Hey, hey everyone welcome to the start of a short week! How was your Labor Day weekend?

Honestly I kept forgetting the holiday was coming and didnt make any super exciting plans, but we filled our days up nonetheless! Ben and I sailed into the long weekend with wine for her and brewskies for him on the back porch Friday evening, listening to cicadas until the sun went down. Saturday we watched college football all day then hung out at Bethany & Nicks house out in the beautiful countryside that evening. It was such a fun night letting the kids play together until Lincoln had an allergic reaction to something and got itchy hives all over his face and neck. Poor thing! We gave him Benedryl but packed it in a little early to make sure we were close to home in case things got worse. Thankfully after an hour and 15 minute drive he was completely back to normal. I tell you what, food allergies they. just. suck!

This mushroom rice recipe could not be easier to make! You simply combine all the ingredients in a greased 8×8-inch baking dish. Then place butter slices over the top. Cover tightly with foil and bake for 30 minutes at 425 degrees F. Remove the foil, sprinkle with Parmesan, and place back in the oven for another 30 minutes. Let stand for a couple minutes, fluff with a fork, and devour!

  • You can use French Onion or Beefy Mushroom soup as well or a combination of the three. I have and enjoy them but definitely like the more condensed beef flavor in the consommé best.
  • Feel free to add finely diced onion when sautéing the rice thats how Mama usually makes it!
  • I have no clue how to make this with actual whole grain brown rice. Im sure it can be done but I couldnt tell you how long to cook it.
  • To reduce or increase the recipe, see the table above. Cooking time and temperature will stay the same.
  • Do not add salt to this recipe. This is a frog’s hair from being too salty so if you’re sensitive to salt, consider subbing 1 can of the beef consommé with reduced sodium beef broth and using unsalted butter.
  • You must cover the dish tightly with foil and start with a hot oven for the rice to cook properly.
  • The dish wont boil over so you can fill it pretty full . If you bake it in something much wider than needed it will likely be done quicker than an hour so check it early.

French Onion/Wild Mushroom Soup Recipe

Here I sit, yet again, thinking my familys way of cooking something was the way everybody cooked it.

Ive been running this blog, publishing recipes for over ten years, and could have shared this a thousand times by now but never did because its one of those recipes I just assumed everybody already had.

But nope. At least not from what Im seeing online. I cant find one single recipe exactly like this one. And Ive spent all morning looking.

What got me looking was I couldnt figure out what to call this so I wanted to see what everybody else calls it. We just call it brown rice.

But its not actually brown rice. Brown rice is the less processed, somewhat healthier form of rice that still has the bran and germ .

This recipe is actually browned rice traditional white rice thats been sautéed in butter until lightly browned and almost nutty in fragrance thats then made further brown by cooking in beef consommé.

I still dont know what to call this but Im hoping inspiration strikes before I get to the recipe.

The main differences in our recipe and the ones I see online are:

Less butter most recipes use twice the amount of butter as this one. Most use 1 stick of butter like this one does but this recipe makes twice the amount . As much as I love butter, I honestly think 1/2 cup of butter is way too much for a recipe with just 1 cup of rice.

Rice: Use long-grained white rice for this recipe, like jasmine or basmati. It separates better than medium or short-grained rice, which easily sticks together.

French Onion Soup: Use a can of condensed French onion soup.

Beef Consomme: Condensed Beef consomme is more condensed than beef broth and has a stronger flavor. In a pinch, you could substitute beef broth or beef stock. Look for it in the grocery store where you would find other cans of condensed soup.

Butter: Yes, you are using one stick of butter and dividing it into 9 pats. I know you are thinking, why not just cut it into the eight tablespoons. Well, the reason for nine pats is that you want the pats of the butter to be equally distributed on the top of the rice in a 3×3 pattern.

How To Make This Recipe For Smothered Chicken

Before you start adding all of the ingredients into the crockpot, spray the sides of the slow cooker with some non-stick cooking spray or use a slow cooker liner.

Place the chicken breasts in a single layer at the bottom of the cooker and season them with some fresh pepper.

In a separate bowl, mix both condensed soups, onion soup mix, fresh sliced mushrooms, and water. Gently fold the mixture together until it is all combined.

Pour the mushroom gravy mixture evenly over the chicken breasts. Use a spatula to help spread the gravy evenly over all of the chicken.

Cook on HIGH for 4 to 4 1/2 hours or on LOW for 7 to 8 hours. Be sure to adjust cooking times according to how fast/slow your cooker cooks.

How to make Baked Chicken with French Onion Soup Mix: Preheat oven to 350 degrees F. Put your fresh, thawed chicken breast in a bowl. Pour in your french onion soup packet and olive oil. Mix well. Lay the chicken breast in the middle of a 9Ã13 casserole dish. Next, lightly toss your green beans with the remaining olive oil mixture.

Sprinkle with onion soup mix. Seal with foil and bake at 350 degrees for 2 1/2 hours. Dont peek! Butter a flat baking dish. Spread rice evenly in dish. Top with chicken. Sprinkle onion soup over chicken. Combine mushroom soup with water and pour over all. Cover with foil and bake at 325 degrees for two hours.

One pot French onion chicken and rice is made on the stove and finished in the oven.

The thing that really seasons this is that one packet of French onion soup mix.

You know the one.

Brown up the chicken thighs while the oven preheats.

Get some good color on at least one side of the chicken.

Then set them off to the side to rest.

You will finish cooking the chicken with the rice in the oven.

Add in the mushrooms, carrots, and onion after the chicken is browned.

Some people on Facebook were not a fan of mushrooms in this potato soup recipe.

Dont like mushrooms? Substitute in some diced celery.

Mix in frozen peas at the end.

The rice gets toasted after the veggies.

Pour in the stock and most of the French onion seasoning packet. Reserve a little for the tops of the chicken.
