How To Make Beef Bone Broth
Making beef bone broth is just as easy as making my chicken bone broth recipe. All you have to do is combine all of the ingredients in a slow cooker and let it simmer for at least 36 hours . This is truly a pretty effortless beef bone broth slow cooker recipe.
Otherwise, you can also cook on the stovetop in a large stock pot.
Why so much more time than a chicken bone broth? Its because the beneficial components of beef bones take longer to release.
Begin to place the ingredients in a 10-quart capacity slow cooker, starting with the beef bones. Add the veggies and remaining dry ingredients.
Add the water. For the stovetop version, bring to a boil over high heat, then reduce heat and simmer gently. For the slow cooker version, simply turn it on and set to 12 hours .
For either version, skim the fat that rises to the surface occasionally. Simmer for 36 to 48 hours.
Remove from heat and allow to cool slightly. Discard all solids. Strain the remainder through a colander.
After straining, let stock cool to room temperature, cover and chill.
Place in the refrigerator and use within a week. Otherwise, you can freeze your homemade beef bone broth for up to three months.

The Ingredient Most People Forget
One of the key differences between bone broth and regular beef or chicken stock is the long cook time. But theres an extra ingredient and key step that takes bone broth to the next level, leaching every bit of goodness out of your bones as you make your broth.
That extra ingredient is raw apple cider vinegar . And the extra step is waiting to turn the fire on.
Even though a big batch of broth only requires a small amount of this sweet and sour ingredient , ACV plays a role in jump-starting the breakdown of the bones in your broth. The acid content, along with the live enzymes found inside start the process of drawing nutrients from the bones into the broth before you even start cooking.
After youve placed your bones in your pot, pour the ACV in, then fill your pot with cold water. Then youll leave your pot off of the heat for at least 30 minutes. Leaving the stock pot away from heat for that 30 minutes prevents the heat from killing off the live cultures and enzymes in the ACV before they can do their good work. From there, add your veggies and a bit of sea salt, turn on the heat, and let it cook.

Making your own bone broth is inexpensive and easythe main requirement is time. Plan on about 24 hours of cooking for this one!
And dont forget: you can continue to use these bones to make multiple batches of stock which will begin as a jellied aspic when cooled and, as the bones cook down, will gradually become more liquid as you reach about seven or eight uses in preparing bone broth.
When I make bone broth, I add in celery and carrotsbut these are optional.
Start with four or five pounds of bonesits your choice of the type of bones: cooked or raw, beef, pork or poultry. I like including at least one knuckle bone in the mix or a couple of pigs feet or beef feet but the combination is definitely up to you and what youve got on hand.

The exact amount of bones youll be cooking will depend on the size of your slow cooker and the type of bones you use but it doesnt really matter. Just fill up the pot with bones, leaving enough room for about an inch of water over the top of the bonesthen its time to start cooking.

Best Bones For Bone Broth
- The best beef bones to use are knuckles, joints, feet, and marrow bones.
- For added flavor incorporate meaty bones like oxtail, shank, and short ribs.
- Chicken feet contain loads of gelatin and are less expensive than other gelatin-rich bones.
- The bones of younger animals contain a lot of cartilage, as it is this cartilage that will eventually turn to bone as the animal ages. For this reason, veal bones are particularly prized for making stock.
- If you cant get your hands on any marrow bones, 1-2 whole roasted chicken carcasses will also work. Keep in mind, however, that your broth will contain less collagen.
What bones did I use in this recipe? For this Instant Pot Bone Broth recipe, I added a mix of collagen-rich beef bones as well as chicken feet. If youre unsure at all, ask your local butcher for the best broth bones and then request that he or she cut them in half.
Transfer The Bones Back To The Stockpots & Bring To A Boil
Wash the stockpots that were used to blanch the bones and divide the roasted bones and vegetables between the two pots. Scrape up any brown bits and juices remaining in the roasting pan using a metal spatula and a little water, if needed, and divide between the two pots .
With the bones and vegetables divided, divide the bay leaves, peppercorns, star anise, cinnamon sticks, and apple cider vinegar between the two pots.
Fill each pot with approximately 12 cups of cold water, or enough water to cover the bones by approximately an inch.
Cover each pot with a tight-fitting lid and bring to a low boil.
Can you cook your broth in a slow cooker ?
Yes. Absolutely. For this recipe, you will likely need 2 large slow cookers. Instead of transferring the roasted bones, veggies, herbs, and spices to large stockpots divide them among two slow cookers, cover with cold water, and cook on low for 24-48 hours with the lid slightly ajar. Add additional water, as needed, to keep the bones covered.
