Step 1a: Prepping The Chicken

To make the cooking process go a lot smoother, we’ll be prepping our chicken, all the veggies, and noodles beforehand, and then separating them into a few bowls, so everything is in place once it’s time to cook.

That said, the first thing you’ll want to do is prepare the chicken.

And, as I’ve already said, you can use either a prepared rotisserie chicken for the soup, or you can boil/shred the chicken yourself.

Now, if you’re using rotisserie chicken, you’ll want to start by removing the skin from the breasts.

Then, you’ll want to remove the breasts from the rest of the chicken, and add them to a medium-sized bowl. Now, once you’ve done that, it’s as easy as shredding the chicken with two forks, or you canuse a hand-mixer to make the shredding process even easier.

That said, once you’ve got the chicken shredded, you can set it aside, and start working on the rest of the ingredients.

Step 1b: Prepping The Veggies And Noodles

Next, we’ll work on the veggies.

For the carrots, you’ll want to peel off the rough outer layer, and then chop them into ¼ inch thick circles.

Then, you’ll want to cut off the tops and ends of the celery and chop them into u-shaped pieces, about ½ inch thick.

Next, you can remove the skins of the onions, chop off the ends, and dice them into small pieces.

So, once that’s taken care of, you can add all of them to a large bowl, and set it aside.

Now, you’ll want to prepare the garlic – peel off the papery skins , mince, and then add it to a small bowl.

Why Soups Are Good For A Keto/low Carb Diet

Soups are usually a quick, easy meal to make, and there are many of them that are a good fit for a low carb diet. A Keto-friendly soup should have a base of meat or fish, along with a bunch of veggies, sometimes brothy and sometimes creamy.

Most of the time they make a pretty filling meal for lunch or dinner and once they are prepared then they also make good leftovers for the next day, or frozen for future meals.

This recipe is a great way to use up any vegetables in the fridge I have kept it strictly low carb but you can change it up if you prefer!

  • Chicken: I used chicken tenders poached straight in the soup and then shredded. Alternatively you can use leftover roast chicken or turkey .
  • The vegetables: onions, leeks, celery, zucchini, rutabaga, cabbage
  • Flavour: minced garlic, tomato paste, lemon juice, salt, pepper and bay leaves
  • Chicken broth: This soup tastes infinitely better if you use homemade chicken broth which is easy to make . If you dont have homemade broth to hand then use good quality low sodium chicken broth without additives.

Keto Chicken Soup Slow Cooker

This is a really quick and easy stovetop recipe, but it is possible to adjust the recipe and make it in the slow cooker.

To make keto chicken noodle soup in the slow cooker, add all the ingredients to the slow cooker. Cook on low for 4-6 hours. During the last 30 minutes, add the noodles. It will be ready to eat!

It couldn’t be simpler to make this homemade chicken soup. It’s basically a dump recipe, meaning you don’t need to brown or pre-cook anything before it goes in the slow cooker.

  • Start with your vegetables and just chop and drop the onion, celery, and carrots in the crock pot. Then stir in your herbs de Provence and a little apple cider vinegar.
  • Then layer your chicken breast and thighs over the vegetables. Be sure to use bone-in, skin-on chicken for extra richness and flavor.
  • Lastly, season with salt and pepper and add water. Then let the slow cooker work its magic.
  • After it has slow-cooked, remove and shred the chicken and add the shredded chicken back into the soup.
  • This soup is chock full of chicken and has a light broth. If you want a richer broth, you can always substitute low sodium chicken broth or vegetable stock for some of the water.

    And if you want to dress it up, serve it over cauliflower rice for an easy chicken and rice soup. Or add spiralized zucchini pasta before serving for a slow cooker chicken noodle soup. Either way, this classic chicken soup is a great winter meal.

    There are lots of healthy and easy keto-friendly noodle substitutes you can use in this soup. I used fettucini-style Miracle noodles. They are made from konjac flour and only have 1g net carb per serving.

    Other low-carb noodles you could use instead include either zucchini noodles or palmini noodles. Spaghetti Squash could possibly work, but Im not a fan of using it in soup.

    This is also a delightful soup to enjoy later in the week as part of your meal prep. Store it in an airtight container that wont spill. I like to use mason jars to store my soups because it seals the best. This soup will stay fresh in the refrigerator for up to 3 days.

    Keto Chicken Noodle Soup with Zoodles

    There’s nothing better on a cold day than a warm bowl of one of the many keto soups you can make.

    But something about keto chicken noodle soup that puts it above the rest.

    It’s super flavorful, filled with chicken and veggie goodness, and it just warms you up from the inside out. For this reason, it is easily one of my favorite low carb soup recipes to make.

    And, not only is this soup the perfect match for a cold day, but it is also a lifesaver when you’re not feeling well.

    I mean, honestly, is there a better remedy than warm chicken noodle soup when you’re feeling under the weather?

    I definitely don’t think so!

    And what I really love about this keto chicken soup is that it has all the elements of regular chicken noodle soup soft noodles, shredded chicken, tasty broth, and tons of nutritious vegetables – but not all the carbs.

    Plus, it only takes only about 45 minutes to make 12 whole servings! And most of that’s just letting the soup cook.

    Also, with how much soup this recipe makes, you’ll have enough for a family dinner, meal prep, or just to have on hand for whenever you need it.

    How To Make Keto Chicken Soup Instant Pot & Pressure Cooker Instructions

  • Place your pressure cooker over high heat .
  • Add the butter, onion, and celery and saute until the onion turns translucent.
  • Add the chicken, salt, pepper, and chicken stock and stir well.
  • Place the lid on the cooker, pressurize, and reduce the heat to low. Cook for 1 hour .
  • Turn off the heat and leave the pressure cooker to depressurize for 15 minutes before removing the lid.
  • Use a metal spoon to press the chicken against the sides of the pot to shred the meat.
  • Place the pot over low heat and add the cream.
  • Sprinkle the xanthan gum over the simmering soup and whisk for 5 minutes to ensure there are no lumps.
  • Remove from the heat and serve topped with the chives.
  • Making Keto Chicken Noodle Soup In Under 30 Minutes

    I like to make this soup in a heavy-duty, large dutch oven, a kitchen necessity for the colder months coming up! This gives you more surface area to cook on, which cuts down on cooking time. Youll also need a small sauce pan to thicken the chicken stock.

    Just five easy steps stand between you and many helpings this bone-warming soup. It starts with making sure the diced chicken is seasoned with salt. Then in your small sauce pan, bring the chicken stock to a boil and whisk in the xanthan gum to thicken the stock, and set aside. Side note: The xanthan gum is optional, but I like the slightly thickened consistency that it adds to the soup.

    In your dutch oven, add the oil and once its hot, add the diced onion and celery and cook until they get soft, which will take about 10 minutes.

    Add the chicken stock, fresh thyme, and chicken and simmer until the chicken is cooked, about 10 minutes. Add the shirataki noodles and cook for just a couple more minutes, then serve.

    Does Chicken Broth Kick You Out Of Keto

    Chicken broth is generally low in carbs so it will not kick you out of keto. Just a hint, read the label just to make sure before buying it in case there are any additional ingredients that are not keto-friendly.

    You can also make your own broth naturally by cooking your own chicken in the pot. By simmering it for a couple hours, you will be starting off your soup with a lot of flavor.

    • Quality of broth matters! Whenever possible, I recommend making your own to really maximize flavor. I like to use my Instant Pot Chicken Bone Broth.

    • To make it spicy, add some crushed red pepper or a little cayenne.
    • For a creamy soup, add in ½ cup heavy cream or 3 ounces diced cream cheese.
    • For a non-traditional twist, top with shredded cheddar.

    How To Make Keto Chicken Noodle Soup

  • Place a large saucepan over medium heat, add the oil, onion, celery, and garlic. Saute for 2-3 minutes, until the onion has softened.
  • Add the chicken thighs and chicken stock, and stir well.
  • Bring to a simmer, add a lid, and cook for 30 minutes. Until the chicken is tender.
  • Remove the chicken from the soup and shred.
  • Add the chicken back to the soup along with the noodles. Bring back to a simmer then remove from the heat.
  • Add the pepper and spinach leaves and stir through until they have wilted.
  • Taste and add salt, if needed.
  • Ladle into bowls and serve hot.
  • Secret To The Best Keto Soup

    The secret is in the broth! The best tasting soup start with a flavorful broth and luckily it is very easy to make at home.

    Homemade bone broth is packed with nutrients and collagen and you can control how much salt to add! I usually do a Sunday Roast and save the chicken carcass and any leftover meat to make chicken soup with.

    Put the chicken bones in a slow cooker and add two celery sticks, two carrots, a yellow onion, three tablespoons apple cider vinegar, thyme and bay leaves. Cover with water and cook on the LOW setting overnight or for 12 hours.

    Strain the broth and discard the bones, vegetables and aromatics . Store the broth in the fridge or use straight away.

    How Many Carbs Are In Chicken Soup

    There are only 5.1 NET Carbs per cup of our ketogenic chicken soup. That is a big difference from other homemade chicken soups that have pasta or rice in them.

    I looked up a lot of chicken soup recipes and the average NET Carbs ranged from 10-37 per cup of soup. That is a big difference when you are strictly counting daily carbs.

    One of the things I love about this simple soup is that it is so quick and easy to put together. Just add everything to the crock pot and walk away. The slow cooker does all the workit’s perfect when you don’t have the time to do anything else.

    Using chicken thighs and chicken breasts with the bone in provide nourishing gelatin to the broth during the slow cooking. You can see this when the leftovers thicken up in the refrigerator. That’s the magic of this simple slow cooker chicken soup.

    How To Make Keto Chicken Soup Step By Step

    Heat the olive oil in a soup pot over a medium heat. Sauté the onion, leek and celery for about 5 minutes, stirring, until they begin to soften.

    Add the minced garlic, salt / pepper and tomato paste and sauté for another couple of minutes.

    Stir in the zucchini, rutabaga and bay leaves .

    Add the chicken broth and bring to a rolling boil. Reduce the heat to a simmer and add the chicken tenders. Cook with the lid on for 15-20 minutes or until the chicken is cooked through.

    Use tongs to pick out the chicken then shred using two forks. If you are using leftover roast chicken add it now.

    Remove the bay leaves from the soup. Use an immersion blender to blend the soup JUST A LITTLE so it thickens. You dont want to blend it so its completely smooth unless thats how you prefer it. Add the chicken and cabbage and continue to cook for five more minutes.

    Add lemon juice or apple cider vinegar to balance the acidity. Check the seasoning and add salt and pepper, to taste. Stir in half the chopped parsley. Serve garnished with parsley, lemon zest, pinch chilli flakes and a little grated Parmesan!

    Can You Make It Ahead

    Yes, you can easily make this soup ahead, or simply prep the ingredients and it will take just minutes to put together.

    This keto chicken noodle soup recipe lends itself to batch cooking. Here are some ways you can prep ahead:

    • Roast the spaghetti squash ahead of time. This takes the longest, so is the most convenient part to do in advance.
    • Make your shredded chicken in advance. Another time saver is making your shredded chicken ahead of time. Using the Instant Pot to make shredded chicken in bulk is my favorite way. Plus, then youll have some ready to make yummy chicken nachos and low carb chicken salad, too. But this isnt necessary if youre planning to just add the raw chicken to the soup, which you can.
    • Make the whole soup ahead. It stores very well, so feel free to make it ahead!
