Absolutely! You can prepare the recipe as directed and then cover and refrigerate for a day or two ahead of baking.

Just be aware that it will increase the baking time by 10 minutes or so and youll need to test the rice to ensure its done.

For safety reasons, do not place a cold glass baking pan in a hot oven, as it may shatter. You can place it in the oven as it preheats or on a room temperature baking sheet in the hot oven to prevent it touching the hot rack.

How To Make Creamy Chicken And Rice Casserole

If you make this casserole with rotisserie chicken and instant rice, it comes together even faster! This recipe is perfect for busy weeknights.

PREP INGREDIENTS Start by greasing a 9×13 inch baking dish and preheating the oven to 350 F. Thaw mixed vegetables and shred rotisserie chicken.

COMBINE INGREDIENTS In a large bowl, combine the instant rice, cream of chicken soup, half of the cheese, and mixed vegetables. Gently mix together. Add in all spices and milk.

PREP FOR BAKING After mixing, transfer to the 9×13 in. casserole dish. Sprinkle remaining cheese on top and bake for about 40 minutes until bubbling and rice is tender. The cheese will be beginning to get golden brown.

If you dont like a slightly crispy cheese layer on top, bake the casserole without the cheese on top, then remove the casserole from the oven for the last 5 minutes of baking, sprinkle the cheese on, and return to the oven for 5 more minutes. This will make the cheese a little more melty and gooey as opposed to a little more crispy.

GARNISH After removing the casserole from the oven, garnish the top with chopped parsley for a little pop of color and flavor. Serve warm.

  • Skin on, bone in chicken thighs is best for this recipe because they take the same length of time to cook in the oven as the rice 50 minutes in total. However, we remove the skin because otherwise the fat drips down into the rice as it cooks which makes it overly greasy. Its easy its effortless and takes 5 seconds flat per chicken.

Grease a baking dish well, bottom and sides. Next, place chicken pieces in dish evenly, pour water, rice, soups and desired salt and pepper on top, mix well. Last, top evenly with pads of butter.

Place on middle rack of pre-heated oven and bake for 60-75 mins. When ready, remove and allow to cool for 15 minutes before serving.

Serve with a side salad and your favorite veggies broccoli and green beans go well with this dish.

  • Broccoli Cheddar Chicken & Rice Casserole: Replace the mushroom soup with 1 can Cheddar Cheese Soup and 2 cups chopped broccoli florets .
  • Pork Chops: Make this a pork chop bake with boneless pork chops or pork tenderloin cut in thin slices. Be sure to cut them thin enough so they cook all the way through without needing to add time.
  • Vegetables: For a one pan dinner, add up to 2 cups diced mixed vegetables, either fresh, canned, or frozen. Try frozen broccoli, green beans, fresh mushrooms, peas, corn kernels, or bell peppers.

CHICKEN BREAST: I make this great recipe with a rotisserie chicken or other leftover chicken, but you could also use homemade chicken breasts, chopped or shredded, or even ground chicken.

CREAM SOUP: If you dont like cream of mushroom soup, you can substitute for any other cream soup such as cream of celery soup or another one that you do like.

SOUR CREAM: You can substitute Greek yogurt for sour cream if youd like. If you wanted to leave out the sour cream entirely, you could, but we would suggest increasing the quantity of cream soup in this case.

SEASONING: You could add a dash of paprika for more flavor if youd like.

VEGGIES: You could add your favorite veggies like carrots, broccoli, peas, celery, green beans, or mushrooms to this dish.

CHEESE: Add your favorite cheese! Cheddar cheese and parmesan cheese are two great options.

TOPPING: You could always add a few breadcrumbs on top for some extra crunch.

Dont sweat it, you can substitute it with cream of mushroom soup or cream of broccoli. If you dont have any of those either, heres how you make it:

  • 3 tablespoons butter
  • ¼ teaspoon onion powder
  • salt and pepper to taste.
