Chicken Noodle Soup Contains A Lot Of Sodium

how to make chicken noodle soup that is low in sodium no salt at

For just one cup of renowned name brand soup, the salt content ranges from 890 to 940 mg. The wide variety is due to the fact that, despite the name, there are two or three distinct types of chicken noodle soup. That much salt would easily put me over my daily sodium target after other meals, plus Id still be hungry after just a cup of soup.

Chicken noodle soup with low sodium

However, I must point out that the well-known brand offers a reduced sodium soup that is 25% lower, but it is still much too high for me. However, they do offer a reduced sodium chicken noodle version with 120mg per 10.75 can or 1 1/3 cup. This isnt terrible, but I havent tried it yet so I cant comment on the substance or flavor.

My Chicken Noodle Soup with Low Sodium has just 26 milligrams of sodium per half cup, or 104 milligrams for a 2 cup meal! This recipe is low enough in sodium that you may serve it with a complementary side dish and still stay within most sodium meal budgets.

Pacific Organic Chicken Noodle Soup Reduced Sodium

Nutrition: 1 cup, 90 calories, 1.5 g fat, 0 g saturated fat, 460 mg sodium, 12 g carbs, 1 g fiber, 1 sugar, 5 g protein

Ingredients We Don’t Love: None

This soup is low in calories and sodium, but overflowing with flavor. Since the fiber content is a bit on the lower side, we suggest pairing your soothing bowl with a small spinach salad topped with beans and veggies. And if you have time, why not drizzle it with a homemade dressing? It’ll help you elevate your green topper to the next level.

The Chicken On The Other Hand

While boneless, skinless chicken breasts may be used in this recipe, I prefer bone-in, skin-on chicken breasts. We want to get as much flavor out of unsalted components as possible, and the bones and skin will assist with that. Fortunately, removing the bones and skin from the chicken is a breeze when its time to shred it. Its pointless to remove them since the chicken flesh is practically coming apart.

Sodium In Chicken Noodle Soup

Campbell

The famous name brand soup is 890 940mg of sodium for just one cup of soup. The differing range is because even though its named chicken noodle they have 2 or 3 different variations or styles of soup. That much would easily put me over my whole days worth of sodium after other meals for my daily sodium goal and I would still be starving with only a cup of soup.

I do have to mention though that the famous brand has a reduced sodium soup that is 25% less but that is still way too high for me. But amazingly in one variety they do have a low sodium chicken noodle that is 120mg per 10.75 can or 1 1/3 cups. This isnt too bad considering, but I have not tasted it to comment on its content or flavor.

My Low Sodium Chicken Noodle Soup recipe is just 26mg of sodium per one-half cup or 104mg for a realistic 2 cup serving! This recipe is low enough that you can still add a complimentary side item and be below most sodium meal budgets.

After chicken stock, cream is the next ingredient listed on this soup’s ingredient panel. That said, it’s not exactly a surprise that it contains 40 percent of the day’s saturated fat intake in a small, one-cup serving. Paired with the fact that Campbell’s also manages to pack a staggering 790 milligrams of sodium into a single bowl , it’s easy to see why we consider this to be a Not That!

Whats The Difference Between Sodium And Salt

Sodium is a mineral found in several foods. Our bodies also need a certain amount to allow our muscles and nerves to function normally.

Table salt is made of sodium chloride, which is why you often hear salt and sodium used interchangably.

We all need a certain amount of sodium, however, Americans typically eat way more than the recommended upper limit of 2,300 mg/day.

As a comparison, here are a few examples of what a few days of a meal plan look like in regards to sodium intake. For reference, one teaspoon equals 2,300 mg of sodium:

Example 1

  • 1 fast food breakfast sandwich = 1,360 mg
  • Clam Chowder soup + crackers = 2248 mg
  • 2 slices of deep dish supreme pizza = 1,570 mg

TOTAL: 5,178 mg

  • 1/2 cup milk + 1 cup cereal = 380 mg
  • 4 oz. orange juice = 0 mg
  • 6 oz. yogurt = 70 mg
  • 1 banana = 2 mg

We love that the majority of this can is filled with veggies and fibrous beans, but the sodium content is far too high to get our full stamp of approval. Plus, some may find the carrageenan, an additive derived from seaweed, to be irritating. It’s been linked to ulcers, inflammation, and other gastrointestinal problems in sensitive individuals.

Notes About The Ingredients

My favorite chicken soup of all time and one that I used to highly recommend was Manischewitz Low Sodium Chicken Noodle Soup.

Unfortunately, I cant find it anywhere any more.

So now Ive switched to Pacific but, truth be told, if youve got the time nothing beats long simmered chicken bone broth with added in carrots, celery and shallots.

I use the juice of a whole lemon, because I love the lemon flavor, but you certainly can use 1/2 lemon, to cut the tang a bit.

We love making a big pot of chicken soup and enjoying it throughout the week. Keep in mind, if the soup is stored too long, the noodles will turn mushy. If storing longer than 1-2 days, its best to store the soup and the noodles separately and recombine right before serving.

  • Refrigerated: Cool the soup completely and store covered in the refrigerator. Once noodles are in, the soup should be enjoyed within 2 days. The soup will keep up to a week if you store the noodles separately and combine when reheated.
  • To Freeze: If you plan to freeze the soup, wait to add the noodles when you reheat the soup. Chicken soup can be frozen up to 3 months.
  • Reheating: Recombine noodles and soup in a pot or microwave-safe bowl and heat to the desired temperature on the stovetop or in the microwave. If using uncooked noodles, reheat on the stove until the mixture boils and noodles are tender.

Soups On!

We’ll be honest — homemade is the only way to go, but sometimes you need a convenient pick. For consistency, we tested low- or reduced-sodium varieties of plain old chicken noodle soup. Each was scored from 1 through 5 based on flavor, ingredients and nutrition info. We paid especially close attention to the sodium amounts. The daily recommendation for sodium is 2,300 milligrams . That means a soup with 470 milligrams of sodium contains about 20% of the daily recommendation .

Prices ranged from $1.25 to $1.50 per serving. All cans indicated that they served about 2 but ranged in size from 14.5 to 18.5 ounces, so the bigger cans give you a bit more for your money.
