Comfort food central! With my little tricks for extra flavour in the soup, you can make an easy Chicken Noodle Soup midweek that tastes like you made it with a full blown homemade chicken broth / stock from scratch using a whole chicken. Filling, nourishing and cant-stop-eating it delicious!

I received an email from a reader asking me to share my chicken noodle soup. It might be in the middle of summer here in Sydney but the weather is swinging from heat waves to winter-like from day to day, so it was certainly no hardship to move from the barbecued Miso Marinated Side of Salmon I shared last Friday to this soup!

OK, maybe winter-like is a slight exaggeration. But when its 40C/104F one day then 24C/75F the next, it sure feels like it!

I actually have 3 chicken vegetable noodle soups in my repertoire. My ultimate version is made using a whole chicken to make a full blown homemade chicken stock base for the soup. SO good. Takes 2 hours.

My quickie version is the one I make the least which is made using pre-cooked shredded chicken and big flavour boosts for the soup broth.

Then theres this one which I make using bone in chicken pieces, simmered until the meat is tender enough to shred to make a killer broth. Flavour wise, it is a small compromise from my ultimate version given it takes less than half the time. I have a few secret tips up my sleeve for this!

Making This Is Easy Here Are The Steps

First, you can choose to make this on the stove, in the crockpot, or in the instant pot. I love the stove or crockpot, but all three options are great!

For the stove, just cook up the vegetables and add lots of herbs. My favorite combo is thyme, sage, and rosemary. Then add a splash of sherry and lots of chicken broth.

If you dont keep sherry on hand, a dry white wine works really nicely too.

Once you add all the broth, bring the soup to a boil and add the chicken. Since the chicken cooks right in the soup, it really helps to flavor the broth and make it so delicious.

You can simmer the soup all day, which will give you more flavor. But if youre short on time, just a quick simmer to cook the chicken works too!

If you have a parmesan rind on hand, adding it in with the chicken really does add nice flavor. It complements the soup so deliciously.

What Else Goes In Chicken Noodle Soup

This recipe is extremely forgiving in that you can add or take out whatever you like, dont like.

Vegetables: our recipe suggests green beans, corn kernels and spinach. You could also add zucchini, cabbage, pumpkin, sweet potato or potatoes and peas ! You can make it your own.

Noodles: I love using vermicelli egg noodles in our soup, but you can use thin spaghetti, angel hair, a fat noodle or any other type of pasta you like.

This easy chicken soup takes about 30 minutes to make. The SECRET to amping up the flavor happens in the last 2 minutes of cooking. Adding dill and a pressed clove of garlic is what my Mother does for nearly all of her soups and I have adopted this in my own kitchen. It is a brilliant and easy way to make your chicken soup taste fantastic!

  • Cook the Chicken: In a large soup pot, combine water, Chicken Broth, and salt. Bring to a boil then add chicken thighs and cook uncovered 20 minutes.
  • Saute Veggies: In a large skillet saute onion and celery in oil until golden then add to the soup pot
  • Add Noodles and Veggies: Add 1/2 lb pasta and sliced carrots to the pot and cook 15 min at a low boil.
  • Shred Chicken: As the pasta cooks, remove thighs from the pot and shred with forks , then add the chicken back to the pot.
  • Season: In the last 2 minutes of cooking, add Mrs. Dash, dill, and press in 1 garlic clove, and add salt to taste. Simmer another minute then turn off the heat.

    The Quick Version: 30

    If you already have chicken stock , you can make this chicken noodle soup in 30 minutes or less just start at step six.

    Add chopped carrots and celery to the stock and bring to a simmer. Then add chopped chicken breast or thighs and bring to a simmer again. Then add dry noodles. When the noodles are done, add seasonings like parsley, salt, pepper, and thyme, and you’re done!

    How To Make Homemade Chicken Noodle Soup:

    Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.

    Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.

    Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.

    Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.

    Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.

    Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!

If you wanted to use regular noodles, I recommend making the broth first, and then boiling it with the noodles, and adding the chicken, the day of serving.

    To store: Store in an airtight container in the refrigerator for 4-5 days, depending on the freshness of the chicken used.

    To freeze: Allow the soup to cool completely and store it in a freezer safe container for 2-3 months. Thaw overnight in the fridge, or over medium heat on the stove. If using store bought noodles I would suggest undercooking the noodles before freezing the soup, to avoid them getting soggy upon reheating.

    How To Make Chicken Noodle Soup

    This is a great method for making just about any soup! For me, a great soup starts with a flavorful sauté to develop depth of flavor. In this case, we sauté the veggies before adding the broth, the chicken, and finally the noodles.

    Make sure you give yourself about one hour to make the soup, from start to finish. A great homemade chicken noodle soup demands a bit of time.

  • Sauté Vegetables & Garlic: Heat the olive oil and butter in a 6-quart Dutch oven and cook over medium heat. Add the onions, celery, and carrots, and cook for 5 minutes, stirring occasionally. Then, stir in the garlic and cook for another 30 seconds.
  • Add Broth & Chicken: Stir the chicken broth, thyme and bay leaf into the veggie sauté, scraping up any browned bits from the bottom of the pot, and bring the mixture to a simmer. Then, add the chicken breasts, salt and pepper cover and simmer for 25 to 30 minutes, or until the chicken is done.
  • Add Noodles & Shred Chicken: Remove the chicken breasts from the Dutch oven and transfer them to a cutting board. Add the egg noodles to the soup and cook them for about seven minutes, or until al dente. While the noodles are cooking, shred the chicken and discard the bones. NOTE: IF using Carba-Nada noodles, you can add those together with the chicken because they only take 4 to 5 minutes to cook.
