There really isnt a time of year where I dont like using my crockpot and making all things soup. From tomato to this Chicken Tortilla Soup, I love making a simple dinner that my family loves and a meal that can easily feed a crowd.

I have a few recipes that are my go-tos when it comes to using my crockpot, and Chicken Tortilla Soup is one of them. What I love about this version of Chicken Tortilla Soup Crock Pot is that its completely versatile.

You have your core ingredients, and then all the additional toppings or ingredients you can add in or not and make this soup exactly how you want it or how your family will eat it. While I personally love it fully loaded as pictured above, my husband hates beans and corn, so to make it his way, I simply dont add those in the soup and serve them on the side instead. So we both walk away with a bowl of soup we love.

Not only is this slow cooker soup incredibly flavorful, it is that way with just a few simple ingredients. Which makes the prep time minimal, which during the busy school, somple recipe with few ingredients is ideal to me.

How Do You Make Chicken Tortilla Soup On The Stovetop

This tortilla soup can easily be adapted for the stovetop. Start by sautéing the onion in a large soup pot and cook thawed chicken breasts in a large skillet. Cool chicken slightly and shred. Then, add in ingredients, including shredded chicken into the soup pot with the onion. Bring the soup to a boil, reduce heat and simmer for about 20-30 minutes and until all ingredients are warmed through. Serve with all your favorite toppings.

This soup is also great to make with rotisserie chicken. You wont have to worry about cooking the chicken and you can add all ingredients in the soup pot with the cooked onion. Rotisserie chicken tortilla soup is great choice because its so easy and has a wonderful flavor!

How To Make Tortilla Soup

CHICKEN. Cook the chicken and shred it for tips on shredding chicken GO HERE. You can also buy a rotisserie chicken and shred.

COOK. Add the shredded chicken, chicken stock , corn, diced tomatoes, onion, green chiles, black beans, garlic and seasonings to the crock pot and cook on LOW for 6-8 hours, or HIGH for 3-4.

SERVE. Stir in cheese just before serving.

TORTILLA STRIPS. If you want to make homemade tortilla strips for sprinkling on top, cut corn tortillas into strips with a pizza cutter. You can either flash fry in hot oil, or bake at 425° for 8-10 minutes turning halfway through. You can also crush tortilla chips as well.

Chicken Tortilla Soup Crock Pot

To begin, dice one yellow onion and mince two cloves garlic Place the diced onion, minced garlic, and one 3/4 lb. chicken breast in a slow cooker . You can use more or less chicken without adjusting anything else in the recipe. Sprinkle 1/2 Tbsp chili powder, 1/2 tsp cumin, 1/2 tsp smoked paprika, 1/4 tsp cayenne, and some freshly cracked pepper over top. You can leave the cayenne out if you want your soup mild, or if youre using a spicier chili powder .

Also add 1 cup frozen corn kernels , one 15 oz. can black beans , one 15 oz. can fire roasted diced tomatoes , and one 10 oz. can of diced tomatoes with green chiles . The diced tomatoes with chiles are like Rotel tomatoes, but you can often find generic store brand versions as well. If you cant find them at all, you can use two 15 oz. cans of fire roasted diced tomatoes, plus one 4 oz. can of diced green chiles.

Finally, add 6 cups chicken broth and give everything a brief stir. Place the lid on the slow cooker and cook on high for four hours, or low for eight hours.

While the soup is cooking, make the tortilla crisps. Preheat the oven to 400ºF. Stack the tortillas and cut them into strips, about 1/4-inch wide and 2 to 3-inches long.

After 8 hours it will look like this. The chicken will be very tender and easy to shred at this point

Carefully remove the chicken breast, shred it with two forks, then stir it back into the soup.

What Ingredients Are Needed

  • Chicken Breasts Chicken thighs would also work for this recipe.
  • Chicken Broth You can use water if you dont have any broth on hand but I really recommend broth when making soups as it adds a creamy and delicious flavor.
  • Green Chilies Generally, I used canned but fresh diced up would work as well.
  • Corn Frozen or canned corn is needed for this recipe. If you use canned, make sure to drain it first.
  • Sour Cream This gives the soup its creamiest. You can use plain greek yogurt instead for a lower calorie count.
  • Cheddar Cheese I recommend shredding your own over using the pre-shredded as it melts more evenly in the soup.
  • Cilantro and Tortilla Strips These are both optional for topping the soup but both add a delicious flavor that I recommend not skipping them. Plus I love the crunch that the tortilla strips add to this soup.

Tips For Easy Chicken Tortilla Soup

  • Prep Soup Ahead. You can chop your onions, garlic, zucchini and poblano pepper ahead of time so you literally just have to dump and simmer when it comes time to make your soup. Alternatively, you can add all of the Chicken Tortilla Soup ingredients to the crockpot and store in the refrigerator until yous are ready to cook. This is a great method when you want to prep the soup at night and start cooking in the morning.
  • Prep Toppings Ahead. You can prep all your topping while yours soup is cooking so you can eat as soon as the chicken is done.
  • Consistency. I love chunky soups the higher the ratio of chicken and veggies to broth the better BUT the chunkiness of this Chicken Tortilla Soup is totally up to your personal preference. For a less chunky soup, simply add additional chicken broth.

Yes! You can follow the same directions as you would for the slow cooker cooking in a large pot on the stove. Bring to a boil then reduce to a summer. Simmer for 20-30 minutes or until onions are cooked to your liking. I like my onions pretty soft but some people like them a bit crunchy. You choose!

Depending on when you need dinner on the table, you can cRock this recipe on low for two hours or high for one hour. You do not rinse the beans or tomatoes in this recipe. So the flavors of the salsa, beans, tomatoes, chiles, cilantro and lime all blend together to give you a delicious meal with yummy melted cheese!   • substitute 2 cups of the chicken broth with evaporated milk mixed with 1 tablespoon cornstarch.

Remember when I said this Crockpot Tortilla Soup was EASY? I was NOT exaggerating! This tortilla soup is huge on flavor with minimal effort. To make:

  • Add ingredients to slow cooker. Lightly grease slow cooker with cooking spray then add chicken, tomatoes, beans, corn, zucchini, poblano peppers, salsa verde, chicken broth and all seasonings. Give them a stir.
  • Cook until chicken is tender. Cook tortilla soup on low for 6-8 hours or on high 3-4 hours. Youll know your soup is done when the chicken easily shreds with a fork. If its not easily pulling away, cook on!
  • Shred chicken. When chicken is tender, shred either directly in the crockpot or on a cutting board then return it to the slow cooker for at least 20 minutes so the flavorful broth can seep into every nook and cranny. This extra 20 minutes is soup changing.
