Chicken And Rice Casserole With Cream Of Mushroom Soup
I’ve shared quite a few different chicken and rice casserole recipes over the years — from dump-and-bake options to made-from-scratch dishes — but this particular dinner is definitely one of my favorites! It wins major points for ease , but doesn’t sacrifice fresh, homemade taste. While cream of mushroom soup is a simple base, the meal really gets its flavor from sautéed mushrooms, onions and celery, along with herbs like chives, parsley and thyme. You also can’t beat a crunchy, buttery, Ritz cracker and French fried onion topping. This is your grandmother’s old school chicken and rice casserole — elevated!
How To Make This Easy Chicken Casserole
Two ways you can prepare the chicken:
1. Dice boneless, skinless chicken into 1 inch pieces and cook in a sauté pan for about 10 minutes over medium heat or until no longer pink.
2. Place chicken breasts in a 9×13 glass baking dish and sprinkle with garlic powder and pepper. Drizzle with olive oil. Cover with foil and bake at 350 F for 30-40 minutes or until no longer pink.
Cook the elbow noodles per package directions.
After the chicken is cooked, shred it with a fork or put it in a food processor to shred quickly. Save the juices to use as well.
In a medium bowl, mix the cream of mushroom and cream of chicken soups, shredded cheese, and the broth from cooked chicken .
Place the cooked elbow macaroni into a 9×13 baking dish.
Add in the cooked, shredded chicken.
Pour the cheese/soup mixture over top and mix together well.
Sprinkle the top with panko or bread crumbs and bake at 350 degrees F for 25-30 minutes.
To brown the panko topping, turn the oven on broil on low for about 3 -5 minutes to get it extra crispy. Just watch very closely. It can burn quickly. I usually leave the oven door cracked and and watch it the entire time.

Can You Freeze Chicken Casserole
Chicken casseroles are a wonderful meal to make ahead and freeze. It can either be frozen cooked or uncooked. Just place it in freezer safe dish and then wrap tightly in aluminum foil. Then wrap the entire dish in plastic wrap as well. Freeze for up to 3 months.
When you are ready to cook the casserole, place it in the refrigerator the night before to thaw then cook then next night.

This is the stripped-down deal here, but this casserole has many possibilities. Add some thawed or fresh broccoli florets or peas to the mix and youve got a complete meal in one dish.
The original has poppy seeds mixed in with the cracker crumbs. I made that optional here because many folks dont have poppy seeds on handand they really dont add any appreciable flavorand many who have dental bridgework will understand the other problem! So what I do is sprinkle them on top as a condiment if anyone wants it.

Cheddar cheese I recommend shredding cheese from a block. Pre-shredded cheese sold at stores tends to have a coating on it that prevents it from clumping. The coating prevents the cheese from melting correctly.
Ritz crackers I love how the crackers add texture to the casserole. You can lightly crush them inside a Ziploc bag with a rolling pin to make the process less messy.

- Our favorite side for this easy casserole would have to be mashed potatoes. The casserole has the cream of chicken sauce that is served as gravy over the mashed potatoes. Its amazing!
- If you dont like mashed potatoes, rice or pasta of choice may also be used. Pour the sauce from the chicken over the pasta or rice as gravy so good!
NOTE: If you have picky eaters, you can skip the mushrooms or leave it on half of the casserole. My kids are not fans of mushrooms so, I just load one side of the casserole with extra mushrooms for the Mr. and I, leaving the other half without mushrooms. .
How To Make It
Heat olive oil in a large pot over medium-high heat. Add the seasoned chicken and cook for 3 minutes. Toss, and add the broccoli. Continue to cook until chicken is cooked through, about 3 more minutes. Remove from heat.
Add sour cream, milk, cream of mushroom soup, and sharp white cheddar to the pot and toss to combine.
Cook pasta for 1 minute less than al dente . Drain, and add to the pot with the sauce. Use a silicone spatula to gently toss to combine.
If the pot isnt oven safe, transfer it to the lightly greased 9 x 13 casserole dish and top with regular cheddar cheese. Cover and bake for 25 minutes. Remove cover and top with crispy fried onions. Bake for 8 more minutes. Serve with Garlic Bread with Cheese.

- This can be a really affordable meal for your family as you can skip the chicken breasts and use cheaper cuts like chicken thighs and legs if you want. I find that chicken thighs cook up the best in this recipe as chicken breasts can dry out.
- If you use chicken breasts, make sure that you cover them with sauce and rice if you can to keep them from drying out.
- Use only the rice I specify, wild or brown rice will take too long and it wont cook on time.
- Skin on or skin off chicken is another choice that is up to you. The chicken skin doesnt crisp up so if you dont like the texture of soft chicken skin, then remove the skin and cook skinless.
- IF you want to keep the skin on and make it crispy simply place the chicken on top of the rice and soup mixture. It will crisp up more!
