A few sprigs of thyme leaves and about 2-4 tablespoons of fresh chopped flat-leaf parsley are really good!
Options For Homemade Cream Of Mushroom Soup
- use different mushrooms like cremini , button mushrooms, shiitake, oyster or chanterelle mushrooms or any other wild mushrooms to the soup to enhance, alter and create more intense, earthier mushroom flavors in your soup
- use coconut milk instead of cream for a dairy free option
- add shredded chicken
- change the type of broth you use between chicken, beef or vegetable broth
- switch between nutmeg, thyme or tarragon
- remember to taste your soup before serving it and adjust the amount of salt and pepper as needed
- always use heavy or whipping cream to make this soup and you do not need to add a lot of it
I have included a list of our favorite cream soups below and its funny but I dont always include the cream in all of them because they ALL taste great without it, in our opinion.
We recommend tasting your soup before adding the cream, whenever possible, or use less to get the taste you are looking for or desire.
I also dont always blend or puree the soups after they are made. Sometimes I just dont feel like doing it and other times I am just in the mood for a chunky soup. Taste yours and see what you prefer.

How To Serve Cream Of Mushroom Soup
When youre ready to serve the soup, have some fun with it. Add some fresh thyme leaves on top, slice and saute some mushrooms to throw in for texture, and add in a handful of these homemade croutons for the crunch.
If you really want to get fancy, add that perfect layer of cheese on top like you would with French Onion Soup .

Is Canned Cream Of Mushroom Soup Gluten Free
Yes, and no! Most canned cream of mushroom soups you can buy contain gluten.
Like Campbells cream of mushroom soup, they usually have some form of wheat flour. The base of the soup is a butter-and-flour roux.
Here, we make that roux with butter and superfine white rice flour. That thickens the stock and evaporated milk, and creates a gorgeous, shimmering creamy soup.
There are varieties of canned cream of mushroom soup that are made gluten free. Pacific Foods brand has a cream of mushroom soup that contains cornstarch and rice flour in place of wheat starch.

Even with the whole making-your-own broth part, this soup is so very weeknight dinner-worthy. The ingredient list is short and very little is needed to make this earthy magic happen. Make Cream Of Mushroom Soup
15. Now add 1 cup of water or vegetable stock, or mushroom stock.
16. Stir and mix well.
17. Add 1 cup whole milk.
TIP: The milk should be at room temperature when you add it.
18. Mix very well.
19. Season with salt to taste and mix again. If using vegetable or mushroom stock instead of water, you likely will only need a small amount of extra salt, if any at all.
20. Simmer the cream of mushroom soup over medium-low heat. Stir often it will start to bubble up like in the picture below.
21. The soup will also begin to thicken. Continue to simmer the mushroom soup for more 4 to 5 more minutes.
As it cooks the soup will thicken more and more. Stir regularly so that it doesnt stick to the bottom of the pan.
22. Then add 6 tablespoons light cream or cooking cream or low fat cream or 3 tablespoons heavy cream or whipping cream. You can also add 7 to 8 tablespoons of half and half.
23. Stir and mix well.
24. Add 1 tablespoon of chopped parsley or coriander leaves or any fresh herbs of your choice.
25. Simmer the cream of mushroom soup for 1 to 2 minutes, stirring often.
26. Lastly, sprinkle 1 to 2 pinches of ground nutmeg powder or grated nutmeg and stir. Nutmeg gives a nice pleasant aroma but can be skipped if you do not have it.
27. Switch off the heat and pour the mushroom soup in individual serving bowls. Serve the cream of mushroom soup steaming hot garnished with more freshly chopped parsley or coriander leaves.

Mushroom Soup Other Ingredients
One really nice thing about this Mushroom Soup recipe is how few ingredients are actually called for. Why gild the lily with extra unnecessary flavourings when we already have a soup full of beautiful mushroom flavour!
Vegetable stock Store-bought stock works fine here, but I really recommend trying this with Homemade Vegetable Stock one of these days! Vegetable stock is much easier and less messy to make than meat-based stocks like beef stock and chicken stock, calling for just basic vegetables and flavourings
Cream, or creme fraiche This adds a luxuriously velvety mouthfeel to the soup so I really recommend not skipping it. If you dont have either, stir in a knob of butter at the end.
Cream or creme fraiche? Cream is the obvious option, but Ive also suggested creme fraiche for something a bit different.
What exactly is creme fraiche, anyway? Creme fraiche is a lightly soured cream, and unsurprisingly tastes like a cross between sour cream and heavy/thickened cream. It has the same velvety richness of cream with a slight tanginess . Its also thicker like sour cream and can be dolloped rather than poured. It lends a lovely faintly sharpened note to the soup.
Which is better? Id go cream for every day purposes, and reserve creme fraiche for company . But its no lesser a soup with just plain cream, I assure you!

Can You Freeze It
If you have any leftovers, you can freeze them for up to 2 months.
Pour the soup into an airtight container or a zip-top freezer bag. Once its completely cool, it can go into the freezer.
Thaw it at room temperature, in the fridge, or under cold running water, then reheat in a pot on the stove or in a bowl in the microwave.
You may notice a little separation, but it should come right back together with a quick & vigorous whisking.

How Do You Make Mushroom Soup
Creamy mushroom soup from scratch has a depth of flavour so different from canned soups , thanks to fresh herbs and ingredients.
Just a handful of ingredients needed to make your own version:
- Mushrooms: Fresh brown or cremini mushrooms are perfect for this recipe. You could also use mini portobello mushrooms, or a combination of your favourite mushroom varieties.
- Herbs: The best herbs we have found over the years to compliment those incredible flavours is a combination of thyme and parsley. Of course, if you dont like those, you can also use rosemary, oregano, tarragon, chives or cilantro. Use what you love!
- Cream: Half and half, heavy cream, light cream or thickened cream all yield similar results, however heavy cream adds richness.
- Flour: We need flour to create that delicious, creamy texture mushroom soup is loved for. You can leave it out and use cornstarch if you wish. I recommend 2-3 tablespoons cornstarch mixed with 1/4 cup water . If unsure about quantities for your liking, add the cornstarch slurry in tablespoon increments, stirring in between, until youve achieved your ideal texture.

How Do You Thicken Up Cauliflower Soup
This cauliflower soup has the perfect liquid to cauliflower ratio and doesnt need any thickening agents. If you like EXTRA THICK soup, only add 4 cups of stock instead of 5 when boiling. We find 5 to be perfect to suit our taste.
Having said that, if you find for some reason your soup has turned out too thin, feel free to use a cornstarch slurry to thicken it up.
Can You Make This Cream Of Mushroom Soup Recipe Without Evaporated Milk At All
Yes! You can make this soup without evaporated milk. Just replace it with a combination of ingredients.
Add more vegetable stock for more flavor, and some heavy whipping cream for richness. Youll have to experiment with the balance that you like best.
Id begin with 1 cup additional vegetable stock, and cup heavy whipping cream. In place of whipping cream, you can try canned coconut milk, but it may add coconut flavor.
