From Scratch Chicken Noodle Soup
Serves approx. 6-8. Cooking time is approx. 45 minutes from start to finish.
Yes, it’s summer and yes, it’s hot outside. But that doesn’t mean we can’t enjoy the goods of the fall season! For starters, I could eat pumpkin pie all year ’round, so why can’t we also enjoy delicious homemade soups in July? Well folks, I am here to tell you that you can and you should if it makes you happy. You do you.
I am finding it harder all the time to be able to enjoy soups that don’t upset my very sensitive digestive system. So many soups are filled with hard-to-digest creams and a mountain of preservatives. I love soup, in general, so I have spent some time making my own simple, from-scratch, and tasty recipes that leave you feeling fully satisfied without the inevitable stomach discomfort.
So here’s the first recipe and a true staple at our house… Homemade Chicken Noodle Soup!
3/4 stick or 6 tbsps unsalted butter
1/2 of a yellow onion
2 c carrots
3 celery stalks
2-3 large cloves of garlic
10-12 c chicken broth
2 large chicken breasts
2 c egg noodles
Salt & pepper to taste
2 c fresh spinach

I dont know why I feel the need to make Chicken Wild Rice Soup when the weather gets bad, but there you have it. Maybe its something my Mom did OR maybe its ingrained in my DNA. That would be cool. Either way, I made a huge pot of delicious chicken wild rice soup and you lucky people get the recipe!

Thai Chicken Noodle Soup
Delicious fresh, fragrant Thai soup. Very tasty and can use which ever veg you have spare. Easy to keep the basic ingredients in the fridge and can be made veggie!
Provided by Chloelep
- Heat sesame seed oil on high heat. Fry chicken skin down until brown. Add star anise, garlic and ginger paste. Add oyster sauce and stir.
- Add chicken stock and cover and cook until chicken is cooked and falls off the bone.
- Remove chicken at set aside to cool. Remove from bone when cool and place in a bowl. Prepare veg by slicing thinly.
- Cook rice noodles as per their instructions. Set aside. When ready to eat place chicken and noodles in a bowl. Add veg to the stock in the pan and cook until just heated through, do not over cook.
- Add veg to the bowl and cover with the broth. Garnish with fresh chili and corriander. Eat with chop sticks.

How To Make Chicken Wild Rice Soup
This is a one-pot soup recipe that starts with sauteing the vegetables. Chicken is added to be cooked then comes the wild rice and seasonings. A half & half-flour mixture is stirred throughout to thicken then you just have to wait until the rice is cooked through. For full recipe details, check out the recipe card below!

I think the key is to not go overboard. The Kittenish store owner said she believes that no one should ever limit themselves on the goods if they want to eat. How To Make Slow Cooker Mushroom Wild Rice Soup
First, chop all of your vegetables. Add them all to your Crockpot, along with all your seasonings. Pour in your vegetable broth.
Stir everything together, then cover the slow cooker. Set to high for 3 to 4 hours, or low for 6 to 8 hours.
After your soup is finished cooking, next, we mix our butter and flour together in a bowl into a paste, and use that to thicken up the soup. Its a technique thats called beurre manié. This is an ingenious way to thicken your soup without having to stop and make a difficult roux on the stovetop.
Ladle some soup into your butter-flour mix to temper it, mix it together until smooth, then add the whole thing into the soup.
Add in your coconut milk, then stir it all together. Let it all meld for at least 5 minutes in the hot soup.
Taste, adjust seasonings, serve and enjoy! My favourite side with this is my No Knead Dutch Oven Bread since its so easy!

Freeze. Because dairy doesnt freeze well I would advise you to not add the half & half and flour mixture to the soup. Instead, fully prepare the soup without the mixture then cool to room temperature. Store in a large freezer bag that lays flat in the freezer. Freezing in a thin layer like this will help when it comes to thawing quickly. Freeze for up to 2 months!
Thaw. Either transfer your frozen soup to the fridge the night before to slowly thaw or submerge the bag in lukewarm water for a quicker process. Reheat on the stovetop. Then add in the dairy flour mixture to thicken .

Chef John’s Homemade Chicken Noodle Soup
This soul-warming soup is deliciously simple — just chicken and noodles. What makes it so good is the homemade roasted chicken stock.
Provided by Chef John
|¼ teaspoon fresh thyme leaves|
|2 tablespoons melted chicken fat|
|2 quarts roasted chicken broth|
|4 ounces uncooked wide egg noodles|
|2 cooked boneless chicken breast halves, cubed|
|1 pinch cayenne pepper|
|1 pinch salt and ground black pepper to taste|
- Melt butter in a large soup pot over medium heat. Stir in carrot, onion, celery, salt, and fresh thyme. Stir in chicken fat cook and stir until the onions turn soft and translucent, 5 to 6 minutes.
- Stir in roasted chicken broth and bring to a boil.
- Season to taste with salt, if necessary stir in egg noodles and cook until tender, about 5 minutes.
- Stir in cooked chicken breast meat and simmer until heated through, about 5 minutes. Season with cayenne pepper, salt and black pepper to taste.

Ground Chicken Tuscan Soup
This is on the fancier side of the soup spectrum. You can serve it at a dinner party in pretty bowls with your best silverware if you want. It looks impressive. I fell in love with this soup at one of my go-to restaurants and decided to create my own version of it.
Prep time: 10 Minutes
4 large Yukon Gold potatoes, sliced
6 cups chicken broth
Salt and freshly ground black pepper
1 bunch kale, midribs and tough stems removed, leaves chopped
3/4 cup half-and-half or heavy cream
Freshly grated Parmesan cheese, for serving
In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the chicken and cook until browned, 5 to 7 minutes. Remove to a plate or bowl and discard any drippings.
In a large pot or Dutch oven, heat the remaining 1 tablespoon oil over medium heat. Add the onion, garlic, celery and carrots, and cook until they begin to soften, about 5 minutes. Add the potatoes, cooked chicken, broth, and salt and pepper to taste. Cook over medium heat until the potatoes are tender, about 20 minutes.
Stir in the kale and continue to cook just until the leaves soften, about 5 minutes. Add the half-and-half and simmer for an additional 5 minutes.
Ladle into bowls and serve with Parmesan.
