Creamy soups are my absolute favorite thing on the planet. I know for a fact that theyre not, in any way, healthy when you order them in a restaurant. And sometimes theyre not so healthy when you order them at my house.
But sometimes its very evident, like when I cover the creamy bisque with a blanket of cheese. A blend of provolone and mozzarella cheese. And broil it until its bubbly and golden. Thendo you really care about the calories? You only live once and I, for one, live to eat.
Easy Ways To Dress Up A Can Of Tomato Soup
We always seem to have a few extra cans of tomato soup kicking around our cabinets. While nothing is better than a hot bowl of the stuff with a grilled cheese sandwich, our recent Tomato Soup Taste Test left us thinking that when the grilled cheese is missing, that store-bought soup needs a little…help. Here are 12 creative add-ins to doctor up a classic.
Add a can of diced tomatoes, a bit of cream, and torn fresh basil leaves.
Swirl some red wine vinegar into the soup and serve with a stack of mozzarella and fresh basil leaves on a toasted baguette.
Add a drizzle of pesto and finish with toasted pine nuts and croutons.
Add a teaspoon or two of Thai red curry paste and some cooked rice, then top with cooked shrimp.
Rub a slice of bread with raw garlic, top with Gruyere, broil until cheese melts and bread is toasted, then float on your soup.
Add a teaspoon or two of sherry to the soup, then pour it over cooked farro, top with baby spinach, and crumble in goat cheese.
Sautee some chopped bacon and onions and set a little bacon aside. Pour the soup into the saute pan, add some cream, then pour soup into a bowl and garnish with reserved bacon.
Sautee bell peppers and onions, add the soup and a big squeeze of sriracha. Top with a fried egg and serve with crusty bread.
Sautee onions, garlic, and slivered kale until tender. Add to the soup with a big squeeze of lemon. Top with shaved Parmesan.

Best Tomatoes For Tomato Bisque
To get the absolute creamiest soup use meaty tomatoes that have been peeled and seeded. Roma tomatoes work well, but so do meaty heirloom.
This summer I was given a surplus of cherry tomatoes thank you Monica! I put them in this soup without peeling or seeding, because small tomatoes are a pain to peel and seed, and you lose a lot of volume by discarding the seeds from cherry tomatoes.
The results, while not exactly creamy, were still better than anything you can get from a can.

In this soup, the fresh tomato flavor is balanced with basil, parmesan, balsamic, and cream. The sweet acidity of the tomatoes, the tang of the vinegar, and nutty parmesan cheese combine as a match made for my taste buds dreams.
Serve it cold on a hot summer day or serve it hot on a cold, wet day. I like mine best when paired with a grilled cheese sandwich for a delicious weekend lunch.

Chicken In Tomato Sauce With No Breading Or Noodles
This needs to be breaded to be close to Chicken Parmesan. This is just chicken fried with soup. It also needs noodles. You could throw the noodles into the pan with the sauce and cook them that way before adding the chicken. Overall I think this might be an okay recipe, but its about as close to Chicken Parmesan as any other random pasta dish that has tomatoes and chicken.

Tomato Bisque With Fresh Tomatoes:
If youd like to use fresh tomatoes first ask yourself if the tomatoes are flavorful enough. You want gorgeous maybe slightly too ripe or soft tomatoes that are still delicious. Then youre going to boil them for 60 seconds then shock them in ice water before peeling. Then de-seed the tomatoes before adding them to the recipe.
When serving you can add a touch of heavy cream in a circle pattern to up the plating style of the soup since is a smooth pink color. If you want to make it even more fun use a toothpick to make designs through the heavy cream swirl. I usually make figure 8s through the cream.

In the world of tomato soups, there seems to be many opinions about how to do it right. So I tried quite a few of them. Ive roasted the tomatoes, Ive blanched and peeled the tomatoes, and Ive tossed them in whole, skins and seeds in all.
In the quest for rich tomato goodness Ive used the slow cooker, the stove top, and even the oven. Ive figured out what works, whats worth the effort, and what at the end of the day doesnt matter so much.
The thing I found to be true is that while many of them are right, none of them are exactly wrong. It all comes down to personal preference.
This recipe however, is for creamy tomato basil bisque, so Im going to focus on what gives the creamiest results. Only you can decide if its worth the extra effort.

How To Make Secret Ingredient Tomato Basil Soup:
The first step in making the best homemade tomato basil soup recipe is roasting the tomatoes, onions, carrots, and garlic. Once youve done that, its as simple as adding the ingredients to a blender and blending them with some of your stock until its smooth. Keep in mind that if youve got a powerful blender like a Vitamix or a Blendtec, itll blend your soup up nicely! If you have a traditional blender, it may take a little longer so you may want to do it in several batches. Once blended, youll add all the remaining ingredients to the soup pot and then bring it to a full simmer before serving.
This process can be even simpler if youve got an immersion stick blender. I made this purchase a few years ago, and it has made life so much simpler. If youve got one too, you can add the roasted veggies right into the stock pot along with all the remaining ingredients and blend until smooth. Then let it heat all the way through, and youre ready to serve.

Condensed soup doesnt have to be boring! Easily dress up a can of tomato soup with ingredients you have in your pantry.
Today, Im presenting you with a recipe that was truly born out of my college-student status . As with many American children, I have been eating grilled cheese sandwiches and tomato soup since I could handle solid food. Its convenient, easy, filling, and delicious.
But sometimes, it can be a bit boring. Lets face it, its simply a can of tomato puree and milk or water, depending on your preference. After a year of to-go Campbells cups of soup, I decided that I could no longer consume this boring tomato stuff as is, so I gave it a serious makeover.
Start by combining one can of tomato soup with a can full of milk, as you usually would. Were not using water here. I usually use 1% milk, but if you arent calorie conscious and have it on hand, of course it would be even better with half and half or heavy cream.
Now heres the fun part: add garlic powder, onion powder, cayenne pepper, Italian seasoning, salt, and pepper. Taste and adjust. Let simmer for 10 minutes or so to release all that flavor.
Pour into bowls and top with a little bit of parmesan cheese and some fresh basil. Ta da! You are no longer eating boring old tomato soup.
If youre really feeling adventurous, make some homemade sandwich bread for your grilled cheeses. I used such bread for the sandwiches in these pictures.

A cool, creamy and summery tomato soup with a surprise secret ingredient that brightens the flavor.
This recipe was inspired by a chilled tomato soup I had at a restaurant recently that tasted brighter, sweeter and more intensely of tomatoes than any other tomato soup Id ever tried. The best way to freeze any sup with dairy is to leave the dairy product out of the last step. If youre using heavy cream the soup will freeze fine but milk is better when added fresh to the recipe.
Once you defrost your soup just heat in a pot until warm, stir in the whole milk and serve!
This soup recipe can be on the table in less than 30, so you can make it ahead of time or make it right before you need dinner! This isnt one of those recipes that gets better as it sits so if you need dinner ASAP, this is the soup for you!
