    Citric acid doesnt alter the flavor of the soup at all. So if youre concerned about the lemon flavor, use citric acid.

    However, there is another factor. When you add milk to the tomato soup that had citric acid in it, the milk separated a little. When added to the soup that had lemon juice, the milk separation was barely noticeable.

    Id rather have a slightly brighter soup with less milk separation. Choose which route is best for your tastes!

    To make tomato soup from tomato paste, we needTomato paste– This is store-bought readymade tomato paste. You can use any of your favorite brands. This tomato paste can be substituted with homemade tomato puree.Almond milk– I have added almond milk to defuse the bold taste of the tomato. Ideally, this tomato soup tastes creamy and rich when butter is added. But almond milk does the same role of butter, and give an aspect to the soup. Basil– This is the flavoring agent here. You can substitute with cilantro, sage, mint, etc.

    This recipe makes a whole big pot of soup so if youre not going to use all of it you can freeze it for another meal!

    The best way to freeze any sup with dairy is to leave the dairy product out of the last step. If youre using heavy cream the soup will freeze fine but milk is better when added fresh to the recipe.

    This recipe requires very few ingredients. Wash dry the basil, dice the shallot and press the garlic. Oh yeah, open the cans of tomato.

    In a large pot over medium-high heat, heat the olive oil. Add shallot and saute until translucent.

    Add garlic and saute another 30 seconds.

    Add crushed tomatoes , chicken stock , oregano, sugar, salt, and pepper.

    Reduce the heat and bring to a low simmer. Cook uncovered stirring occasionally, for 15 minutes or until it has thickened.

    Add the half and half, fresh basil and season to taste with salt and pepper.

    We love this recipe and the texture but if its not smooth enough for you just use an immersion blender to imulsive it to you liking.

    • Saute the diced onion in olive oil.
    • Stir in garlic, dried basil and turmeric. If you use only fresh basil, add it at the end.
    • Stir for 1 minute to enhance all the flavors.
    • Add tomato sauce, tomato paste, broth or water, salt and pepper.
    • Stir in pasta.
    • Bring to the boil then reduce the heat to a gentle simmer.
    • Cook everything in one pot, stirring frequently.
    • Taste, adjust the seasoning, stir in chopped fresh basil if you use it and serve doesnt it look YUMMY?

    If you have a can of tomato paste in your pantry, you are in luckthis is the best substitution for tomato sauce. All you need is the tomato paste and water.

    Mix together 1 part tomato paste and 1 part water until well blended. Then, season your “sauce” to taste. Tomato sauce is typically seasoned with herbs, garlic, and onion. You may even find the sauce benefits from a drizzle of olive oil or a pinch of sugar.

    For the most authentic tomato sauce taste, cook the garlic and onion in oil until they’re soft, add the tomato paste and water mixture, and heat through. Taking the time to add a few extra ingredients will greatly enhance the flavor and texture of your finished sauce.

  • Saute Aromatics heat a non-reactive pot over medium heat. Melt in 4 Tbsp butter then sautee onions until softened and golden . Add minced garlic and saute another minute.
  • Make the tomato soup base stir in two 28 oz cans of crushed tomatoes with their juice, your chicken stock, chopped basil, sugar and black pepper. Bring to a boil then reduce heat, partially cover and simmer 10 minutes.
  • Blend if desired use an immersion blender in the pot or blend in batches using a blender and return soup to the pot.
  • Add cream and parmesan stir in the heavy cream and shredded parmesan. Return to a simmer and season to taste if needed.
  • Serve ladle into warm bowls and garnish with more parmesan and basil.
  • Pro Tip: If you prefer a chunky soup with bits of tomato , you can skip the blending step and proceed with adding cream and parmesan then season to taste.
