What Are Split Peas


Split peas are field peas that are dried, peeled, and split in half for cooking. They come in both yellow and green varieties. Yellow split peas tend to be the mildest in flavor, and green split peas, sweeter. Youll often see the yellow peas used in curries.

Split peas have great nutritional benefits. Theyre low in fat, packed with fiber and protein, and are a good source of several vitamins and minerals, including Vitamins A, B, and magnesium.

Like the lentils in my French Lentil Soup, split peas dont need to be soaked prior to cooking. They should be rinsed and sorted to remove any stones that might have gotten mixed into the bag.

Simmered with plenty of stock in a soup, theyll cook down and thicken into a textured puree .

Serving Tips: Dont Forget The Croutons

This soup is quite filling on its own, but my family likes to serve it with Buttery Garlic Croutons on top. The crunchy croutons are a great contrast to the creamy soup and bring even more flavor to the dish.

Without croutons, a piece of crusty artisan bread for dipping is never something Id turn down. Finish the bowl with a little freshly-cracked black pepper and grab a spoon!

Q My Peas Wont Cook Did I Need To Soak Them First

A. Split peas shouldnt need soaking prior to simmering. If they arent breaking down after 90 minutes , a few things mightve happened:

  • You could be using split peas that are too old. Split peas dont have an indefinite shelf life. When they age and dry out too much, they take a lot longer to soften.When you shop for them or take them out of your pantry, check the color. If the peas are very pale, chances are theyve been in the bin or on the shelf for a while.
  • Are you at a high altitude? Split peas will take longer to simmer when higher than 2,000 feet above sea level. Read more about high altitude cooking from the US Department of Agriculture.
  • Split peas can be affected by acid when cooking. If youre using tap water in the recipe and its acidic, this can also make it difficult for them to soften.

    I have to confess that I was never a big fan of pea and ham soup until I made my own, as a way to use up my Slow Cooker gammon leftovers.

    OMG what a revelation! This simple pea and ham soup packs so much flavour into only a handful of ingredients.

    It also uses the cooking stock from the gammon recipe and any of the leftover ham I love it when nothing goes to waste!

    For a velvety smooth pea soup you MUST blitz the soup in a blender. Using an immersion blender works but only if you like a slightly chunky soup.

    Serve with Sourdough Focaccia or my easy Two Hour No Knead Bread!

    Ham And Split Pea Soup Recipe

    • 1 pound dried split peas
    • 1 quart chicken stock
    • salt and ground black pepper to taste

      Place the butter in a large soup pot over medium-low heat. Stir in onion, celery, and sliced garlic. Cook slowly until the onions are translucent but not brown, 5 to 8 minutes.

      Mix in ham, bay leaf, and split peas. Pour in chicken stock and water. Stir to combine, and simmer slowly until the peas are tender and the soup is thick, about 1 hour and 15 minutes. Stir occasionally. Season with salt and black pepper to serve.

    • Olive oil this is used to saute the vegetables, butter can be substituted.
    • Yellow onion, celery, carrots and garlic these vegetables built up the background flavors of the soup. They add some nice color too.
    • Chicken broth and water I like to use half chicken broth and half water so it doesnt overpower the delicate flavor of the peas.
    • Dried split peas its a common misconception to believe split peas need to be soaked before cooking, no soaking is necessary. But you do want to pick over and rinse and drain them.
    • Bay leaves, thyme and parsley fresh or dry herbs work well here.
    • Salt and pepper I like to wait to add majority of salt until the ham has cooked with the soup, some hams tend to be very salty while others not as much so if you wait you wont over-salt the soup.
    • Ham bone this soup is such a great use for a leftover meaty ham bone from a Sunday ham roast or even a spiral sliced holiday ham. If you dont have one ham shanks will work too.

    Ive been sitting on this recipe for Split Pea and Ham Soup since the inception of Simple Seasonal over 3 years ago and Im not exactly sure why. Its one of those recipes that has become a family recipe thats looked forward to by all . Its so popular that I try not to let anyone else in the family know when Im making it, lest everyone decides to pay a visit and eat my leftovers.

    Every Christmas and Easter I buy a smoked honey ham when I can get one at a good price. Mr. Simple Seasonal and I then have a fancy ham dinner with the kids and then we feast on the leftovers in the form of ham sandwiches, omelets, and homemade soups. But if were really honest with ourselves, this soup is the whole reason I cook the ham in the first place. Its so hearty, savory and satisfying. And the most important leftover? The ham bone, of course!

    Now onto the method of cooking split pea soup. Knowing what the heck to do with your ham bone is the hardest part of this recipe. If youre considering making this soup and youre new to cooking with a ham bone, then check out the photo of how I trimmed mine above. Its actually super easy to do. You just need to trim the excess bits off of it with a knife and then plop the bone into the pot, but try not to make a splash!

    How To Cook It In An Instant Pot:

    • Press saute setting on Instant Pot. Add oil, celery and onion, saute 3 minutes, add garlic and saute 1 minute longer. Press cancel on the Instant Pot.
    • Pour in broth, 2 cups water , split peas, carrots, thyme, bay leaves and season pepper. Add ham bone.
    • Cover and press manual mode then set to 15 minutes.
    • Once time is up allow pressure to release naturally for 15 minutes, then quick release any remaining.
    • Shred ham from bone into pieces and return to soup, season with salt to taste.

    Making Split Pea Soup With Ham

    Since split peas are mild in flavor, soup made with them can be a little muted. The ham does a lot to rectify that, but a base of aromatics, fresh herbs, and well-flavored stock are equally essential.

    I start this soup with a mirepoix softened in butter. For additional flavor, my family also loves adding a couple of minced garlic cloves as well.

    Once the vegetables are tender and fragrant, add the peas, ham bone, dried bay leaf, and fresh thyme right into the pot.

    Tip:Ham can vary quite a bit in saltiness by brand and preparation. Its best to go light when adding salt to the recipe and adjust to taste when the soup is finished simmering.

    Q Can I Add Diced Potatoes To The Soup

    A. My family prefers this recipe without potatoes, but they can certainly be added! Peel and cut the potatoes into a 1/2-inch dice and add them to the pot during the last 30 minutes of cooking, until tender.

    The potato starches can make the soup a bit thicker, so add additional stock or water after theyve softened, to your preferred consistency.

This recipe calls for 200g cooked gammon/ham. You can either buy this pre cooked or you can cook a joint yourself.

    Heat olive oil in a large soup pot over medium heat. Add onions, celery, carrots, garlic, thyme and oregano. Cook and stir until veggies are softened, about 6 minutes. Add remaining ingredients, except parsley. Bring soup to a boil. Reduce heat to low. Cover and simmer for 1 hour. Remove ham from soup — and let cool slightly.

    Add onion, carrot, celery, and garlic. Cook, stirring until onion is softened, about 5 minutes. Add split peas, potato, broth, oregano, and pepper and bring to a boil.     How To Make Split Pea Soup

    • For this recipe, you will need a leftover ham bone, which makes this the perfect soup for after Easter or Christmas. Save that ham bone from your holiday ham! If you dont have a leftover ham bone, you can still make the soup. Just buy ham hocks from the grocery store. If you arent sure where to find them, just ask the employee at the meat counter, they can help you. The ham bone or hocks give the soup so much flavor!
    • If you want to make this soup vegetarian, you can leave out the ham and use vegetable broth, but it really gives the soup a lot of flavor.
    • You start with onion, celery, and garlic, like most soups. The soup is also seasoned with bay leaves, thyme, rosemary, chicken broth, and the ham bone or hocks.
    • After you add the split peas, cover the pot with a lid and simmer for 60 minutes, or until the peas are tender. You can stir it occasionally, but it should be fine. Go watch your favorite show or read a book:)
    • When the peas are soft, remove the ham bone or hocks and stir in the carrots. You can also stir in cooked ham to thicken the soup. This is optional, but it will add lots of flavor. Josh always adds ham, especially when we have ham to use up! Its perfect!
    • Cook for an additional 20 minutes so the carrots and soup can thicken up. The soup will thicken even more as it cools and sits, especially the next day. If the soup is too thick, you can add a little water or more broth.
    • Ladle the soup into bowls and garnish with fresh parsley.
