How To Make Green Bean Casserole Without Mushroom Soup
- Preheat the oven to 350 °F, 180 °C.
- Bring a big pot of water to a boil and add 2-3 teaspoons of salt.
- Add the green beans and boil them until they are fork-tenderabout 7 minutes.
- Drain the beans and place them in a bowl of ice-cold water.
- Then, transfer the beans onto a kitchen towel and pat dry.
- Place the beans in a 9 x 13-inch baking pan and season with salt.
Make the Sauce:
- In a medium saucepan, cook the onion with olive oil and a pinch of salt for 8 minutes or until softened.
- Add the garlic and warm through, then add the flour.
- Cook it for 2-3 minutes or until toasted.
- Next, add the milk, salt, pepper, thyme, and nutmeg, and cook while constantly whisking until thickened.
- Remove from the heat and pour the sauce over the green beans.
- Top with the parmesan shredded cheese and stir together.
- Pour a cup of chicken broth on top and stir together to thin out the sauce a little bit.
- Taste and add more seasoning if desired.
- Bake on the center rack of a preheated oven for about 30 minutes or until bubbly.
- Remove the tray from the oven, top with the French fried onions and serve warm.
Dairy Free Gluten Free Green Bean Casserole
To replace the dairy in this dish specifically, use vegan butter for the topping , and omit the grated cheese entirely. You can add up to 1/2 cup nutritional yeast in its place for more flavor, but its not necessary.

- Salad croutons can work too, just break them up if they are big cubes.
- I admit, I have used crushed potato chips and cornflakes for casserole toppings with great results!
- Crush up butter crackers and put those on top before baking.

To Prepare Ahead Of Time
This dish can be made up to 48 hours ahead of time. Prepare as directed except leave the crispy onion topping in a separate container so they dont get soggy. I usually place them in a sealed sandwich bag right in the dish and sprinkle before baking.
Remove the dish from the refrigerator at least 30 minutes before baking. If its really chilled, you may need to add up to 10 minutes extra cook time.
If youre heading to someone elses house for dinner, do everything except the last 10 minutes of baking and bring it along with you covered in tin foil! Top with crispy onions and bake until hot and bubbly!

I really like Green Bean Casserole with fresh green beans because I think it the dish at least a little prettier, but you can use frozen cut or French-cut green beans if youd like. Both fresh and frozen green beans are preferable to canned green beans. Canned green beans tend to be much too soft in both texture and flavor, and over salted. If using fresh green beans, just blanch them in boiling water for about 3-5 minutes, or just until they turn bright green and lose their raw edge , before adding them to the casserole.
