  • 4 cups cubed beef stew meat
  • 1 teaspoon sea salt
  • 2 cups pearl onion
  • 1 teaspoon dried parsley
  • 2 cups dark dry red wine
  • In large cast iron pot sauté oil and butter with half the cubed beef, season with salt and pepper.
  • This will allow some caramelization to happen making the stew tasty and delicious.
  • After beef is browned, add mushrooms and cook for about 5 minutes until the mushrooms are slightly browned.
  • Add garlic, carrots, pearl onions, and herbs.
  • Mix until well blended.
  • Then add Worcestershire, tomato paste, beef broth, and red wine.
  • Cook over medium heat for about twenty minutes or until the stew begins to boil.
  • Preheat oven to 275 degrees F.
  • Then cover cast iron pot and transfer to oven. Cook for 1.5 – 2 hours.
  • Taste and adjust seasoning as needed.
  • Garnish with fresh parsley and serve with crusty banquette and a side salad.
  • Note: Beef broth has a lot of sodium. That is why I only seasoned the stew with one teaspoon of salt. Please taste and adjust accordingly after the stew has fully cooked.

    Down to business. I have a Lodge, which I love, but there are plenty of great options out there at a variety of price points. You do absolutely need one, so choose the one that fits your budget. The best cast-iron Dutch oven doesnt have to cost $350but it sure can if you want it to. Here are our recommendations:

Ive had mine for 10 years, my mom has had hers for 40, and I know folks using Le Creusets that have been passed down from grandparents. Theyre more lightweight than competitorswhich is key if youre in the market for a 13.25 quart Dutch oven to make enough soup for your soccer teamand come with that Le Creuset lifetime warranty .     Lodge Cast Iron Products

    Lodge has two types of cast iron Dutch ovens and other cookware pieces. Seasoned cast iron and enameled cast iron.

    Both types are made from pouring Lodges formula of pig iron and other high-quality metals into sand molds known as castings. Amazingly sand has a high melting point that molten iron so the molds hold their shape until it is ready to be broken to reveal the iron cookware.

    This process has been carried out since the 9th century and luxury cast iron cookware manufacturers Le Creuset and Staub, in France, still use the same process to this day.

    Lodge, in 2002, was the first to introduce seasoning cast iron before it leaves the factory. It is now an industry standard. Lodge continues to season the bare cast iron with their own tried, tested, and proven seasoning formula before it leaves the factory.

    These ovens are then ready to be used on a campfire or any kitchen heat source. Lodge cast iron is oven safe, 500 °F, including the knob on the lid, and because they are made from metal and are magnetic they are naturally induction compatible.

    Enameled cast iron cookware has the same sand-cast core then it is covered with layers of enamel that are baked onto the core at extremely high temperatures. Left is a cast iron pot complete with a lid that has a bright shiny exterior that protects the iron from rust and does not need to be seasoned.

    Sea Island Red Pea Soup With Gruyere

    Smoked Potato and Bacon Soup On A Big Green Egg In A Cast Iron Dutch Oven
    • Time:1.5hrs

    Ingredients:

    • 14 ozs dried Sea Island Red Peas rinsed and drained
    • 1/2 cup chopped prosuitto
    • 8 cups low fat chicken broth
    • 1 teaspoon sea salt + 1 teaspoon freshly ground black pepper
    • Juice from half a lemon
    • 2 to 3 handfuls of baby kale leaves
    • 1/2 cup veg or canola oil, divided
    • 1 3/4 cups white self rising cornmeal
    • 3/4 cup all-purpose flour
    • 1 cup shredded gruyere cheese
    • 2 teaspoons freshly ground black pepper
    • 1 1/2 cups buttermilk
    • Water if needed to thin down corn cake batter
    • Hot Sauce for serving

    Directions:

  • In a large stockpot cook the chopped prosciutto until most of the fat is rendered over medium-high heat. The meat should be a bit crisp.
  • Add the olive oil to the pan and stir in the yellow onion, celery and garlic cloves. Cook, stirring often, until the onions are translucent. Add peas and broth along with the salt, pepper and lemon juice. Bring to a low boil. Turn heat down to medium-low and cook until peas are softened, but still holding their shape. This might take an hour or more depending on your stove and whatever peas you end up using. At this point add kale to the pot and stir into the peas. Cook another 12-20 minutes on low while you make the corn cakes.
  • Preheat oven to 425 degrees. Drizzle a teaspoon of the vegetable oil into each cake space in the Lodge pan. If you are using a regular skillet then add 1/4 cup oil to the skillet. Place pan in the oven and leave to heat until the oil is at the sizzle stage.
