle Soup

  • Broth or stock: Although they are slightly different, both chicken broth and chicken stock work in most soup recipes. You may use either homemade or store-bought, however, the key to any good chicken noodle soup is having a delicious broth. Typically made by simmering chicken in water with fresh herbs or spices, traditional chicken broth for chicken noodle soup is clear and light.
  • Vegetables: The most common vegetables included in classic chicken noodle soup here in the US include a mixture of onion, celery, and carrots .
  • Herbs: In this version, I left things super simple and only added a touch of fresh chopped parsley after the soup was finished cooking. Other popular herbs, dried or fresh, include oregano, rosemary, and thyme.
  • Noodles: Traditionally egg noodles are added as they have a higher egg to wheat ratio and, typically, hold up a little better in steaming bowls of hot chicken soup.
  • Chicken: In this recipe, bone-in chicken pieces will be simmered in water until cooked. This will make the base chicken stock. The cooked chicken will be removed, the meat will be shredded from the bones, and the meat will be added back to the soup toward the end of cooking.

What Sides Go With Chicken Noodle Soup

This soup is so good and filling, you can totally eat it all by itself. But, around my house were kind of like a Panera you-pick-two as we like to have a little something on the side with the soup. Here are some of our favorite sides to enjoy with this easy chicken noodle soup:

  • Salad. If youre looking for something on the lighter side, then I recommend a bowl of salad with this soup. Some of our favorites include Broccoli Salad, Grilled Corn, and this Greek Salad.
  • Sandwich. I like to eat this soup with a half a club sandwich or a veggie wrap. Tuna and chicken salad go great with this soup too, so long as you dont mind doubling up on your proteins.
  • Rolls. Even if I eat soup alone, its never really alone, as I always need a roll, biscuit, or some other carb to help me mop up all that yummy broth.

How To Make Chicken Soup

We start this soup with a simple Soffritto . Also know as the holy trinity of cooking. A simple combination of three aromatics:

  • Onion
  • Carrots

The three are sautéed together to provide the flavour base for this soup.

For a hearty and flavourful soup, Chicken Thighs or Legs are ideal. The darker meats along with the bones provide a stronger taste compared to white meat , creating a richer broth with plenty of flavour. Add them in along with your broth after your soffritto is done.

Crushed Bouillon is an optional add in and go in along with your broth providing a lot of flavour. If you dont have access to bouillon, use regular stock powder or omit!

Simmer until the chicken is falling off the bone and cooked through, then shred chicken with forks and throw the meat back into the soup.

Cook The Herbs In Fat To Elevate Their Flavor

To draw out the fragrant fat-soluble flavors from the thyme and rosemary, cook them in oil with the vegetables. This process is called blooming and takes under a minute to make a significant impact. The fat helps to dissolve the compounds locked inside, diffusing them better into the stock.

Blooming the spices is guaranteed to add a more luxurious, herbaceous taste to the soup. I add the bay leaves in with the liquid. We want to keep them whole because they are inedible. Their larger surface area will gently infuse the dried flavor into the soup.

Make Ahead And Storing Tips

The soup can be made and refrigerated for 3 to 4 days and frozen for up to 3 months.

If you are not planning on enjoying the soup straight away or plan to freeze it, you might want to hold off on adding the noodles. As the soup sits, the noodles soak up the broth. You can deal with this in two ways:

When reheating the soup, add a bit more broth/stock to the pot. Ive even been known to add a splash of plain water to the soup when reheating. As long as you dont need to add a lot, it wont thin the flavor of the soup too much.

When making the soup ahead of time, for the freshest, least soggy noodles, leave the noodles out then refrigerate or freeze the soup. When you are ready to reheat, bring the soup to a low simmer and add dried noodles. Cook until they are done and enjoy.

Homemade Chicken Noodle Soup

Ingredients for Homemade Chicken Noodle Soup

After Halloween, I usually never want to eat again. At least thats what I tell myself and then at 4 pm Im like hmm, I could go for a Twix. What is wrong with me?

Of course this pattern isnt new. Ever since I was a little girl I would eat my candy as I went trick or tricking until I had a stomachache and my mom would fix me chicken noodle soup at the end of the night.

Can I tell you that homemade chicken noodle soup has always been super intimidating to me?

My mother-in-law has always killed it this department, whipping it up like it was taking the dishes out of the dishwasherjust something you do.

But for some reason I could never get it right. The broth/chicken ratio. The noodles. I tend to do this with cooking. For instance, cooking rice was super intimidating to me 10 years ago. Something so simple yet I always under or overcooked it.

Turkeys are still overwhelming to me. Doesnt help that my oven is tiny and I cant really fit anything in it, even the smallest turkey. That will be my next thing to conquer.

Today, its this soup. I dont know why I complicated it so much. Its veggies, broth, and some seasonings not rocket science.

I always felt like an ingredient was missing but now Im completely satisfied with this chicken recipe.

Storing Leftover Chicken Noodle Soup

We love making a big pot of chicken soup and enjoying it throughout the week. Keep in mind, if the soup is stored too long, the noodles will turn mushy. If storing longer than 1-2 days, its best to store the soup and the noodles separately and recombine right before serving.

  • Refrigerated: Cool the soup completely and store covered in the refrigerator. Once noodles are in, the soup should be enjoyed within 2 days. The soup will keep up to a week if you store the noodles separately and combine when reheated.
  • To Freeze: If you plan to freeze the soup, wait to add the noodles when you reheat the soup. Chicken soup can be frozen up to 3 months.
  • Reheating: Recombine noodles and soup in a pot or microwave-safe bowl and heat to the desired temperature on the stovetop or in the microwave. If using uncooked noodles, reheat on the stove until the mixture boils and noodles are tender.

Ideas For Storing Chicken Noodle Soup

Allow soup to cool before storing in the fridge or freezing. To refrigerate, put soup in a dish with a tight-sealing lid, and keep in the fridge for up to 5 days. To freeze, add soup to freezer-safe containers or Ziplock bags. Freeze bags flat to save space. Freeze up to 3 months. Thaw by putting the bag in a bowl in the fridge. Putting it in a bowl first will keep the water condensation from puddling up in your fridge and can also grab any soup that may leak out.

How To Ensure Your Soup Broth Is Clear

This easy vegan chicken noodle soup is made with minimal ...

One of the things we all love about a great chicken noodle soup is how clear the broth is. Transparent yet full of flavour! Theres a few tricks to the clear broth:

  • Simmer the chicken really gently. Harder boil gets the chicken jiggling around = murkier broth

  • Scoop the scum off the surface

  • Let the broth settle . Youll find that the bottom of the broth becomes darker as stuff settles on the base of the pot. Then gently pour the broth into the soup pot, leaving behind the darker broth that settled to the bottom of the pot

  • Dont brown the sautéed onion, carrots and celery. Brown veggies = brown broth!

  • Dont stir the pasta while it boils. That activates the starch in the pasta, making the broth cloudier.
