How to Make a Good Bowl of Potato Soup.

Making our vegetable and white bean soup is simple, and it all happens in one pot! Heres an overview of how to make it .

  • Sweat onions, carrots, and celery in olive oil and tomato paste. The tomato paste adds lots of flavor and color to the soup.
  • Add more flavor with garlic, red pepper flakes and salt.
  • Add stock, beans, fresh thyme and bay leaves.
  • Simmer until the veggies are tender .
  • Add small pasta and cook until done.
  • Serve with a few lemon slices added to the pot.
  • We add lemon slices to our lentil soup, too. They are not intended to be eaten, but they do perfume the soup with the aroma and taste of lemon. We just love it!

    What Beans Should I Use

We typically make this a white bean soup and use canned white beans to make it, but any cooked or canned bean will work in the soup. You can see how we cook black beans or chickpeas if you would like to cook the beans from scratch.

Lentils or split peas can be used, as well. When using lentils or split peas, there is no need to cook them before adding them to the soup. Simply add them along with the broth and cook until they are tender before adding the pasta. You might find that this adds an extra 10 minutes of cook time.

What Kind Of Vegetable Any Kind

Nearly any vegetable will make tasty soup, Sweet potato, zucchini, squash, turnip, tomato, celery, mushrooms, onions, leeks, cabbage, kale, chard, potatoes, rutabaga, celeriac, cauliflower, broccoli the list goes on.

The only caveat is that you need to like the flavor of the vegetable. You can tone down turnips bitterness with cream or yogurt, and you can offset cabbages aroma with creamy white beans or tart lemon, but you cant entirely erase the taste of a vegetable in soup, so dont put something in that you really dont like.

Also, nearly any texture of vegetable will work, from tender greens to hard squash, but the cooking time will change. A big pot of chard will cook down quickly, while butternut squash will need more time.

Mistake : Adding Too Much Salt

As soup cooks, some of the liquid will evaporate, concentrating the saltiness of your ingredients.

To prevent over-salted soup, add just a small amount of salt to season ingredients at the start. Once the broth is in, taste and adjust accordingly.

If youre watching your sodium intake, its wise to season soup just before serving. And try to avoid adding other high-sodium ingredients, says Morningstar.

Canned beans or veggies can add a lot of sodium to a dish, which can be reduced by rinsing in a strainer before adding to the pot. If you over season your soup, adding unsalted liquid, like water, almond milk, or lite coconut milk will help dilute it, she adds.

If you’re making a big batch of soup that contains noodles, rice, barley, quinoa, etc, the starch will soak up a lot of the soup liquid if you store it all together in one container overnight. The solution is to cook the starchy ingredient separately and ladle the hot soup over it to serve. Then you can store any leftovers separately.

    How To Thicken Soup

If your soup turns out to have a thinner texture than you’d like, there are several ways you can thicken it up:

    • Blend it: Put all or part of the soup into a blender or use an immersion blender. This works best if the soup ingredients you’re blending are starchy, like potatoes, rice, or beans.
    • Add cornstarch or flour: Start with a tablespoon of cornstarch or all-purpose flour in a small bowl, and whisk in enough water to make a thin slurry. Add it to the soup and let it come to a simmer. If the soup needs more thickening after it simmers for a few minutes, add a little more slurry.
    • : That’s flour and butter paste to the rest of us. Mash equal parts butter and flour together to make a thick paste and stir it into the soup. As the soup simmers, it will thicken.
    • Add cream or yogurt: Cream gives any soup a slightly thicker and definitely richer texture. Use full-fat cream to get the best results. If you use yogurt to thicken the soup, be sure you don’t boil it after adding or else the yogurt could split and curdle the texture.
    • Add bread, potatoes, rice, or pasta: For best results, blitz the bread in a blender and stir in the fine crumbs. Add peeled cubes of russet or Idaho potatoes and let them cook down (or cook them separately, mash them up, and stir them into the soup. Cooked rice or pasta will also thicken the soup if you simmer them together.
