Instant Pot Cheesy Chicken and Rice is a complete meal with creamy chicken, rice, peas and cheese. A one-pot meal the whole family loves! This easy chicken dinner is perfect for busy weeknights!

Easy chicken and rice is classic comfort food made even easier in the electric pressure cooker. This is one of my favorite Instant Pot recipes to make on busy days because it comes together fast.

We love my grandma’s old fashioned chicken and rice recipe, but this Instant Pot version is much faster. You can dig into this delicious chicken dinner in about 30 minutes!

The first time I made chicken and rice in the Instant Pot, I kept it super plain. I just added Parmesan cheese.

But the next time I made this easy Instant Pot recipe, I added cheddar cheese and cheddar blend. I also used cream of chicken soup to make super creamy chicken and rice. This is a very versatile recipe, and you can make it with or without cream of chicken soup!

How To Make Creamy Ranch Chicken In The Instant Pot:

  • In a small bowl, whisk together the milk, cream of chicken soup and the ranch dressing mix.
  • Place the water in the bottom of the instant pot. Then add in the chicken, potatoes and carrots.
  • Pour the cream of chicken soup mixture over the top of these ingredients in the instant pot.
  • Seal the instant pot and pressure cook on high pressure for 20 minutes with a quick release. Cook times will vary.
  • Then serve the chicken, potatoes and carrots with the sauce poured over the top from the instant pot and enjoy!
  • The recipe calls for 1 cup of water but you can add more cups of water if you find it is too thick. Also, it is totally optional but you can sprinkle a little shredded cheddar cheese on the chicken before serving.

You can use frozen chicken breasts if you prefer or forgot to take some out of the freezer. It is a great recipe and one of our favorite dinner recipes because it is so easy.

How To Make Creamy Instant Pot Chicken And Rice

Youll start with a couple of boneless skinless chicken breasts. Cut them each into two or three uniform pieces and place them into the insert pot of your Instant Pot.

Add in some white rice and chicken broth, along with some garlic powder, onion powder, and pepper.

Cook that at high pressure for 3 minutes, then allow a natural pressure release.

Once the pressure has released and the valve has dropped, remove the chicken and shred or chop it as desired, then fluff the rice and return the chicken to the insert pot.

Stir in some cream of chicken soup until combined, followed by some shredded cheese. Stir until melted, and voiladinner is ready!

I served this with some southern style green beans, and it was a match made in heaven!

How To Make Instant Pot Chicken And Gravy

Instant Pot Chicken and Rice Soup

In your instant pot, place chicken broth, chicken, cream of soups, and the seasoning mix in that order and do not mix. The reason we dont want to mix is because the Instant Pot needs a thin liquid to create enough steam to build pressure and seal the pot.

If we mix the broth in with the soups, it will be too thick and the pot may not come to pressure or the burn notice will be given.

Cook on high pressure for the proper time specified in the chart below.

Remove the chicken and whisk the gravy to fully incorporate the cream of soups this will help to thicken the gravy. Serve as desired and enjoy.

How To Store It

Before storing, allow the chicken and rice to cool completely. Scoop the leftovers into a sealed airtight container.

You can refrigerate it for about 3 to 4 days.

If you prefer to freeze it, you can. To freeze, allow it to cool completely and then place in a sealed gallon freezer bag with as much air squeezed out as possible.

You can freezer for up to 1 month. Let it thaw in the fridge before reheating.

To reheat, place a single portion in the microwave and set it for 3 to 4 minutes. You could also use the stovetop by adding a ½ cup chicken broth into a pot and then adding chicken and rice. Heat over medium heat until warmed through.

    What I love about Instant Pot recipes is that theyre all basically dump it, set it, eat it!

    First, you put your ingredients in the Instant Pot. Theres some specialty with the layering of the ingredients to ensure that your rice cooks properly , but the most important thing to remember is to NOT stir your pot! You need everything to sit exactly as it is to absorb all the flavors.

    Second, set your Instant Pot timer. Let it do its thing! Once the timer goes off, carefully release the pressure, then open and remove the chicken breasts. Shred them, return them to the pot along with the peas, stir everything together, and get ready for YUM CITY!

    What Kind Of Rice To Look For

    The key to this easy family dinner starts with choosing the right rice. I use Uncle Bens Long Grain and Wild Rice Original Recipe, which calls for a 25-minute stovetop cook time.

    I chose the original, longer-cooking rice so that the chicken and rice will cook at the same time in the same pot.

    One thing to note: There is a flavoring packet inside Uncle Bens Wild Rice mix. Our recipe does not call for you to use the packet, as there are so many other tasty flavors from the fresh vegetables and chicken stock.

    Tip: If you cant find parboiled wild rice, regular raw white rice will also work, with no change to the cooking time.

    Variations Of This Instant Pot Chicken And Rice Recipe

    • I have used rotisserie chicken vs. raw chicken just use 2 breasts and dice the chicken up, then skip the first step where the chicken is browned, just put it into the bottom of the pot
    • You can amp it up with a bit of spice and veggies with Instant Pot Mexican chicken and rice.
