How To Make Olive Garden Soup
1. First, cook the bacon until its super crispy. Drain the grease and set it aside. Brown the Italian sausage in the same pan. Keep the sausage grease though!
2. Then, sauté the onions and garlic in the grease until the onions begin to soften. Then, drain the excess grease from the pan. You can use another neutral oil, but this gives the onions and garlic so much extra flavor!
3. Now, add most of the crispy bacon to the slow cooker with the cooked sausage, sautéed onions, softened garlic, crushed red pepper, diced potatoes, and a little salt and pepper.
4. Next, cover everything with the chicken broth, which should at least submerge all the potatoes. You can always add a couple extra cups of water if you need a little more liquid. Mix it all up and cover to cook. I prefer to cook this on low, but you can also use high if youre on a time crunch.
5. Once the potatoes are fork tender and its been a few hours, add the kale and heavy cream to the Crockpot. Stir everything together and let it cook a little longer on high to warm everything through. Dont cook it too long though, or the cream will curdle.
I hope you saved some bacon for a crunchy garnish! I also like to add a little Parmesan shredded Parmesan cheese to the bowls because who doesnt love cheese?

Back in November of 2011, I shared the recipe for my favorite soup ever, Olive Gardens Zuppa Toscana soup. It went bananas and has since been one of the most popular recipes on my site. Its a recipe that I make at least once a month and more like once a week during the winter. My whole family loves it and you guys do too!
After numerous requests, I shared a slow cooker version of the soup in 2014. That version has also been insanely popular and well-loved by my readers.
Here we are in 2017, and I am now sharing a one pot version that makes this soup so simple and easy, youre going to make it more than ever. Instead of baking the bacon and browning the sausage in the oven, everything is done in one pot. I used my new dutch oven that my Dad got me for Christmas! I love how all the drippings from the sausage and bacon add so much flavor to the soup! Its fantastic!
I also doubled the amount of kale. For some reason, my boys think this is the best part of the soup Who am I to argue? I love buying the pre-chopped kale to make things easy. I also use a mandoline for slicing the potatoes. It takes about one minute to have them all perfectly and uniformly sliced.
I add a bit of crushed red pepper flakes to the soup as well as a bit of salt and pepper. Totally optional. The soup already has a lot of salt from the bacon and heat from the spicy Italian sausage so feel free to omit if youd like.

For starters, Zuppa Toscana doesnt have any grains or glutens in it, which is a plus if you are gluten free. It also contains a hearty helping of kale and potatoes, onions and garlic, all of which provide essential vitamins and minerals that your body needs every day. And chicken broth is good for your hair, skin, and nails and your immune system.
I admit though, that the sausage, butter, and heavy cream are not so great for you. They do provide protein and calcium, but also a lot of saturated fat. Yes, you can freeze this soup if you have any leftovers, but I would eat it within two to three weeks. The kale will be browning and the potatoes might be a little off-color, but it will taste just fine. I wouldnt leave it in the freezer for too long though, because when it warms up, the potatoes will be mushy and I just feel like this soup is meant to be enjoyed pretty close to the time you made it.
