How To Make Roasted Tomato Soup Low Carb Or Keto
As already mentioned above, do use more bone broth to liquidise the soup even more.
If you want to add sugar, only add our sugar substitutes allowed and especially the ones, which do not have any carbs.
Even though I have not sweetened this Low Carb Roasted Tomato Basil soup with anything, because, frankyl the beefsteak tomatoes are sweet enough on its own, you can still use stevia.
I add stevia to almost everything I cook. Well not everything, only the dishes, which need to be a bit sweeter. And that is either some soup or some sauces. Baking is another story.
Easy Keto Tomato Basil Soup Recipe Note:
Be sure to use good quality canned tomatoes for this recipe since there arent a lot of other ingredients to mask the bitter or metallic flavor that you may get with low grade canned tomatoes. Homegrown, organic and/or San Marzano region tomatoes will typically give the best flavor. I use Cento brand when I can find them and Im never disappointed but any brand of tomatoes grown in and imported from Italy will likely yield delicious results.
Thats not to say this easy keto tomato basil soup wont still be tasty made with U.S. tomatoes, just maybe not quite as good as it could be.
How To Peel And Seed Tomatoes
To peel and seed tomatoes, fill a large bowl with ice water and bring a pot of water to boil on the stove. Dip tomatoes in boiling water for 30 seconds to 1 minute until skins begin to split. Immediately immerse in boiling water.
Tomato skins should peel right off. Use a peeler to get any skin that didn’t come off easily.
To seed the tomatoes, cut in half and scoop out seeds with a spoon. From there cut or dice according to the recipe you are using.
You can use fresh tomatoes in this recipe as a substitute. Approximately 3 1/2 lbs of tomatoes will equal
A Hearty Soup For The Winter
Yes! You read that right, its Keto tomato soup. You can eat tomatoes on the Keto diet and dont let anyone tell you otherwise. Tomato soup is one of those dishes that brings back memories of long distance train journeys. As a kid and even later on when I traveled by train one of the highlights was tomato soup. There were vendors walking up and down the compartments shouting tomatoo shouuuupppp and all of us would scrounge together our money and buy a cup. It used to be great on cold nights in the train.
For this recipe however I have to credit my friend Anu Narayan who made this for me on my recent UK trip. I was totally floored by the soup and I just knew I had to make it for you guys. At 5g net carbs per serving this is really Keto friendly and can easily fit into your daily allowance. Anyway enough jibber jabber. Enjoy!
What To Serve With Tomato Soup
Of course, everyone knows that tomato soup and grilled cheese are a classic pairing. If this is what youre craving, just whip up a grilled cheese with your favorite brand of low-carb bread and dig in.
Looking for some lighter sides? Keto cheese crackers offer great crunch, and you can even dip them right in the soup. Low-carb cornbread would also be a great way to soak up anything left in the bowl.
Or, if youre really craving the comfort, serve your soup alongside some keto cauliflower mac and cheese! It doesnt get much better than that.

How To Make Broccoli Cheese Soup
Ready to see how to make broccoli cheese soup without added carbs or weird ingredients? Its super simple, just a few easy steps:
- Saute garlic in a large pot or Dutch oven. It takes about 45-60 seconds, until fragrant.
- Add chicken broth, heavy cream, and chopped broccoli. Simmer until the broccoli is tender, about 10-20 minutes.
TIP: The simmer time will vary depending on the size of your florets. Smaller florets = faster simmer time.
- Add the shredded cheddar cheese gradually, stirring constantly, and continue to stir until melted. This will help thicken the soup.
TIP: Avoid having the heat too high when adding the cheese or after, to avoid seizing. See more tips about how to make broccoli cheese soup perfectly, without carbs and without clumping, below.
OR, go with my preferred method to avoid clumping altogether
- Puree the broccoli into the soup along with the cheddar cheese using an immersion blender. I like to remove about 1/3 the florets using a slotted spoon first, so that you can toss the florets back in afterward and have some broccoli pieces in your soup.
TIP: The more broccoli you leave in before pureeing, the thicker your broccoli soup will be. The cheese helps thicken your broccoli cheddar soup, but the pureed broccoli florets will, too!

Ingredients For Tomato Basil Soup
We rarely use our crock pot for cooking meats or casserole style recipes. We are so used to the stove top and oven as our appliances of choice. But, by slow cooking a soup recipe, we find the flavors have time to meld together and intensify the taste. We use our slow cooker for our creamy tomato basil soup. It works perfectly. The slow cooker also gives you the chance to cook a meal at home when you are not at home. It is nice to run errands or enjoy a movie then come home to a meal!
Controlling the ingredients in a recipe is a key to a low-carb lifestyle. Restaurants love sugar in everything from a classic margarita to a classic tomato basil soup. It keeps customers coming back, but it is not healthy. At home, we skip the sugar and lower the carbs with ingredient choices. As you try our recipes and follow our posts you will see we avoid extra sugar and wheat products. We show a simple basil pesto recipe below for our soup. It also works well for topping chicken, on salads, and even as a burger topping. Spreading basil pesto on toasted soul bread with tomato and fresh mozzarella is a wonderful appetizer.
We also find that quality canned tomatoes are a quick alternative. Our favorite brand is Cento. Their San Marzano tomatoes are certified authentic and undergo rigorous growing protocol. They are guaranteed fresh. That is, of course, as fresh as a can will allow. This brand is used by many chefs and foodies do not hesitate, they are tasty!

Can You Eat Tomato Soup On A Low Carb Diet
I am so excited to say that not only is this tomato soup recipe so flavorful, you can eat this tomato soup on a low carb diet.
Not all tomato soups are low carb friendly, in fact many arent. Your typical tomato soup has a moderate amount of carbs.
So, if you are sticking to a very strict low carb diet, many tomato soups can potentially use up majority of your allotted net carbs, depending on how strict of a diet you are on.
That is what is so great about this tomato soup recipe. Even if you are on a strict low carb diet like keto, you can still eat this soup.
This tomato soup is totally keto friendly.
Also if you are counting carbs, then instead of serving soup with the traditional grilled cheese sandwich or croutons, I recommend serving it with a salad or a delicious Low Carb Ham and Cheese Muffin.
Either would make a great side to this great soup.

How To Make Keto Creamy Tomato Basil Soup
I served this soup with a cheese sandwich made with keto bread, grass-fed cheddar and arugula. I toasted the bread first, then added some ghee to a skillet, and heated both sides until the cheese melted. It was so good! So much tastier and healthier than the traditional tomato soup and grilled cheese combo.

Variations For This Recipe
The beauty of this simple soup is that it gives you a great base. From there, youre welcome to modify however you like.
Since we use coconut cream, the only dairy in the recipe comes from the optional feta topping. To keep your dish dairy-free and vegan, simply skip the feta. You can top with your favorite vegan cheese if you prefer!
On the other hand, if you dont like or dont have coconut cream, you can easily use heavy whipping cream instead. Just note that this will change the nutritional information slightly, although it shouldnt alter the net carbs.
Want to use different toppings? Play around with different cheeses, add a dollop of sour cream, or try some pumpkin seeds for a little crunch. Go ahead and have some fun with it!

The Best Keto Tomato Soup
When it’s cold outside, you can bet this homemade keto tomato soup is a staple in my household.
Now, some of you may be wondering, “Joe, are tomatoes keto“?
And the answer is yes. Tomatoes – in small quantities – are generally considered a good keto food. Tomatoes are a fruit relatively low in carbs and sugars.
However, premade tomato broths often contain added sugars. And sugar is metabolized as a carbohydrate, which means that many processed tomato products are off the table for keto.
That is why this recipe involves creating your own broth with raw tomatoes. Using raw tomatoes allows you to avoid processed tomato broths’added sugars and gives it a more homemade feel.
Also, freshly made tomato broth is more flavorful, with a little more chunkiness and heartiness than the kind you can buy in the store. And, I don’t know about you, but I really dig the fact that you can taste the freshness of this soup in every gulp, slurp, and spoonful!
