If you want to add sugar, only add our sugar substitutes allowed and especially the ones, which do not have any carbs.

Even though I have not sweetened this Low Carb Roasted Tomato Basil soup with anything, because, frankyl the beefsteak tomatoes are sweet enough on its own, you can still use stevia.

I add stevia to almost everything I cook. Well not everything, only the dishes, which need to be a bit sweeter. And that is either some soup or some sauces. Baking is another story.

Easy Keto Tomato Basil Soup Recipe Note:

Be sure to use good quality canned tomatoes for this recipe since there arent a lot of other ingredients to mask the bitter or metallic flavor that you may get with low grade canned tomatoes. Homegrown, organic and/or San Marzano region tomatoes will typically give the best flavor. I use Cento brand when I can find them and Im never disappointed but any brand of tomatoes grown in and imported from Italy will likely yield delicious results.

Thats not to say this easy keto tomato basil soup wont still be tasty made with U.S. tomatoes, just maybe not quite as good as it could be.

How To Peel And Seed Tomatoes

To peel and seed tomatoes, fill a large bowl with ice water and bring a pot of water to boil on the stove. Dip tomatoes in boiling water for 30 seconds to 1 minute until skins begin to split. Immediately immerse in boiling water.

Tomato skins should peel right off. Use a peeler to get any skin that didn’t come off easily.

To seed the tomatoes, cut in half and scoop out seeds with a spoon. From there cut or dice according to the recipe you are using.

You can use fresh tomatoes in this recipe as a substitute. Approximately 3 1/2 lbs of tomatoes will equal

Yes! You read that right, its Keto tomato soup. You can eat tomatoes on the Keto diet and dont let anyone tell you otherwise. Tomato soup is one of those dishes that brings back memories of long distance train journeys. As a kid and even later on when I traveled by train one of the highlights was tomato soup. There were vendors walking up and down the compartments shouting tomatoo shouuuupppp and all of us would scrounge together our money and buy a cup. It used to be great on cold nights in the train.

For this recipe however I have to credit my friend Anu Narayan who made this for me on my recent UK trip. I was totally floored by the soup and I just knew I had to make it for you guys. At 5g net carbs per serving this is really Keto friendly and can easily fit into your daily allowance. Anyway enough jibber jabber. Enjoy!

Ready to see how to make broccoli cheese soup without added carbs or weird ingredients? Its super simple, just a few easy steps:

  • Saute garlic in a large pot or Dutch oven. It takes about 45-60 seconds, until fragrant.
  • Add chicken broth, heavy cream, and chopped broccoli. Simmer until the broccoli is tender, about 10-20 minutes.

TIP: The simmer time will vary depending on the size of your florets. Smaller florets = faster simmer time.

  • Add the shredded cheddar cheese gradually, stirring constantly, and continue to stir until melted. This will help thicken the soup.

  • Puree the broccoli into the soup along with the cheddar cheese using an immersion blender. I like to remove about 1/3 the florets using a slotted spoon first, so that you can toss the florets back in afterward and have some broccoli pieces in your soup.

TIP: The more broccoli you leave in before pureeing, the thicker your broccoli soup will be. The cheese helps thicken your broccoli cheddar soup, but the pureed broccoli florets will, too!

    That is what is so great about this tomato soup recipe. Even if you are on a strict low carb diet like keto, you can still eat this soup.

    Also if you are counting carbs, then instead of serving soup with the traditional grilled cheese sandwich or croutons, I recommend serving it with a salad or a delicious Low Carb Ham and Cheese Muffin.

    CREAMY TOMATO BASIL SOUP
  • Add the chopped tomatoes and bring to a boil. Add black pepper, cayenne pepper, smoked paprika, cumin, and stir.
  • Simmer on medium-low heat for 5 minutes. Add one cup of broth and cook for 10 minutes, or till the tomatoes no longer taste sour.
  • Add another cup of water and the heavy whipping cream and mix together.
  • Pour into a blender and puree until it’s smooth. Pour the soup back into a pot and adjust seasoning if you wish. I always add salt last because broth contains some salt.
  • Simmer till you reach your desired consistency.

    How To Make Keto Creamy Tomato Basil Soup

  • Roast the chopped tomatoes tossed with olive oil, along with the garlic cloves, on a baking sheet for 35-40 minutes.
  • Blend the tomato mixture and basil in a blender until creamy.
  • Heat the mixture in a large pot, along with the broth, red pepper flakes, cream and tomato paste until hot, not boiling.
  • Garnish and serve.
  • I served this soup with a cheese sandwich made with keto bread, grass-fed cheddar and arugula. I toasted the bread first, then added some ghee to a skillet, and heated both sides until the cheese melted. It was so good! So much tastier and healthier than the traditional tomato soup and grilled cheese combo.
