In my soup making workshops, one of the most common complaints about homemade stock is that its not flavourful enough. The tips below will definitely help. But understand, our homemade stocks will never be as concentrated as store bought stocks, nor will they have as much salt, sugar, MSG and other preservatives. And thats a good thing!

  • Start with a good ratio of water. Use just enough water to cover stock ingredients by 1 inch. Too much water = lack of flavour.
  • Roast your veggies in the oven before adding to the pot. Youll build flavour from those caramelized veggies.
  • Sauté the onions, celery and garlic in the stock pot and deglaze the pan.
  • Add more high umami flavoured food like mushrooms , Parmesan rind, soy sauce, seaweed, miso paste, nutritional yeast etc. You dont need to add them all choose one or two that you have on hand.
  • Add a little acid to perk up the flavours.
  • Let it simmer longer without the lid to evaporate liquid and concentrate flavour.
  • Add a little tomato sauce or paste. This will colour your stock and add a nice depth of flavour. I use whatever tomato product I have leftover in the fridge tomato paste, pasta sauce, pizza sauce, tomato sauce, canned tomatoes, etc. You dont need to add a lot to improve the flavour.
  • Add more spices and seasoning to adjust the flavour to your liking.

The secret is to use a rotisserie chicken so that you can use the meat in the soup and make chicken broth with the leftover carcass and bones. You wont believe how easy it is and it really takes the soup over top in terms of depth of flavor.

Tips For A Perfect Old Fashioned Chicken Soup From Scratch

1. Making a homemade soup from scratch does take some time but the end result is totally worth it. It’s not difficult at all to make and can be done on a Sunday afternoon while you go about some of your other household business. Don’t sit and watch the pot let it do it’s thing come back and check on it when you need to go about each step.

2. For this recipe, you’ll need to boil a whole chicken in a large stock pot covered in water for a few hours. Once the chicken is almost falling apart you remove it from the water and onto a cookie sheet or large plate. Then you can remove the meat from the chicken and place it back into the pot with the chicken stock.

3. As you cook the chicken soup, you may need to keep adding water to the pot as it evaporates with the steam.

4. The most important thing to remember when making a homemade chicken soup from scratch is to put those chicken leg bones back into your stock pot as you cook the soup with the rest of the veggies and meat. Before serving remove the bones.

The leg bones in the stockpot are absolutely essential in making your soup taste like a proper and amazing soup, so please don’t forget them!

5.Don’t be afraid to make adjustments to the recipe and make it your own! I find it fun to try adding different types of veggies into the stock pot as the soup simmers for the afternoon.

How To Store And Freeze Chicken Soup

Refrigerate the finished soup for up to 5 days and reheat gently over low heat. Note that the egg noodles will expand quite a bit in the soup. If you don’t like this, cook the noodles separately and add them to each bowl.

The soup will also freeze well for up to 3 months. We advise waiting to add the noodles to the soup until serving.

Fresh Tomato Soup from Scratch Recipe

Begin by dicing one onion and mincing three cloves of garlic. Place them in a large pot with 2 Tbsp olive oil and sauté over medium heat until the onions are soft and transparent.

While the onion and garlic are cooking, clean and slice 1/2 lb. carrots and 1/2 bunch celery . Add them to the pot. Continue to sauté the onions, carrots, and celery together. Youll only use half of a one-pound bag of carrots and half of a bunch of celery, but the rest doesnt need to go to waste. You can clean and slice the rest and freeze them to make another batch of soup later. I do it every time. It takes just a few more minutes and is super convenient later!

Remove the skin from two split chicken breasts . Split chicken breasts come with bones and rib meat, both of which add a LOT of flavor to the broth. They will also sometimes be labeled bone-in chicken breast with rib meat.

Add the chicken breasts to the pot along with 1 tsp dried basil, 1/2 tsp dried thyme, 1 Tbsp dried or fresh parsley, 1 bay leaf, and some freshly cracked black pepper.

Add eight cups of water, cover, and bring up to a boil over high heat. As soon as it reaches a boil, reduce the heat to low and let simmer for one hour. Make sure that you dont turn the heat down so low that it stops simmering. It needs to simmer the whole time.

After an hour, it will look something like this. Pull the chicken out of the pot

Use two forks to pull the chicken from the bone and shred it into bite-sized pieces.

What Gluten Free Noodles Are Best For Chicken Soup

Some brands of gluten free pasta definitely hold up better than others. I like Jovial and Barilla pasta brands for chicken soup. As I mentioned above, you do not want to cook these in your soup…but these noodles will hold up to sitting in a bowl of soup for a little while.

How To Make Your Own Homemade Soup From Scratch

As you can see from the Supply List, My Recipe is Very Lenient. I will show you how to pick and choose what you like and what you have on hand.

Start with a clean skillet pan. Turn heat on medium.

Now first add a spoonful of fat. You can choose.. Olive oil, vegetable oil, coconut oil, butter or your saved bacon fat. Think about what you will be cooking in it and what flavor the fat will bring.

I chose the bacon fat. Into the pan it goes.

Choose your meat. Choose chicken, sausage, seafood, deer meat or different cuts of beef. I’m using a pound of ground deer. You can use the amount you want. Maybe you’re just using up leftovers.

Now with your meat on. Add salt. You can choose your fav salt product. This is my favorite.

I keep it in a small Tupperware bowl with lid.

I just pinch out to sprinkle over the meat.

Now my bunch like the ground deer to be in small pieces so I run across with a fork and smash it to crumbles. You prepare your meat how you choose. Like beef cubes or strings of chicken, you pick.

I have large pan holding in back for things as they are done. I place the meat in.

With beef or deer I like to add a tomato factor. You do not have to. These are the end of summer tomatoes that the heat got to. I just freeze them flat and add the cooked down juice to recipes.

If you have on hand, you can choose fresh tomatoes, canned whole tomatoes, crushed, diced, paste, a sauce or the juice. It’s really up to you. Add as little or a lot as you like.

What Can I Do With Cooked Vegetables From Soup Stock

Those veggies have served you well! Dont feel bad about adding them to your compost.

However, if you have a dehydrator, try making vegetable soup stock powder. I puree the veggies Ive strained out and put them in the dehydrator. Pureeing them makes them smaller and more even in size for quicker, more effective dehydrating. I dry the mash at 135°F for 6-8 hours until its a brittle leather or bark. I pulverize the finished vegetable bark and then add it when cooking soups, stews, casseroles or assembling backcountry meals.

Note: This powder is not the same as bouillon powder. It is much milder since a lot of the flavour of the veggies was released into the stock. But, if you like using every last bit of your veggies this does the trick and adds some flavour.

How To Make Homemade Chicken Noodle Soup:

Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.

Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.

Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.

Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.

Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.

Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!

How Long Will My Soup Stock Last

How to Make Vegetable Soup, From Scratch in 30 Minutes
  • Keep your stock in the refrigerator for up to 4 days.
  • Freeze your stock in commonly used amounts for up to 6 months. It will be safe to consume even longer than that, but will start to lose some flavor.
  • Safely can your soup stock in a pressure canner as recommended by the National Center for Home Food Preservation.

Absolutely! Thats actually one of my favorite aspects of this soup. It makes a big batch, so I always freeze about half of it for those days when Im really under the weather.
