If you want to make this vegetarian French Onion Soup ahead of time, I recommend cooking the soup up until the point that you toast the bread.

Quick French Onion Mushroom Soup

Yield:

  • 6-7 cups sweet onions, French slice, thin
  • 4 Tbl. Garlic, minced
  • 6-7 cups mushrooms, heads only sliced, reserve stems to simmer in about a cup of water, 3 bay leaves for broth
  • 2 Tbl. Arrowroot, can use flour or corn starch as thickening agent
  • ½ cup marsala cooking wine
  • 32 oz. beef bone broth, cooking broth
  • Sea Salt and Pepper to taste
  • Fresh celery leaves for garnish, can use fresh thyme sprigs
  • SERVING:
  • 8 oz. pepperjack cheese, small slices to put atop the baguette slices
  • Red Chili Flakes
  • Freshly grated parmesan regianno cheese

Sorry, I know. Another mushroom recipe. Mushrooms are my favorite kind of vegetables and this is my sad attempt at eating clean for the new year of 2015.

Yes, eating clean as I slurp this amazingly cozy soup in 82 degree weather here in Southern California. And then dunking in some crusty garlic bread. You cant forget that.

But then again, I did swap out the heavy cream for half and half. At least thats something, right? Plus, theres carrots and celery too. So yeah, definitely clean eating happening here as I drown myself in this epic creaminess.

Mushroom Soup Other Ingredients

One really nice thing about this Mushroom Soup recipe is how few ingredients are actually called for. Why gild the lily with extra unnecessary flavourings when we already have a soup full of beautiful mushroom flavour!

  • Vegetable stock Store-bought stock works fine here, but I really recommend trying this with Homemade Vegetable Stock one of these days! Vegetable stock is much easier and less messy to make than meat-based stocks like beef stock and chicken stock, calling for just basic vegetables and flavourings

  • Cream, or creme fraiche This adds a luxuriously velvety mouthfeel to the soup so I really recommend not skipping it. If you dont have either, stir in a knob of butter at the end.

    Cream or creme fraiche? Cream is the obvious option, but Ive also suggested creme fraiche for something a bit different.

    What exactly is creme fraiche, anyway? Creme fraiche is a lightly soured cream, and unsurprisingly tastes like a cross between sour cream and heavy/thickened cream. It has the same velvety richness of cream with a slight tanginess . Its also thicker like sour cream and can be dolloped rather than poured. It lends a lovely faintly sharpened note to the soup.

    Which is better? Id go cream for every day purposes, and reserve creme fraiche for company . But its no lesser a soup with just plain cream, I assure you!

  • Onion and garlic Essential flavour base and

  • Butter For sautéing.

All About Caramelizing Onions

The most important part of making this soup is to caramelize the onions well. Caramelization is the process of slowly cooking the onions so that they become soft and golden brown. The onions release their natural sugars, concentrating their flavor.

Theres simply no way to replicate the flavor of caramelized onions other than cooking them slowly from scratch.

I use yellow onions in this recipe, but you could also use red onions if you prefer their flavor. I would pass on sweet onions, which lack the intense flavor you need to flavor the soup.

Aim for slicing the onions about 1/8 inch thick. The shape, whether whole rounds or halfmoons, does not matter as long as they are evenly and thinly sliced. Slicing them too thin can result in a barely-there consistency and you risk burning them. If too thick, youll have to cook them for a longer time and they wont be uniformly caramelized.

Itll take 45 minutes to 1 hour for the onions to caramelize. Cook them over medium heat the entire time and stir them every 5 minutes or so. After the first 10 to 15 minutes, youll notice the volume of the onions reduce in half, theyll softened, and become translucent.

At the half hour mark, the volume of the onions will be even smaller and theyll begin to turn a deep golden yellow with brown bits forming on the bottom of the pot. When the onions are caramelized, they are a deeper golden amber color with even more brown bits on the bottom of the pot.

This Japanese onion and mushrooms soup is a delicious vegetarian & vegan meal starter that will warm your soul. Best of all, it is low in calories and wholesome.

An onion and mushroom soup is often served in Japanese steakhouses as a meal starter. It is light with a clear broth, yet has complex flavors. It is also low in calories and cholesterol.

The recipe I enjoy making uses either vegetable broth or chicken broth as the base. You can make it with a bone broth for added vitamins, minerals, and collagen.

While not strictly traditional, I think adding a little miso during the last 3 minutes of simmering gives this soup more flavor and some beneficial probiotics.

Any mushroom will work in this recipe. Shitake and Maitake are stronger in flavor. Crimini mushrooms work just fine with a milder flavor, making the onions more of the star of the dish.

This recipe is for 4 people. It takes approximately 40 minutes to prepare.

This easy French onion soup gets its rich, deep flavor from caramelized onions and lots of delicious mushrooms. If youve never had mushrooms in a French onion soup before then youre in for a treat! Theyre a wonderfully hearty addition.

Classic French onion soup is made with beef broth and has croutons and cheese melted on top. I prefer chicken broth, and just tossing the cheese on top at the end.

Laziness during the final steps is made up for, I feel, by taking the time to let the onions caramelize properly. It may take a while, but the flavorful result is well worth it.

This mushroom soup recipe is a fun twist on an old classic. Try it and see!

Recommended mushrooms: Cremini, white buttons, or portobello. The taste of more delicate wild mushrooms may get lost here, so best save them for another recipe.

Ingredients:

  • Shredded cheese of your choice
  • Salt and pepper to taste

Well begin by caramelizing the onions. Melt a tablespoon of butter in a large soup pot over medium-high heat. Add onions and cook until theyre soft and brown.

Reduce the heat to low. Let the onions cook until theyre brown and caramelized, about 40 50 more minutes while stirring occasionally. When theyre done, transfer them to a bowl.

Bring the heat back up to medium-high and melt the other tablespoon of butter in the same soup pot. Add the mushrooms and garlic and cook about 10 minutes.

    Ingredients For The Japanese Onion Soup With Mushrooms

    I like to use white soft tender onions for this Japanese onion soup.

    So, instead of using one large onion I tend to use 3 smaller tender young onions because the flavor tends to be more delicate.

    Then, of course, spring onions are another major player in this Japanese onion soup.

    Again, spring onions have soft bulbs as well.

    For the mushrooms, I always use shiitake mushrooms because of the flavor they give to the soup.

    Button mushrooms don’t have the same effect.

    You can use button mushrooms in this clear soup, but it won’t be completely the same experience.

    Besides I use dehydrated shiitake mushrooms because they can be stored for a longer period of time and because I get it form a Japanese traveler from Osaka who sells, every year again, a load full during December.

    Those dried shiitake mushrooms are gold worth and enhance a soup or meal immensely!

    If you plan on using dried shiitake mushrooms in this soup instead of fresh ones, then you can do the following:

  • Rinse your mushroom and place into a bowl with 300 milliliter Water .
  • Let the mushrooms soak for at least 30 minutes.
  • Take out the mushrooms and just pass them through clean water. Cut the mushrooms small.
  • Reserve the mushroom water because you can use that + 300 ml instead of the 600 ml of water in the recipe. The mushroom water adds a deep flavor to the soup which you wouldn’t want to miss!
  • Besides that, you will also need a clear broth.

    How To Reuse This Mushroom Onion Soup:

    The next day I decided to work with the smokey flavor in the mushroom onion soup and toss it over frozen chicken and cooked it together in the crockpot. Just add about ½ cup of ketchup, 1-2 teaspoons of brown sugar, ¼ cup of Worcestershire sauce and Ta-Da, a tasty shredded chicken recipe born. Shred the chicken and serve it together over rice or with rosemary potatoes and salad.

    So now you have got to try that with leftovers so do double the batch of soup if you want to make it.

    HOW TO MAKE SLOW COOKER SMOTHERED PORK CHOPS

    Spray slow cooker with non-stick cooking spray. Place pork chops in cooker season with salt and pepper if you like. In a large bowl, mix condensed soups, onion soup mix, mushrooms and water. Mix well. Pour mixture over pork chops. Cook on high for 4 to 5 hours or on low for 7 to 8 hours.

    *Be sure to watch out for bones when using bone-in pork chops. Make sure the pork chops reach a safe minimum internal temperature of 145 degree F. with a 3 minute resting time. Each slow cooker cooks at different rates, adjust cooking times according to your cooker.

    Serve with mashed potatoes, rice or noodles, your favorite veggies and a salad.
