El Cortez Presents: MATZO BALL SOUP

Myung Dong Kyoja in Koreatown has a number of tremendous soups on their menu , but come wintertime, our heart only has eyes for their kalguksu. This traditional, chicken broth-based soup comes topped with ground chicken, pork dumplings, and vegetables, but what really makes it are the perfectly cooked knife-cut noodles floating inside. If you want some heat , be sure to order it spicy.

House Beef Noodles

Mian is a noodle shop from the chef behind Chengdu Taste, and that fact alone gets our attention. But more importantly, Mian lives up to expectations. The Chongqing-style noodles they serve are fantastic and chewy, with a spiciness that creeps up on you. We could point to numerous outstanding dishes on the menu here, but its the house beef noodle soup that remains the star of the show for us. Tender strips of beef submerged in a broth so spicy and flavorful, youll wonder if you can just order it as its own side. We havent asked yet, but honestly, its worth a shot. Order a plate of peppery pork dumplings to round out your meal.

Aush Reshteh

In Westwoods Little Persia neighborhood , you can find this strained yogurt and noodle-based soup on the menu at most restaurants. Laziz Grills version is our favorite. Filled with lentils, chickpeas, fried onions, and chopped fresh herbs like mint, parsley, and dill, aush reshteh feels appropriate to eat no matter what the temperature is outside.

Top 5 Matzo Ball Soups In Los Angeles

Matzo ball soup is a comfort food with a relatively simple taxonomy. Camps are mostly divided along the lines of sinkers vs. floaters, clean broth vs. noodles/crackers/carrots/etc. Opinions range and styles vary, and a perusal of the literature by authorities such as Claudia Roden and Gil Marks suggests that what we currently see in delis around Los Angeles is a very limited expression of the matzo ball. But it’s hard to shake the fact that the typical matzo ball lover’s most idealized version was probably cooked in the home of a relative or friend, rather than served in a restaurant. When your family’s point of reference is, say, tender matzo balls with a firm pumpernickel center that took a couple days to make, no deli kitchen churning out monochromatic dumplings can ever compete.

Some of the most interesting and best matzo balls currently served in Los Angeles are presented in a manner that is obviously not kosher and we’re not using that term metaphorically. The local matzo ball situation improves vastly during Passover, when some L.A. chefs revisit and often put their own spin on this classic. In the meantime, here is our list of the Top 5 Matzo Ball Soups in Los Angeles.

My girlfriend loves matzo ball soup but hasn’t yet found her favorite in LA. She likes when the soup comes with one big knaidel like at Art’s and not a few small ones like at Canters. She also like’s her soup to be noodle-y.I know there are Mexican Jews out there. Do they make an albondigas-esque matzo ball chicken soup? They should right?

Jewish Girls From Nyc: The Best Matzo Ball Soup In La

adminMay 10, 2021

Matzo balls can be found anywhere in LA. Although I was born in NY and spent countless summers there, it wasnt until I moved to LA that I had my first matzo ball soup. Its one of my favorite dishes to order when I want something comforting or when Im feeling under the weather. I just love it.

In January 2021, two Jewish girls from NYC, Jaime Lauren, former contestant on culinary TV shows such as Top Chef, and her partner Jessica Mei Gershen, an independent filmmaker, producer and writer, started selling quart jars of matzo ball soup out of their house in Mount Washington they sold out every time.

Jaime was born and raised on the Upper East Side and Jessica grew up in various parts of Westchester. The matzo ball soup recipe was passed down to Jessica from her father and grandmother.

They serve the matzo ball soup in 32 oz Mason jars, a smart choice because the airtight seals keep all the flavors inside versus a styrofoam container. They dont have an email but they update everything on , from the upcoming pop-up locations to their current stock of matzo ball soup.

I was lucky that on a Friday, they happened to do a pop-up at Saras Market in East LA, serving it hot! I drove 40 minutes from Beverly Hills and it was worth every mile.

*This was a complimentary meal

After I had the soup, I didnt have that lingering aftertaste from overpowering ingredients. Although it was a pretty big quantity, it was super light.

When did you move to LA?

The Best Instant Noodles According To Chefs Cookbook Authors And Ramen Fanatics

Instant noodles are steeped in more than just hot water and seasoning. Theyre also steeped in historical and cultural significance. Momofuku Ando created instant noodles in 1958 as a postwar invention to help curb world hunger, and since then, theyve bloomed into a huge industry, inspiring museums, poems, and prison bartering systems. Theyre simultaneously embraced as cheap sustenance, proffered as a way to help future food shortages, and used as a backdrop for culinary experimentationall of which makes them perfect for our current moment. That, plus the simple fact that a great bowl of instant noodles is comforting and delightful to slurp: warm, carby, salty, and delicious.

It would be impossible to agree on the best instant noodles. There are thousands of varieties, and the World Instant Noodles Association counted 106.4 billion servings eaten worldwide in 2019. We couldnt pick just one noodle. So we decided to round up some favorites from discerning experts, for when you want a fast, affordable, tasty meal that you can whip up from your pantry by just adding water.

Curry Udon

Daichan is a tiny spot in Studio City that specializes in the kind of comforting Japanese food that tastes absolutely incredible after a bad weeklike Japanese-style fried chicken, cold soba, and gigantic tempura rice bowls. That said, our go-to order is the spicy curry udon. This massive bowl of soup comes filled with thick, chewy udon noodles and marinated chicken all in an umami-rich, yet slightly sweet broth that never fails to reach down into the darkest parts of our psyche and make us instantly feel better.

Beef Vermicelli Soup

Golden Leaf is a remarkable diner in a San Gabriel strip mall, with excellent ground pork chow mein and oyster pancakes. But our number-one draft pick here is the beef vermicelli soup, with heaping portions of green onion, suan cai , and spinach, in a marrow-rich broth. Golden Leaf also has their takeout game figured out, with everything individually packaged so nothing gets soggy on the drive home.

Original Kalguksu

The menu at Hyesung Noodle Shop is like an 87-minute movie in a sea of seven-part documentariesshort, simple, and, quite possibly, perfect. Since opening in late 2019, theyve added a few more items, like chicken wings, fried dumplings, and half-gallon jars of kimchi . But the star of the show here is still clearly the kalguksu: a knife-cut noodle soup served with savory anchovy broth, dense noodles, and shredded pieces of chicken. Perfect for cold days, rainy days, and days when you just need something warm, like, now.

  • 3rd Street Restaurant Chicken Noodle Soup

3rd Street Restaurant, a chicken-focused Koreatown establishment with a 30-year track record, somehow escaped my gaze until writer Cecilia Hae-Jin Lee recently covered it for the LA Times. The simple setting includes a yellow sign, worn tile flooring, framed rooster paintings, a Korean-only menu, and only eight linoleum tables. I enjoyed the spicy chicken stew and resulting fried rice made with residual broth. Still, it was the chicken noodle soup that had me heaping praise on the restaurant at The Taste and across town.

The chicken hand-cut noodles had good bite and helped to contribute to what might be the best chicken noodle soup in L.A. County. I loved how the thick, viscous, well-seasoned broth coated pulled chicken, zucchini strips, and scallions. A savory toss of nori strips topped the soup and took the taste up yet another notch. It was a hot night, but with soup this soothing, I stopped paying attention to the heat.

Its Xiao Long Bao Time

What makes a perfect soup dumpling? Also known as xiao long bao , this traditional Chinese dish hails from Shanghai and combines two of the greatest things in the known universe: hot soup and dumplings. A good XLB is all about ratio the soup must compliment the filling, the filling must go well with the wrapper, and most importantly, no one part should overwhelm the others. Its a delicate balancing act, one thats equal parts science and practical magic, but when prepared correctly, theres really nothing better for a chilly day when temperatures reach an unbearable 65 degrees.

If you know anything about LAs geography, you wont be surprised to learn that many of the best spots for xiao long bao exist in the San Gabriel Valley. But there are also family-run shops in Highland Park, dim sum on the Westside, and five Din Tai Fung locations sprinkled throughout the city. Here are the best soup dumplings in Los Angeles.

Mi Bo Kho

Le Croissant Doré is a French/Vietnamese bakery in Westminster, and while we certainly endorse getting involved with their excellent fruit tarts and chocolate croissants, a bowl mi bo kho is nonnegotiable. You can find this Vietnamese beef stew at many places around Little Saigon, but this is our favorite. The broth is dark, meaty, and slightly cinnamon-y, and the beef itself is beyond tender. But perhaps the best part is ripping off bits of the crunchy, house-made baguette that comes on the side and sopping up all the extra broth.

Budae Jjigae

Made with Spam, sausage, and instant ramen, this spicy kimchi stew isnt exactly a whos-who of the butcher shop, but if you order from Chef Kang Sul Box without getting it, youve done it all wrong. Its spicy, savory, and definitely large enough for two meals, which is a steal considering its only $13. Be sure to throw in some signature Korean wings to complete your feast.

Slack Season Noodles

The Slack Season Noodles at Joy, the Taiwanese restaurant in Highland Park, packs a ton of comfort into a small bowl. The deep flavors dont come from its toppingsa single, beautifully tender shrimp, some seasoned ground pork, and green onionsbut from the soups clear base. The shrimp and chicken broth impart a subtle ocean flavor to the chewy wheat noodles. Add on some shrimp wontons in chili oil or a thousand-layer pancake while youre hereboth are great and balance the soups simplicity with some huge punches of flavor.
