You can get a few extra things done while the slow cooker does most the work.

Set yourself a little bit of time to get started and then a little after. Let the slow cooker do the rest!

This broccoli cheese soup recipe warms up well in a slow cooker.

  • Making the roux: Whisk together the butter and flour.
  • Add ingredients and stir: Add all of the ingredients to your slow cooker, leaving out the cheese, milk and broth. Gently stir in your chicken broth.
  • Slow cooker time: Cook on high for 3 to 4 hours or on low for 5 to 6 hours.
  • Stir in dairy ingredients: About 20 to 30 minutes before your broccoli soup is done, slowly pout milk and sprinkle cheese in to the slow cooker. Cook another 20 to 30 minutes, stirring it occasionally. Ready to serve once the cheese is all melted through!

How To Freeze Broccoli Cheese Soup

  • Let soup cool completely and transfer it to large freezer bags.
  • Keep in the freezer for up to 3 months.
  • To reheat, defrost in the fridge over night, then add the soup to a saucepan and reheat over medium heat. If soup is too thick, add water, broth, or cream, couple tablespoons at a time to reach desired consistency.

Oh my goodness, I hit the gold mine with Panera Bread Broccoli Cheese Soup! This soup is absolutely awesome. This lovely soup is filled with broccoli, carrots, onions, garlic and celery. Then its seasoned with red pepper flakes and loads of sharp cheddar cheese. So mouthwatering and comforting.

Im serious, this Panera Bread copycat soup recipe is spectacular! Its also super easy to make. I think I had the whole soup ready in about 30 minutes! Its certainly the perfect soup for any family dinner or lunch. I loved the smooth, creamy, savory taste of this soup. I could probably make this multiple times per week and savor and drool over every bite.

I made this soup for a lunch with a friend last month and both of us were amazed at how delicious it was. I chose to make the soup gluten free since both of us are trying to abstain from flour as much as possible. I keep a large bag of Bobs Red Mill gluten free flour in my freezer at all times. Then when I want to switch from regular flour to gluten free I always have fresh GF flour on hand. . Its so helpful.

How To Make Broccoli Cheese Soup:

Add the butter to a soup pot and once it melts, drop in the onions, celery and carrots then season with salt and pepper.

Cook over medium heat 2-4 minutes or until the onions are soft then sprinkle the flour over the top. Stir to blend and cook one minute. Adding flour to the mixture is how were going to thicken the soup.

Whisk in the chicken stock and once its blended, add the half and half and the broccoli. Cover and cook over low heat 15-18 minutes or until the vegetables are tender.

Turn the heat to low then blend in the cheese and season with salt and pepper. I start with 1/2 teaspoon of salt and 1/4 teaspoon of pepper .

The soup is ready to eat at this point but if you like a smoother blend like you see in the photos, use an immersion blender and pulse in several areas of the pot until its the consistency you like.

If you dont have an immersion blender transfer about one cup of the soup to a standard blender, puree then return to the pot.

    • 14 cup butter
    • 12 medium onion
    • 8 ounces grated sharp cheddar cheese
    • Salt and pepper
  • Melt the first tablespoon of butter in a saucepan on medium heat.
  • Add onion to the pan and sauté until the onion becomes translucent.
  • In another saucepan, add remaining butter and melt on medium heat. Add flour and whisk for five minutes. It should turn golden brown by this point.
  • Gradually pour chicken stock into the flour and butter mixture and simmer for 20 minutes with lid on the pan.
  • Add carrots, broccoli, and onions, milk, and half-and-half to the pan. Stir and reduce heat to low.
  • Put the lid back on and let heat for 20 minutes .

    This recipe like many calls for diced onions. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.

    If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.

    I usually just chop the entire vegetable and freeze what I dont need. Its so nice to be able to just take the diced onion out of the freezer for recipes.

    Is This Paneras Broccoli Cheddar Soup Gluten

    Part of the thickening agent in this soup is the flour in the roux. Theres only 1/4 cup and you can definitely leave it out but your soup will not be as thick. You can thicken it at the very end if needed by creating a cornstarch slurry.

    Add a couple tablespoons of cornstarch to a small bowl and add water until it forms a paste. Whisk in this mixture at the end of cooking to thicken up the soup.

    Recipe Notes And Tips:

    *Whole milk or 2% milk will work but soup wont be as creamy. I used fat-free half-and-half to reduce the fat amount.

    How To Make A Broccoli Cheddar Soup Recipe:

  • Melt 2 Tablespoons of butter in a large pan over medium heat. Add the onion and celery, cook until tender and transparent for about 5 minutes.
  • Add garlic and cook for one additional minute. When finished cooking, remove from the pan and set aside.
  • Melt the remaining ½ cup of butter in the pan and whisk in ½ cup of flour until thoroughly combined, for about one minute.
  • Slowly add the milk, stirring constantly. The mixture should be smooth and thick.
  • Add the chicken broth, broccoli, carrots, cooked onions, garlic, and celery.
  • Bring the mixture to a boil, then reduce heat and cook for about 30 minutes or until the broccoli and carrots are tender, uncovered.
  • Remove from the heat and add the cheese, salt, and pepper and stir until melted and evenly distributed.
  • Place half of the soup in a blender and give a few quick pulses, then return to the pan.
  • Serve with a side of sourdough bread or in a sourdough bread bowl for a classic Panera-style meal.

    I recently moved to Utah, and we are in the middle of winter. The snow has been a little bit of a shock to our systems for my family, seeing that weve spent the last few years in a temperate climate. We love it, but goodness, it is cold! I do not love driving in it, though.
