To make this Slow Cooker Cheesy Potato Soup, simply:

STEP 1: In the slow cooker, combine frozen hash browns, chicken broth, chicken soup, ham, corn, onion, garlic salt, and pepper.

STEP 2: Cover and cook on HIGH for 4 hours or LOW for 6-8 hour.

STEP 3: Add heavy cream and cream cheese, stirring until well blended.

STEP 4: Add shredded cheese, heat until cheese melts.

STEP 5: Serve and top with bacon pieces, green onions, and shredded cheddar cheese.

We all love the Instant Pot. It took me awhile to get used to this handy kitchen appliance but now I am Instant Pot addicted. I make tons of recipes in mine including breakfast, lunch and dinners. One of the Instant Pots best uses is for making soup. I have always been a big fan of slow simmering soups cooking away on the stove but some days this is just not possible. The Instant Pot makes it possible to have an all day soup recipe done from start to finish in thirty minutes or less. Mr. Tipsy and I love soup year round. I was raised thinking that eating hot soup in the Summer raised your internal temperature closer to the outdoor temperature resulting in you feeling less hot. I have no idea if this is true or not, but what is true, is that I love soup year round. The Instant Pot allows me to make soup in the Summer without heating up my house. I have even used the Instant Pot outside on my deck as to not heat up the house anymore than it needs to be. One of my favorite soups to make year round is this Instant Pot Creamy Potato Soup. There are several reasons to love it but the two main reasons are that it is cheap to make, and absolutely delicious to eat.

How Do I Thicken Up My Potato Soup

You can thicken the potato soup by mixing 2 -3 tablespoons of cornstarch to the heavy cream and stirring it well. Then slowly pour it into the soup about 30 minutes before serving. This will make it thicker.

If you are out of cornstarch, you could also use flour. Add in ¼ cup of flour to the heavy cream and stir it very well.

Make sure it doesnt have any lumps, then pour it into the crockpot. Again, do this 30 minutes before serving. Then right before you are ready to serve it, add in the cheese and stir until it melts.

Overall the soup is a great consistency and texture, but if you prefer it thicker, go ahead and add the cornstarch. It wont change the flavor at all.

What tastes good with potato soup?

Honestly, about anything is going to go well with this crockpot potato soup. My favorite items to serve with it are any kind of sandwich. Its especially good when you dip it into the soup. YUM!

Air fryer rolls, crusty bread, or breadsticks are also pretty tasty options. Any kind of meat like chicken, steak, or fish will go with it as well.

Naturally, salads go with almost anything. I like to stick with a basic garden salad, but you could go with something bigger and fancier if youd rather.

    Some of you are confused about how I ended up with 6 points in the recipe builder. Here is exactly what I entered in to get the 6 points per serving for the recipe.

    32 oz Ore Ida Country style hash browns 42 oz Fat Free chicken broth 10 oz can of 98% fat-free reduced cream of chicken soup Uncooked onion 8 oz of low fat cream cheese

    Cheddar and bacon are extra points but those are optional.

    Divide that into 8 equal servings and you get 6 points for 1 1/2 cups.

    Can this soup be frozen? Yes. Let it cool completely before storing it in airtight containers.

    How To Make Instant Pot Potato Soup Using Frozen Hash Browns

    In the insert pot of your Instant Pot, youll add a bag of frozen hash brown potatoes and some chicken broth. Youll cook that at high pressure for 3 minutes, then allow a 10 minute natural release before performing a quick release of remaining pressure.

    Add some cubed cream cheese to the hot broth and stir it around for a few minutes until its melted. It will look a little strange and unappetizing at first, but dont worry. Thats normal.

    Once its all melted and the other ingredients are added, it will be a lovely, creamy soup.

    After the cream cheese is melted, youll add in some cream of chicken soup, followed by some shredded cheese. Doesnt that look so much better already?

    Last, season with salt and pepper and give it a good stir. Ladle it into soup bowls and top with bacon crumbles and more shredded cheese, if desired.

I can see how the food police out there think that those arent healthy ingredients at all. Every now and then I get a few skeptics out there leaving a comment on this recipe and saying something like this is not a WW recipe. Let me tell you something about WW and how awesome it is. ANY RECIPE whether or not it calls for sketchy ingredients can be a WW friendly recipe. No food is OFF LIMITS on their program so you can enjoy a bowl of potato soup and not feel guilty about it.

    Since Ive already professed my love for Olive Garden soups, lets talk about my affection for Panera soups. I love their chicken and wild rice soup, their chicken noodle soup, and their baked potato soup.

    Because, lets be honestthere is not much in this world that is more comforting than a hearty bowl of hot soup in a bread bowl or with a baguette.

    So, naturally, in my quest to make more of our meals at home, I began learning how to make homemade versions of many of my favorite soups. First, I started making stove top or slow cooker versions of these yummy soups.

    Later, when I bought my Instant Pot, I began converting many of those recipes to be made in the pressure cooker. It was a lot faster that way, and more hands-off .

    Potato soup was one soup I hadnt yet converteduntil now.

    For years, I made a different potato soup recipe, which we really liked. But more recently, I found this slow cooker potato soup recipe from Julie at Back to My Southern Roots.

    Not that making soup in the slow cooker is difficult, but it requires more time . With the Instant Pot, this soup cooked up in minutes, and it is amazing!

    My Tips For Making This Recipe

    Use the full-salt chicken broth. Please! You need the flavor for the potato soup. I dont find it salty at all with the chicken broth + 1 teaspoon of salt. As it cooks all day, the slow cooker tends to mute the seasonings over the cook time. So you need lots at the beginning.

    All crock pots seem to cook at different temperatures. My soup is done at 6 1/2 hours. After the cook time, I add the milk/flour mixture and the cream cheese and then put it on the warm setting for 1-2 hours until its dinner time.

    If youre eating it right away, add the milk/flour mixture and the cream cheese, cover with the lid and let it cook an additional 30 minutes to melt the cream cheese so everything is combined.

    Its best to use the half & half. Any milk lower than that will be too thin and result in a thinner soup.

    If you choose to mash the potatoes at the end of the cook time for no potato chunks, please be careful to not over mash them. Doing so will release too much starch which results in a gummy potato soup. I never mash the potatoes and its still so creamy with tender chunks of potato. As you stir in the milk and cream cheese, the potatoes will naturally break down to create a creamy soup with some potato chunks.

    Notes And Adaptations For Instant Pot Potato Soup:

    • I use homemade cream of chicken soup, because it really is a cinch to make, its full of flavor, and its healthier than the canned stuff. You can even make a double batch of the homemade cream of chicken soup and freeze the extra, so youll have it on-hand the next time you need it. However, you can also use the canned stuff mixed with water if you prefer .
    • Theres no need to thaw the frozen potatoes first. Just add them as-is to the insert pot!
    • You could also scoop out the inside of leftover baked potatoes and use that in lieu of the frozen potatoes.
    • When adding the cream cheese, stir it around as it melts. You can use the back of a wooden spoon to mash any remaining lumps so they will melt easier. If you have itty bitty pieces floating around, thats okay, but you dont want any big chunks.
    • You can freeze leftovers, but the texture will be a little different after reheating. The potatoes break down a bit during the freezing and reheating process, and the soup wont be quite as smooth and creamy. However, it will still be delicious!
