| 2 tablespoons grated Parmesan cheese |
Steps:
- In a Dutch oven, cook the beef, onions and garlic over medium heat until meat is no longer pink drain. Stir in the tomatoes, tomato paste, mushrooms, celery, parsley, salt, Italian seasoning, rosemary and pepper. Bring to a boil. Reduce heat cover and simmer for 15 minutes. Uncover simmer 15 minutes longer., In a large bowl, combine 1 cup potatoes, carrots, mushrooms and soup mix spread into a greased 2-qt. baking dish. Top with 2 cups beef mix and remaining potatoes. Sprinkle with cheese., Bake, uncovered, at 350° for 40-50 minutes or until potatoes are lightly browned., Cool remaining beef mix. Cover and refrigerate for up to 3 days or freeze in 2-cup portions in freezer containers. May be frozen for up to 3 months. Thaw in the refrigerator before using.

I usually only eat Shepherds Pie when its on the menu at a restaurant, but this version is so quick and easy that I could make it at home. This is comfort food, and would definitely be welcome on the dinner table. When making this, I would use lean ground beef and Healthy Request cream of mushroom soup. Instead of using mashed potato flakes, I would make my own mashed potatoes.
Oh my word does this look delicious! Nothing screams comfort food like Shepherds Pie. This recipe sound very similar to the one I grew up eating. Im wondering if you could substitute any kind of cream soup instead of cream of mushroom? Im just not the biggest fan of mushrooms. Maybe a cream of cheddar? Something I like to do with my Shepherds Pie is to sprinkle a tiny bit of parmesan cheese on top of the potatoes. It gives the toppings a little bit of crunch. So good.

Assembling The Shepherds Pie
When the filling is done, spread it into a glass 9×13 baking dish. Dollop the mashed potatoes on top of the filling, and carefully spread them out. Drag a fork across the top of the potatoes to create some texture. Brush a little melted butter on top, and your shepherds pie is ready for the oven!
Bake in a 400 degree oven for about 15 minutes to warm through, then turn the broiler on for a few minutes to brown the potatoes on top a little bit. Watch that broiler though! After it comes out of the oven, let the shepherds pie cool for a few minutes before digging in.
