You know the old saying, Third times a charm!? Well, that was the case with this recipe! You see, I adapted this recipe from an oven recipe in Gooseberry Patchs 101 Homestyle Favorites. What we dont always share is the fun behind recipe development, but it can be quite a process.

You see, the first time, I made this, I didnt reduce the amount of liquid in the recipe quite enough, so we had more of a Crock Pot Shepherds Pie Soup. Not really what I had in mind. The second time I made this, I was on vacationand I grabbed the wrong cookbook. Ugh. So I did it from memory as best as I could. It turned out pretty good, but took a while to make, so I wanted to try it one more time to see if I could find a shortcut. And whaddya know, it worked! So now you have Crock Pot Shepherds Pie just for you!

    I usually only eat Shepherds Pie when its on the menu at a restaurant, but this version is so quick and easy that I could make it at home. This is comfort food, and would definitely be welcome on the dinner table. When making this, I would use lean ground beef and Healthy Request cream of mushroom soup. Instead of using mashed potato flakes, I would make my own mashed potatoes.

    Oh my word does this look delicious! Nothing screams comfort food like Shepherds Pie. This recipe sound very similar to the one I grew up eating. Im wondering if you could substitute any kind of cream soup instead of cream of mushroom? Im just not the biggest fan of mushrooms. Maybe a cream of cheddar? Something I like to do with my Shepherds Pie is to sprinkle a tiny bit of parmesan cheese on top of the potatoes. It gives the toppings a little bit of crunch. So good.

    But then you check your pantry and youre all out of canned tomato soup. No problem! Just make your own with this copycat recipe.

    How To Make Shepherds Pie

    There are two parts to this recipe that you can do simultaneously. First, wash, peel and chop your potatoes. Then, put them in a pot of water and bring to a boil. Once boiling lower the heat to medium. Cook over medium heat until easily pierced with a fork.

    While youre waiting on the potatoes, in a large pan, start to saute the mushrooms. I like to buy them pre-washed and chopped. Next, add in your ground beef. Cook until all beef is browned and break up into small pieces. Then, stir in cream of mushroom soup.

    Spray your casserole dish or large baking dish with cooking spray and pour in the beef mixture.

    The next layer is your sweet corn and creamed corn. Drain the sweet corn then pour both on top of the beef and spread into an even layer.

    Now, back to the potatoes Once they are ready drain out the water. Then, add sour cream and butter. Mash and combine. Finally, season to taste with salt and pepper. I used Kerrygolds Garlic and Herb butter in the mashed potatoes. Its quickly become one of my favorite butters to use, and it adds lots of flavor without extra seasoning. Garlic powder or garlic salt are also delicious additions to the mashed potatoes.

    Once your potatoes are ready spread them over the corn. Dont worry, it doesnt need to be perfect! This meal is delicious regardless of the final appearance!

    Finally, bake at 350 degrees for 35-45 minutes or until bubbling around the edges. Let the casserole sit for a few minutes after it comes out of the oven then enjoy!
