Tips For Making The Best Gluten

  • Chop carrots and celery at least ¼-inch thick. If you chop your vegetables too thin, they can become mushy.
  • If you like your noodles more al dente, cook them separately and then add the noodles to the soup once its cooked.
  • The gluten-free noodles will absorb the broth. If you want more soup, add an additional 1-2 cups of gluten-free broth.
  • Dont add the salt or the pepper until you have tasted the soup. A lot of the time broth can already be salty.
  • Its easy to change up the vegetables. You just want to make sure you cook them until they are soft.
  • You can use one chopped onion in place of the onion powder if you like. My family does not like the texture of chopped onions thats why I use onion powder.
  • If you are not feeding a large family like mine and you do not want leftovers, you can easily cut the recipe in half.
  • If you want a creamy chicken noodle soup, you can swap out the broth for a cup or two of milk.

Yeast Extract Confusion Made Worse By The Lack Of Manufacturer Transparency

Gluten Free Watchdog received a consumer complaint aboutHealth Valley Gluten Free Café Chicken Noodle Soup. The product includes theingredient flavors . Long story short, according tothe consumer who contacted us, she was told by Health Valley customer servicerepresentatives that the source of the yeast extract was brewers yeast. However, she never received a definitive answer regarding whether the brewersyeast was spent brewers yeast.

Generally speaking, we do not advise contacting manufacturers about labeled gluten-free foods containing yeast extract. The assumption being that a manufacturer would not label a food as gluten-free if it contained yeast extract grown on barley. BUT, we became concerned after hearing that the consumer was told the yeast extract was brewers yeast.

We contacted Health Valley on behalf of the consumer. Aftermultiple phone calls we were advised that upper management was not answeringquestions about the source of the yeast extract. A floor manager advised usthat the company often considers this type of information proprietary.

We reached out to a contactat Hain-Celestial who was able to tell us that according to supplierinformation, the flavor does not contain gluten. No information wasavailable on the source of the yeast extract. Our request for this informationhas been sent to R& D.

Is There A Shortcut Way To Make This Soup

Yes! I dont often make chicken soup completely from scratch like this.

Cooking it on the stovetop is very easy, but kind of messy. Using the Instant Pot with the instructions listed below is really very simple, but it still requires that I have a whole chicken in my refrigerator.

If youd like to make chicken noodle soup without first making stock from dark meat chicken and vegetables, I dont recommend that you use store-bought chicken stock. I use Pacific brand chicken stock often for cooking, but not when its such a prominent ingredient.

For a brothy soup, I prefer to use our homemade vegetable bouillon powder that we use in our gluten free ramen recipe instead. Just boil as much water as youd like soup, and add the bouillon powder to taste. You can use some store bought chicken stock, too, but the bouillon powder is going to give you the richest flavor.

Lets Talk Soup Ingredients

Garlic, Onion, Celery, Carrots: The base of any good soup is always plenty of garlic, onion, celery, and carrots. Not only do they create a great foundation of flavor, they also ensure that you have plenty of fresh veggies in the soup.

Fresh Herbs: This soup has a combination of fresh thyme, dried bay leaves, and fresh dill for the best flavor. If you dont have fresh thyme, feel free to use dried thyme instead. Also, if you have never tried adding fresh dill to your soup, it is a game changer.

Bay Leaves: Ok, bay leaves are another MUST HAVE ingredients in soup. They add so much flavor and are an easy ingredient to keep on hand in your pantry.

Turmeric Powder: Not only does turmeric have powerful anti-inflammatory powers, a little goes a long way to add a beautiful yellow color to the soup.

Chicken: Of course, you cannot have chicken noodle soup without chicken! Here are a couple of things I like to do to keep this soup easy and low maintenance when it comes to the chicken situation:

  • Use a store-bought rotisserie chicken from your local grocery store. Just remove the skin and bones and then chop up the meat before adding it to the soup. Remember to save the bones and store them in the freezer to make homemade bone broth.

  • Roast bone-in chicken just for this soup. If I really want soup, but dont have any leftover chicken, Ill just roast a few pieces before starting to make my soup. There is no need to roast a whole bird for this.

After you are finished with your chicken, place everything left in your Instant Pot. Especially the bones, they are what really makes the broth flavorful.

Cover the chicken with water. I believe I filled mine up to the 6qt line in my 8 qt Instant Pot.

Bring everything to pressure, and let the Instant Pot do the work.

Remove the rotisserie chicken and pour the broth through a sieve to remove any small bones that sunk to the bottom.

Put the broth back in your Instant Pot and add some Herbs de Provence, carrots, onions, celery, and pasta. I used a gluten-free rotini, but you can use your favorite gluten free noodle.

Can You Use A Whole Chicken Instead

Gluten Free Homemade Chicken Noodle Soup Recipe

Yes, its a great way to make this easy recipe even easier. I like to get a rotisserie chicken at the grocery store and use shredded chicken from that for my homemade chicken noodle soup since it takes less time and effort.

You can also use boneless skinless chicken thighs instead of cubed boneless skinless chicken breast if you prefer the flavor.

And if you have leftover turkey from Thanksgiving, it works perfectly in this soup too.

Tip For The Best Chicken Noodle Soup:

I find sauteeing the onion, garlic, and carrots for 5 to 8 minutes not only unlocks a plethora of flavor, but it also makes the cooking process go faster so that you dont have to simmer the soup for a long period of time to get any flavor out of it.

After the onion has had plenty of time to cook, I add the chopped chicken just long enough to brown it on a couple of sides. From there, in goes the broth, noodles, and the rest of the vegetables.

At this point, you will only need to bring the soup to a boil and allow it to simmer for 15 to 20 minutes. Then, its done! Of course, you can always cook the soup longer for maximum flavor, but I tend to keep my soup making sessions a short affair.

Soup is always, always better the next day, up to 5 days after you make it! Keep this in mind if you like to meal prep, as this is a great recipe to make in advance and keep in the refrigerator to eat during the week.

Can You Make This Soup Ahead Of Time

Gluten Free/Grain Free Chicken Noodle Soup || Instant Pot Chicken Noodle Soup (Paleo, AIP, Whole30)

Yes. You most certainly can make it at an earlier time than you need it. Leftovers can be stored in the refrigerator for 3-4 days in an airtight container. Simply reheat it on the stove or in the microwave but you will likely need to add 1 cup or more of gluten free chicken stock as both the noodles and beans may expand in the liquid over time, thus thickening the soup.

How Do You Make Gluten Free Cream Of Chicken Soup

First, saute your chicken in the oil or butter.

Even if you uare using already cooked chicken, this will help to flavor your cream of chicken soup.

Add your gluten free flour to the oil and chicken to make a gluten free roux.

Stir the gluten free flour into the fat and cook until it starts to turn golden and smells slightly nutty.

Youre still making a blonde roux, and not cooking it to a dark brown color.

You want your gluten free roux to have lots of thickening power , while taking advantage of the flavor that you get from toasting the flour.

Cooking the flour keeps your cream of chicken soup from tasting like a floury paste.

Then add the broth and milk and bring it to a simmer.

Let it simmer until thickened,

It will thicken up even more as it cools.

Now your gluten free condensed cream of chicken soup is ready to use in all your favorite recipes!

How To Make This Delicious Soup

This one-pot-meal is super simple here is a quick overview of the ingredients youll need and why:

    • Onion, Celery, Carrots, & Garlic sautéed in Olive Oil a variation of the classic aromatic mirepoix that is the essential base in adding depth of flavor to mostly any soup
    • Gluten Free Chicken Stock & Dried Herbs I definitely prefer using stock as opposed to broth in most soups because of the amazing rich flavor stock adds. Stock not only enhances the flavor but it also gives your soup a fuller more luscious mouth feel. Mmm.
    • Chicken Breast chop and toss in seasonings and a herby spice blend for more flavor before adding it to the stock to cook through poaching it from raw in the stock will make this soup even more tasty!
    • Canned Great Northern Beans & Fresh Parsley Beans are my surprise ingredient! These nutritious white legumes add texture with a tender bite to this soup beans are a popular addition to soups and they easily compliment the chicken here. Dont skip these mild beans or you will certainly miss out on one reason why this soup is so good! Oh, and parsley adds lovely fresh flavor and my favorite color!
    • Gluten Free Noodles or Pasta of choice I decided to use Barilla Gluten Free Fettuccine broken into fourths for this recipe to mimic the shape of regular Amish egg noodles many people enjoy. Add these to the pot toward the end. You could cook them separately if you expect to have leftovers .
