Let me tell you guys Im not a huge meat eater. This Instant Pot French Onion Pot Roast is simply amazing! Tender Juicy Beef smothered in French Onions all done in the Instant Pot! Tastes like it cooked all day in a dutch oven but it was a Quick Instant Pot Pot Roast that everyone will love any day of the week.

There is nothing like an instant pot, pot roast. Done to perfection with tender meat that shreds with the touch of your fork and still full of French Onion flavor. I served mine over mashed potatoes let me tell you it was to die for.

This Easy Slow Cooker Pot Roast Recipe/ Crockpot Pot Roast Requires Only 5 Minutes Of Prep Time

You just dump everything in a crockpot and let everything cook for a few hours. The meat simply melts in your mouth and this roast is so tender that it easily falls apart.

My favorite part is that you dont need to make a separate gravy. The cream of mushroom soup and juices of the roast combine together to create a delicious gravy.

Some Tips For Making Instant Pot French Onion Pot Roast

  • Cut your roast into 1 pound chunks for more even and faster cooking.
  • Use Yellow onions for a more savory result, or use a sweet variety onion like Walla-Walla or Vidalia for a sweeter result.
  • You can use fresh or dried thyme leaves. If using fresh, double the amount .
  • If you dont have a can of French Onion soup, use a packet of onion soup mix and 1 cup of water.
  • A little brandy or sherry adds nice flavor .
  • Be sure to let the roast naturally release for 10-15 minutes before releasing the pressure for the best, tender results.

You can either shred the pot roast after it is cooked, or leave it in large chunks. I prefer the shredded version, where the meat goes back into that yummy onion gravy!

How To Make Pot Roast With Onion Soup Mix In The Instant Pot

That Old Lipton Onion Soup Pot Roast Recipe

First, I like to cut the chuck roast into 3 large pieces. I do this whenever I make Instant Pot chuck roast, Instant Pot Mississippi roast and most Instant pot roasts. Cutting the meat shortens the cook time and makes it a lot easier to brown the meat.

Next, for maximum flavor, you can sear the roast on all sides. I usually do this step.

But, I did not sear the meat this time because I wanted this pot roast recipe to be as easy as possible. And, usually on busy weeknights, I want to get dinner on the table as soon as possible.

You really will get plenty of extra flavor from the dry onion soup and beef broth, but it’s up to you. So, just use your best judgement here.

Place the cut up chuck roast directly on the bottom of the pot. I used a 6 quart, and it fit easily. Then, sprinkle garlic powder and about half of the dry soup mix over the meat.

Next, add your beef broth and Worcestershire sauce around the sides of the meat. Then, place your baby potatoes, carrots and celery on top of the meat.

Layering the vegetables will keep them out of the liquid, and they won’t get too soggy when cooking. Now, sprinkle the remaining onion soup over the vegetables. We want to add flavor to every layer here.

Note — If you want firmer carrots, use about 4 or 5 regular carrots — peel them and cut them up into large chunks. Baby carrots get soft, but we like them that way.
