This thick and hearty soup would also go well over a baked sweet potato. YUM! I think I will do that with the leftover black bean and rice soup in my freezer.

    Our black beans and rice recipe can be served as a side OR as a main. An easy to throw together side dish that is so versatile, you can serve this with anything!

    A classic rice recipe, especially in Latin American cuisine, there are so many different ways to make this! However, this is our family recipe passed down by generations from our abuelitas to get to your table.

    In our recipe, you can use canned beans for a quick and easy cook up, OR soak dry black beans overnight. If soaking, remember to cook them for a couple of hours first before adding them into your rice.

    What Do I Need To Change If I Make Cuban Black Bean Soup On The Stovetop

    The most important change youll need to make if you make the stovetop version of this recipe is youll need to pretreat the black beans before making the soup. There are two methods to do so:

    • soak the beans: if youre planning ahead and have the time, I highly suggest soaking the beans overnight. This makes cooking them the next day a breeze, and personally, I find that they cook up much, much fast this way. All you have to do is add the black beans to a large bowl and fill it up with water. Rinse out the water and repeat once more. Then, allow the beans to soak overnight drain, and use as directed.
    • Do a quick soak: if you didnt get a chance to soak the beans ahead of time, heres a fix: add the beans to a medium pot and cover them with water. Bring the beans to a boil, cook for two minutes before turning off the heat completely. Allow the beans to sit covered in the water for 1 hour. Drain and use it as if youd presoaked the beans!

    How To Make Vegan Soup With Vegetables And Black Beans

    Slow Cooker Black Bean and Rice Soup

    Add the onions, garlic cloves, green chilli peppers, paprika and garlic granules to a saucepan on a medium-high heat. Stir for 2-3 minutes, until softened and fragrant.

    Add bell pepper and carrots with the garam masala and curry powder and allow those vegetables to soften for 2 minutes or so before adding the wholegrain rice, cauliflower, celery, cherry tomatoes and 4 cups of the water/veggie stock. Lower the heat, cover and simmer for 15 minutes.

    After 15 minutes, stir in the black beans, asparagus, miso paste, dried thyme and remaining water. Season to taste with salt and pepper. Cover and simmer once more for a further 10 minutes, or until the rice is cooked through.

    Serve immediately with fresh parsley and sesame seeds.

    This unique take on traditional, antioxidant-rich black bean soup adds whole-grain brown rice for hearty texture and even more nutrients. Reduce the amount of crushed red pepper if you like less heat. Serve with a dollop of plain Greek yogurt.

  • Bring water to a boil in a large covered pot. Add beans, oil, garlic, red pepper flakes, fennel seeds, bay leaf, and parsley. Cook over medium heat, uncovered, for 1 hour, stirring occasionally. Add rice, pepper, and salt to taste. Reduce heat and simmer 1 hour more, stirring occasionally.
  • Slightly crush tomatoes with hands stir tomatoes and juices into soup. Cook 30 minutes or until beans are soft. Salt to taste and sprinkle with fresh parsley to serve.

    How Can I Make Bean Soup Economically

    • Stock up on ingredients when they are on sale. When you see a good price on tomato sauce, beans, or your spices, buy a few extra to stash for later. You know youll use them. Stocking up can save you money.
    • Cook dried beans. Its a lot cheaper to cook dry beans than to buy canned. Recently Ive started using my electric pressure cooker for beans and it has been a game changer.
    • Make your own spice mixes. Spice mixes, like taco seasoning, are super simple to mix up in big batches and are so much cheaper than buying the packets at the store.
    • Buy spices in bulk. I regularly buy larger containers of spices I use frequently, like pepper, sea salt, garlic powder, and chili powder. I store excess dried herbs and ground spices in the freezer if I know it will be awhile before I go through the large container.

    How To Make Cuban Black Bean Soup On The Stovetop:

  • Once youve soaked the beans, its really straight forward. Youll saute the peppers, onions, garlic, and bay leaves in some oil on the stovetop.
  • When the veggies have softened and the onions are translucent, add the black beans, stock, oregano, and cumin to the pot. Stir to combine and bring the soup to a boil.
  • Lower the heat to low and allow the soup to simmer covered but with a small slit to let out the steam for roughly 1 ½ -2 hours or until the beans have cooked through. You can pure ½ the soup in a blender if you want a thicker consistency. The beans are usually so soft that I just use a wooden spoon and smash some against the wall of the soup pot. Why clean an extra piece of equipment if you dont have to?
  • Season the soup with red wine vinegar, sugar, and salt. Taste and adjust the soup to your personal preference. You can even simmer the soup longer to thicken it up a bit if youd like. Keep in mind the soup does thicken a bit as it sits, so I usually let it cool for 15 minutes before serving. Top with chopped avocados, cilantro, and onions and serve.

    A great way to repurpose leftover rice is to add them to this tasty Tex-Mex inspired soup. Even without meat, this soup is filling, hearty, and comforting. Not to mention, a total time and money saver, too!

    I grew up in a household that had no choice but to pinch pennies. We were immigrants and not the wealthy kind that came here for their PhDs more like the kind that came with a single suitcase, barely speaking any English.

    The perfect soup texture is completely up to you. You can make this soup as thick or thin as you want by adjusting how much to mash the beans and skipping the cornstarch. I like my soups really thick so I mash about half the beans by hand and add cornstarch to thicken. If you prefer a thinner soup, dont mash up any of the beans and omit the cornstarch. You can also purée some of the beans in a blender, if you want a thicker soup with a smoother texture.

    Freeze cooked rice for quick meals. Whenever I cook rice, I always cook more than what I need so I can freeze the leftovers and have it on hand for busy nights. Just be sure to cool the rice completely overnight in the refrigerator before freezing it. Otherwise, you end up with a gummy mess later. I speak from experience here.

    Spicy or mild. Its up to you. If you like your black bean soup to have some kick, feel free to increase the amount of chili powder. If you want no heat, replace the the chili powder with some ground coriander.

    Get fancy with the toppings. This soup is absolutely delicious on its own but you can always add some diced avocados, a dollop of sour cream, or some thinly sliced red onion or scallions if youre feeling fancy.

    To a 6-quart slow cooker add 2, 15oz cans Mrs. Grimes Black Beans that have been drained and rinsed, plus chopped bell peppers, minced jalapeno peppers, chopped yellow onion, minced garlic cloves, salsa, chicken broth , plus and herbs and spices including chili powder, cumin, salt, and dried oregano. Place a lid on top then cook for 3-4 hours on HIGH, or 5-6 hours on LOW.

    When the soup has 20 minutes left to cook, cook long grain white rice in a saucepan with chicken broth While thats cooking, scoop 1/2 1/3 of the cooked soup into a blender then blend until very smooth. Stir both the rice and blended soup back into the slow cooker then season to taste with fresh lime juice and a little bit of salt if necessary.
