I originally created this vegan vegetable soup recipe after I wrote the cookbook. During the cookbook process I gained 5 pounds while writing the book and those 5 made me feel self conscious and just not as well. I wanted a hearty and healthy meal that I could eat for lunch and dinner while I got those extra pounds off. I made it for myself for dinner and made spaghetti for the rest of the family. They all saw the soup and wanted some. It was so good that they asked for it again the next day. Ever since then I added it into the monthly meal plan rotation. If I am trying to keep it light I just allow myself one slice of bread to go with it.

Reasons To Make Vegetable Soups At Home
1.Soups are an easy way to boost the vegetable intake. Some grocery stores sell fresh soups which might contain fewer preservatives than soup in a can, but you should still beware of the hidden processed ingredients and not only.
Heat sensitive vitamins like vitamin C can be depleted from soup if it has been simmered for a long time. And usually soups are kept hot for customers convenience. Anything older than two to three hours will contain less vitamins than if the soup had been freshly made at home.
2.The cooking method of vegetables can affects the retention of vitamins. Some nutrients are better absorbed when a food has been heated rather than when eaten raw. Cooked carrots, have more absorb-able beta carotene than when eaten raw. Its the same for tomatoes.
3. By consuming the cooking water , youre keeping the water-soluble vitamins.

Im usually making my vegetable soups gluten free and dairy free, water based and not cream based with no excess carbs or meat. This makes them easier to digest especially for people who have food sensitivities / allergiesand gut problems.
A Few Notes On The Recipe
- This soup isnt too spicy, but if youre sensitive to spicy foods leave out the chili flakes and check your all purpose seasoning for chili flakes or cayenne before you start cooking.
- If youre allergic to cashews and cant use cashew cream consider substituting it with a healthy pour of unsweetened full fat non-dairy creamer. You could also substitute the cashew cream with coconut milk, but expect a more coconut-y flavor with this swap.
- For quick and easy prep start soaking the raw cashews the night before.
- For the CREAMIEST cashew cream start with raw cashews and use a high speed blender like a vitamix.
- This soup is good for up to a week in the refrigerator.
- This chicken soup freezes well! To thaw, transfer to the refrigerator overnight, and warm gently on the stove before serving. This recipe would be an excellent way to get a bit ahead on some meal prep for nights when you dont have time to cook!

If you want to prep this recipe ahead of time or you have leftovers: you can keep it in the fridge in an airtight container for up to 5 days. I recommend reheating over the stove or covered in the microwave, stirring every minute until its hot.
To make and freeze: this soup freezes fantastically. I like putting it into individual airtight containers or zip-top bags and then freezing. That way, you can also defrost in individual portions for a quick meal!

If you plan to serve the whole pot of soup at once, go ahead and add the cooked pasta to the soup pot just before serving. But if youre planning for leftovers, keep the soup and the cooked pasta separate. Add cooked pasta to individual bowls and ladle the hot soup over top.
Store the cooked pasta and the minestrone soup in separate containers in the refrigerator for up to 5 days. When reheating, place the cold pasta in a bowl and ladle the reheated soup over top the soup will warm the pasta. Also, you can freeze the cooked minestrone soup in a freezer-safe bag for up to 3 months. If freezing, plan to make a fresh batch of cooked pasta just before serving the thawed and reheated minestrone soup.
