Crockpot Chicken Noodle Soup
Last week, I kicked off my month of soups, with this Homemade Lasagna Soup Recipe. Today they are calling for snow through these parts and nothing makes me crave a warm cup of soup more than cold weather and snowflakes. That means it is a perfect time to share this comfort food classic for Crockpot Chicken Noodle Soup.
Ive made The Pioneer Womans Chicken Noodle Soup for years and it is a hard one to beat, but it does take quite a bit of time to pull together, where as this slow cooker recipe is a set and forget blessing.
Simply place a couple chicken breasts in the bottom of a slow cooker. Along with any sort of vegetables you like.
Diced onion, celery, and carrots are a great option.
Top with a can of cream of chicken soup, butter, chicken broth, and seasonings.
Set the slow cooker to low for about 5-6 hours.
Remove chicken and cut into bite-sized pieces. Return chicken to Crockpot.

A 20 minute baking time with temperatures starting at 350 Fahrenheit should be enough until heated through. In order to reheat the noodles in the microwave, spread them on a microwave-safe plate and stick them inside the microwave until you reach your desired temperature. To prevent the noodles from drying out, place a glass of water under the noodles after microwave heating.
Can I Use Chicken Broth For Soup Base
There is a very good reason for distinguishing between broth and stock. Stock is made from simmering bones, while broth is made by simmering meat. What gives stock its body is the fact that simmering bones slowly for a long time dissolves the cartilage at the joints of the bones and turns it into gelatin.
Simmering meat for that long only turns it stringy and overcooked. Youll extract flavor from it, but youll be ruining the meat itself.
So, stock is stock and broth is broth. For maximum flavor and body in your soup, you need the former.

With Christmas right around the corner, weve been busy preparing for holiday parties, cookie exchanges, and making the big day magical for our kiddos. Life is busy, it always is, which means dinner is often an afterthought or a rushed meal. Soup has been my go-to. The kids will eat it, leftovers are enjoyed for days, and I can always sneak in lots of veggies. Today Im sharing a twist on a classic: creamy chicken noodle soup.
Its hard not to love chicken noodle soup! Its the classic when youre sick recipe, and todays version is just as good but more creamy than broth-y.
I made this soup a few weeks ago and our four year old insisted we make it again, so I did! Its hearty without being overly rich, full of veggies and protein, and loaded with thick, homestyle egg noodles. Whats not to love?
What Is In Chicken Noodle Soup
The ingredients in this soup are simple: chicken, carrots, celery, onions, noodles, broth, and herbs.
- CHICKEN: You can use rotisserie chicken, chicken breasts or thighs, or cook a whole chicken. This is a great way to you leftover cooked chicken.
- BROTH: The chicken broth is the base of this soup. I like to use Better than Bouillon Base with cups of water because of its rich flavor. You could make your own homemade chicken stock if you want or use bone broth.
- VEGETABLES: Carrots, celery, and onion are the classic veggies in chicken noodle soup. Feel free to add your own.
- NOODLES: Homemade egg noodles do not take that long and take this soup to the next level! If youre running short on time, store bought wide egg noodles will work. But the type of noodles matter and homemade make this the best chicken noodle soup recipe. Cooking them al dente makes them delicious!
- OPTIONAL You can use fresh herbs like fresh parsley, fresh dill or bay leaves. You could even add a squeeze of fresh lemon juice.

How To Make It

Sauté the onions, carrots, celery, and garlic in butter until softened. Add the seasonings, soy sauce, hot sauce, chicken, and chicken broth.
Bring to a gentle boil and cook for 15-20 minutes, until chicken is cooked through.
Remove the chicken and use 2 forks to shred it. Return it to the soup.
Boil the noodles separately and add them directly to serving bowls if you expect leftovers, then ladle the soup on top. Otherwise, you can add the drained noodles right to the pot of soup and serve.

How To Make Instant Pot Chicken Noodle Soup Recipe:
1. Place the chicken, onions, carrots, and celery in the Instant pot.
2. Add seasonings. I also like adding in bay leaf.
3. Take the 2 cup of water and whisk in the ¼ cup of flour.
4. Pour into the Instant pot.
5. Add in the chicken broth.
6. Add the lid and make sure it is set to sealing set the timer for 20 minutes.
7. Do a quick release. Remove the chicken and shred.
8. Once chicken is shredded, add the chicken back in the instant pot.
9. Turn the instant pot to the sauté setting and bring the soup to a boil.
10. Add in the frozen reames noodles and cook for 15 to 20 minutes until noodles are cooked through. I also like adding a little olive oil to prevent the noodles from sticking together.

Also if you want to use dry noodles instead of frozen, you would just cook them for about 6 minutes until they are cooked through.

In a large pot, add chicken, water, parsley, thyme, pepper, bouillon and bay leaf. Bring to a boil over medium-high heat.
Add noodles, carrots, celery and onion return to a boil. Reduce heat and cover simmer 20 to 30 minutes or until done.
Meanwhile, in a liquid-tight container, combine 1/2 cup of milk and flour shake well until smooth. Add to noodle mixture with remaining 1 1/2 cups milk. Continue cooking over medium heat until thickened and heated through.

Make Ahead And Freezing Instructions:
To make ahead: This soup is best made ahead of time when you are using homemade egg noodles, since they dont get soggy and overcooked like regular store bought noodles. If you wanted to use regular noodles, I recommend making the broth first, and then boiling it with the noodles, and adding the chicken, the day of serving.
To store: Store in an airtight container in the refrigerator for 4-5 days, depending on the freshness of the chicken used.
To freeze: Allow the soup to cool completely and store it in a freezer safe container for 2-3 months. Thaw overnight in the fridge, or over medium heat on the stove. If using store bought noodles I would suggest undercooking the noodles before freezing the soup, to avoid them getting soggy upon reheating.
