I like to pulse it until its partially blended but still has some pieces left. Swap The Cream Of Mushroom Soup For A Homemade Sauce
For my homemade mushroom sauce, I start by smashing the mushrooms with a skillet. Not only is it an extremely satisfying procedure, but it creates imperfect chunks of mushrooms, just like what you find in the canned stuff.
I sauté the mushrooms in that aromatic shallot oil, along with a cube of butter for some extra rich and nutty flavor. Once they’ve begun to sizzle, after about five to 10 minutes, I stir in some minced garlic, then add flour to thicken the base, stirring until it forms a light golden-blond roux.
Whisking in a mixture of heavy cream, chicken stock, lemon juice, and soy sauce adds richness, moisture, acidity, and a burst of umami that coaxes out the mushrooms’ natural savory character. I bring the sauce to a boil, then simmer until its consistency is slightly thinner than pancake batter.
Can Green Bean Casserole Be Made In The Slow Cooker
Yes, you can make this in the slow cooker! If you are tight on oven space, sometimes it makes sense to use another appliance!
To make this green bean casserole recipe in the slow cooker, just skip the step where you blanch the green beans and instead just throw them in the slow cooker after washing and trimming first. Then make the sauce as directed and pour that over the beans.
Mix everything together and cook on LOW for 2 hours, then stir well and top with the french fried onions. Cook for another 30-60 minutes before serving.
It won’t crisp up as much as it does in the oven, but it’s still delicious and will save you space!

Fry Your Own Shallots
My fried shallots are inspired by Thai-style fried shallots, something that you should have on hand in your kitchen all the time. I make mine in batches of a couple pounds.
A mandoline makes quick work of the shallots, and yields perfectly thin and even slices. Simply add them to a pan or wok, cover with oil, turn your heat up to high, and stir. The shallots will soften and then turn a light golden brown, at which point you can strain them into a bowl. Be sure to reserve the oil, thoughwe’ll be using it again in a minute.
Blot the strained shallots with paper towels until the towels appear dry. Once cooled, the shallots will keep in an airtight container for up to a month. Add them to sandwiches and soups, use them as a garnish for cooked meats, or just eat ’em out of hand, straight out of the jar.
Onion Free Gluten Free Grean Bean Casserole
You can easily make this recipe without onions. Just make the cream of mushroom soup recipe without onions, and add a bit of gluten free tamari or soy sauce to add some more umami flavor.
In place of the crispy fried onion topping, you can leave it off entirely and add some extra finely grated Parmigiano-Reggiano cheese to the top of the buttered gluten free bread crumbs. For some added crunch, you can add crushed gluten free potato chips, crushed gluten free crackers, or even crushed gluten free pork rinds.
If you cant have onions, but you can tolerate some onion seasoning, consider topping this casserole dish with gluten free onion-flavored potato chips. Be careful, though, and read all labels to ensure that the topping is gluten free.

To Prepare Ahead Of Time
This dish can be made up to 48 hours ahead of time. Prepare as directed except leave the crispy onion topping in a separate container so they dont get soggy. I usually place them in a sealed sandwich bag right in the dish and sprinkle before baking.
Remove the dish from the refrigerator at least 30 minutes before baking. If its really chilled, you may need to add up to 10 minutes extra cook time.
If youre heading to someone elses house for dinner, do everything except the last 10 minutes of baking and bring it along with you covered in tin foil! Top with crispy onions and bake until hot and bubbly!

Do You Have To Use Cream Of Mushroom Soup
Not everyone is a big fan of canned mushroom soup, so you might be wondering if you could substitute other soups instead or just skip it entirely. While you could certainly just use a different type of condensed soup, like Campbells cream of chicken, for example, unless you are allergic to mushrooms, you really should definitely stick with the cream of mushroom.

Believe it or not, soy sauce was integral to this recipe right when it was invented in the 50s. Im personally in shock that it was a popular enough ingredient back then that they included it, but it sure adds a deep layer of flavor you cant get otherwise. It blows my mind how way ahead of her time Dorcas was with her use of soy sauce, which she chose over celery salt. Was soy sauce just that common in the 50s?
But you know, even though things can be too salty, sweet, sour, or bitter, Ive never heard anyone say something was too umami. So I included fish sauce in my version to really boost that umami off the umami chart.
If you are really well stocked , I recommend mushroom dark soy sauce for extra mushroom flavor. It goes great with anything else youd ever want to use soy sauce for too.

By swapping out the canned soup for our easy homemade mushroom soup, we enhance the flavor of this dish, reduce the sodium and still stay true enough to the original that everyone will be happy .
This green bean casserole features perfect, crunchy green beans, a creamy mushroom sauce and a salty-crunchy topping of fried onions that all come together to create a delicious side dish that really should be served year-round. You can add the mushrooms from the soup or omit them, according to your personal preferences.
While I used Frenchs Fried Onions for the topping, you can also make your own fried onions with this copycat recipe.
Of course, if you want to use a pre-made mushroom soup, you can swap that in for this recipe but if you take the extra few minutes to prepare the homemade cream of mushroom soup you will not regret it.

And once you have your made from scratch components, this Fresh Green Bean Casserole From Scratch couldn’t get much easier!
While I grew up on this classic casserole made with canned beans and canned soup and canned fried onions, we’re putting our from scratch flair on it by using fresh green beans, our homemade cream of mushroom soup, and our French’s Fried Onions from scratch! Not only does it taste fresher and cleaner, but the texture is exactly what I want in a green bean casserole with fresh green beans, crunchy green beans, soft big pieces of mushrooms, and super crispy onions- the opposite of mushy!

I dont think a year has gone by where we dont make green bean casserole without cream of mushroom soup for Thanksgiving and Christmas.
Dad doesnt even need me to write a shopping list anymore. Its like, holiday shopping list? Green beans, fresh mushrooms, French fried onions, sour cream, broth, cheese. Done.
Because green bean casserole from scratch is typically made in the winter, I opt for frozen green beans rather than fresh.
Theyre still technically fresh green beans because theyre frozen during peak season. Regardless theyre a million times better than canned green beans.
I use frozen French cut green beans when I can find them, which means the beans are cut lengthwise into thin strips.
However, they arent easy to find, so you can definitely use regular cut green beans.
When I originally posted this green bean casserole without mushroom soup recipe, I was on a mission to replace everything, included the French fried onions on top.
Nowadays I cut myself some slack and buy them. Theres too much going on with Thanksgiving dinner, so I have no regrets.

To replace the dairy in this dish specifically, use vegan butter for the topping , and omit the grated cheese entirely. You can add up to 1/2 cup nutritional yeast in its place for more flavor, but its not necessary.
