One Cannot Live Without Wateror Chicken Stock
Chicken Stock is a standard pantry item, however can be difficult to find a commercial brand that is prepared without onions and/or garlic.
Approved low FODMAP products are beginning to hit the shelves, but they are not always available from our local stores and we dont always plan well ahead to mail-order. Every FODMAPer should have a homemade Chicken Stock recipe and ours is even safe for during your Elimination phase.
While it takes a while to simmer on the stove, stock is easy to make, and since it freezes well we encourage you to make a batch when you have the time and freeze portions for future use.

How To Make Low Fodmap Chicken Broth
An easy, flavorsome, and frugal low fodmap chicken broth with only 3 ingredients? It sounds like a farce but it is not! You can definitely make a low fodmap chicken broth without onions, garlic, or any of those pesky high fodmap ingredients. We got tired of reading through the list of ingredients at the back of boxes and asking, is chicken broth low fodmap? So, we went ahead and made our own.
What we love about this recipe, is that you only need the bones or carcass of a chicken, ginger, and coriander . A lot of low fodmap soup recipes require substitutes for onion and garlic but we believe this low fodmap chicken stock recipe is simple and flavorful enough to serve as the base of many recipes.

Low Fodmap Chicken Vegetable Soup Modifications And Variations
I just love to modify recipes. In fact, Ive been known to modify recipes before Ive ever even tried the original version. Well, sometimes you are missing an ingredient, or you know you or your family dont like mushrooms or maybe you have something you need to use up. Or, maybe you just think your way is better .
Still, in my opinion, the best recipes should be adaptable to fit a wide variety of palates. Well, this one has you covered. Dont like carrots, dont use them. Not following a low FODMAP diet, well then, by all means, add in onions and garlic . You can switch, add, subtract, any of the vegies and herbs in this soup. Just adjust the volume of spices/herbs and broth based on your changes. Have fun! Why not? Cooking should be fun
Low FODMAP Chicken Vegetable Soup Recipe Notes, Tips and Tricks

I prefer my soup to have a true broth, in other words, I really dont like a thickener or cream based soups. That said, you can totally add a thickener for the broth if you wish. After you have cooked your vegies and are getting ready to add the rest of the ingredients, just add in a tablespoon of flour to your vegies. Stir it in well and let it cook off for about one minute. Then add just a little bit of your stock and stir well. Basically you made a bit of a roux which will thicken as your soup cooks. Continue adding the rest of the broth.

Breaking Down The Leg
Start by holding on to the leg firmly, pulling it away from the chicken. You will notice a separation where the chicken skin thins. Thats where you want to make your first cut.
Your knife should slide down easily. You will hit a joint and thats when you place some pressure. Move your knife in a back and forth motion while pulling the leg from the body.
It should come right off. If youve gone too far or the leg is not coming off easily then you have probably passed the joint and hit the backbone. No worries, with a bit of pressure and a sharp knife, youll still get a leg piece.

Low Fodmap Mirepoix: Leek Carrots And Celery
In my previous recipe post, I talk about soffritto, the French word for it being mirepoix , which I’ll use for this recipe as there is no English word for it. Traditionally, a mirepoix contains a mixture of chopped onions, carrots, and celery to make the flavor base for a wide variety of recipes. My low FODMAP version of mirepoix contains leeks instead of onion and a low FODMAP quantity of celery.
After adding the garlic oil to the pot, I add the low FODMAP mirepoix and sauté it for 3 minutes, stirring frequently. Then, I add the chopped chicken and sauté for 2 minutes, stirring frequently.

Chicken broth is a cooking staple in most kitchens, mine included. Its an easy way to add flavor and depth to many dishes. Although you may be able to find a FODMAP-friendly pre-made option in your local grocery store , I find it really easy and affordable to make my own.
The ingredients youll need to make this low FODMAP chicken broth include:
- Chicken bones
- Celery
- Fresh thyme
- Salt

Directions For Fody’s Crockpot Lemon Chicken Orzo Soup
Begin by placing your chicken breasts in the bottom of your crockpot and season them with salt and pepper.
Then saute your carrots and celery in 1 tablespoon of Fody Foods Garlic Infused Olive Oil until tender. Add your cooked vegetables to the crockpot.
Next heat your water and Fody Foods Chicken Soup Base together on the stove and stir until the soup base dissolves completely. Then add it to the crockpot. Stir in your Fody Foods Everyday Seasoning and bay leaf, cover the pot and cook on low for 6-7 hours or high for 3-4 hours.
While the soup cooks, cook the orzo pasta according to the packaged directions. Set it aside once done.
Once the soup is done, remove your chicken breasts and shred them using 2 forks. Add the chicken back to the crockpot along with your orzo. Stir in your lemon juice and spinach and keep stirring until your spinach begins to wilt.
Then discard the bay leaf and serve immediately with fresh dill and lemon wedges.

Low Fodmap Chicken And Rice Soup With Turmeric
I am a big fan of soup, particularly on a cold winter-y day. Today I share with you a delicious chicken soup with fresh thyme, brown rice, sliced carrots, a little celery, and a hearty dose of the anti-inflammation spice, turmeric.
Turmeric is BRIGHT yellow It is used as a natural food dye and one of the main ingredients in many curry recipes.
I think turmerics yellow hue makes the soup even more inviting. I folded in pre-cooked brown rice which made the recipe a bit easier to whip up.
Turmeric may also aid digestion by encouraging bile release and gallbladder contraction.
Low Fodmap Chicken Stock
This Chicken Stock is low FODMAP and will help you create a myriad of other suitable dishes to enjoy even during the Elimination phase.
Low FODMAP Serving Size Info: Makes about 4 quarts 8, 2-cup servings
- 6-pounds of chicken backs, or a 6-pound chicken, cut into pieces
- 1cupchopped leeks,green parts only
- 2medium carrots,scrubbed, peel intact, cut into 1-inch pieces
- 2medium parsnips,, peeled and cut into 1-inch pieces
- 1large bunch fresh flat leaf parsley

Low Fodmap Creamy Tomato Soup
This Low-FODMAP Creamy Tomato Soup is onion-free, garlic-free, gluten-free, and can be made vegan. Delicious creaminess for those with sensitive stomachs!
This has been a particularly difficult winter to get through, what with the pandemic, the insurrection, and the never-ending snow here in in Iowa. So I have been eating a lot of comfort foods. One of my favorite foods that I turn to when I need comforting is soup. Especially tomato soup.
I grew up on Campbells condensed tomato soup and I still love it. Especially with a grilled cheese sandwich. I mean, is there anything better on a cold winter day? So when I was developing this soup, I kept Campbells soup in mind. I also wanted it to be easy. Almost as easy as emptying a can into a pan.
The Main Ingredient: Tomato Puree
The main ingredient of this soup is canned tomato puree . Its just pureed, strained tomatoes. So simple. With just a few extra ingredients, it makes a delicious, creamy soup. The brand I use most often is the organic private label Full Circle brand from my local HyVee. There are also some that you can find on Amazon :

- 1tablespooncornstarch
About The Ingredients & Fodmap Content
Garlic-Infused Olive Oil – Garlic is extremely high FODMAP, however FODMAPs are water-soluble and not oil-soluble. This means we can cook garlic in oil and extract the oil flavor without extracting the FODMAPs! However if you’re using a store-bought garlic oil, be sure that it is actually FODMAP-friendly. The manufacturing process for oils is not always disclosed, meaning potentially high FODMAP ingredients could still make its way into the final product. My favorite Low FODMAP garlic oil is by Garlic Gold, .
Leek & Green Onion – Be sure to use the green portion only, which is Low FODMAP . Pro tip: Stick the white portions with tiny roots in a jar of water to grow another batch of greens.
Carrots & Celery – My vegetables of choice for this soup. Carrots have no detectable FODMAPs, and a little bit less than 1/3 of a stalk of celery is Low FODMAP. Feel free to sub this out for red bell peppers, which is Low FODMAP in 2.65 ounce servings, or zucchini .
Yukon Gold Potatoes – I love using these potatoes for how soft and buttery they are, but feel free to sub them out for your potato of choice. There are no detectable FODMAPs in potatoes.
Boneless, Skinless Chicken Thighs – I prefer to use dark meat, but feel free to sub this out for white meat.
Ginger & Turmeric – Healing ingredients that are entirely optional if you are not a fan of either.
Bay Leaves, Dried Basil, Parsley, Oregano, Thyme, Rosemary – For all the flavor!

Low Fodmap Chicken Bone Broth Salt & Pepper
I hit “Cancel” on the Instant Pot, add 1 cup of the low FODMAP chicken bone broth to the pot, and scrape the bottom of the pot clean with a plastic spoon, making extra sure to get any stuck rice off of the bottom of the pot. Then, I add the remaining 2 cups of broth, 2 cups of water, 1 ½ teaspoons salt and ¼ teaspoon pepper and stir.
I place to lid on the Instant Pot, set the pressure release valve to “Sealing” , set the timer for 4 minutes, and press the “Keep Warm” button once to turn it off .
Once the cooking cycle completes, I allow the pressure to release naturally for 8 minutes, and then manually release the remaining pressure.
I open the lid. Using a heat-resistant spatula, I scrape down the sides of the pot above the soup as seasoning tends to stick to the sides when the liquid boils up. We don’t want to leave behind any flavor, so I scrape the seasonings down into the soup. Then, I stir the soup, ladle it into bowls, and serve.
