Start with the basics. Ensure you’ve added enough salt and black pepper. Too little salt means your soup’s flavors remain hidden.
Now, when you know your soup is salty enough, move on to other seasonings. Fresh herbs, such as rosemary, parsley and thyme add a fresh, vegetal note to a bland chicken soup. Add a sprig or two, and let them steep as the soup simmers for 10 to 30 minutes, or chop the herbs and toss them in for near-immediate color and flavor.

Old fashioned chicken soup is quite easy to make!
You can find detailed instructions in the recipe at the bottom of the page, but first, here is a little breakdown of how it’s made:
First a homeamde stock is made my boiling the chicken in a large stockpot along with some salt. After boiling for a while, the whole chicken is removed and allowed to cool for a little bit before removing the meat and leg bones.
Next, the meat, leg bones, veggies, garlic and herbs are added to the pot with the homemade stock and cooked for a few hours. Season with more salt as necessary, remove the bones and bay leaves and serve.

How Do You Thicken Up Soup
Personally for chicken soup, I prefer a clear broth but if you’d like it thicker, you’re welcome to adjust it to your liking. There are a few waays to thicken soup:
- add a potato and mash it
- remove some of the soup solids, puree them in a blander and add them back to the soup

- mix some cornstarch with some liquid from the soup, make sure there are no lumps and whisk it in

Weve made chicken soup for years and have tried it various ways. Weve even started from a whole chicken before.
Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.
Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .
In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.
Dont be afraid to season your soup. When it comes to soups, season early and check the seasoning often. Before we add the chicken thighs to the soup, we always check the seasoning level of the broth. If the flavor doesnt pop, add a bit more salt.
Another option is to use fish sauce. It may seem odd, but whenever were tasting something and its just missing that something something, a small dash of fish sauce fixes it. Fish sauce is a major ingredient in our Pho soup recipe.

Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.
Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.
Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.
Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.
Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.
Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!

This easy favorite comes together in just minutes for the perfect fresh and healthy weeknight meal. This classic soup is one of Grandmas home remedies for good reason!
How To Make Old Fashioned Chicken Soup From Scratch
Follow these simple directions and in a few hours, you too could be enjoying this wonderful soup. As I am the type of cook that tends to add a pinch of this and a glop of that and taste, my apologies for the lack of specific amounts All efforts have been made to approximate how much of each ingredient is added.
Take your whole, rinsed, chicken along with your organ meats if you choose, and place into a large stockpot. I use a 24-quart stainless steel stockpot similar to the ones below. Again, use a larger one than you think you will need.
Cover the whole chicken with good, filtered water and bring to the boil. Cover , reduce the heat and simmer for 3 plus hours, depending on the size of the bird. We have used an 8# bird for this soup and simmered ours for 3 1/2 hours. You will know its cooked well enough when the skin begins to peel back from the leg bones and or you can twist the leg bone easily.
PRO TIP: Halfway through simmering time, roll the bird over in the water to evenly cook.
While the chicken is simmering, prepare your vegetables and gather your ingredients. The star of this homemade chicken soup are carrots , celery , and onions . Peel, chop and slice to your liking and set aside. Additional and optional ingredients are listed below.
Remove the chicken, and organ meat if used, once all is completely cooked from the pot and cool. I find it helpful to peel back the skin while its still hot and then allow the rest of the chicken to cool.

Add the rest of your vegetables to the stock, along with 2 tsp. of salt and a 1/4 tsp. of freshly ground pepper. Simmer the soup for 1 1/4 hours more.
While the soup is simmering, allow the whole chicken to cool slightly before getting to work. Remove the skin and bones, and cut the chicken into bite-sized pieces or shred the meat using two forks . If you’re not planning on putting all of the chicken back into the soup, this is a great opportunity to save a bit of that perfectly cooked chicken to make chicken salad.
