Pot Roast has always been a favorite Sunday dinner in our family. Sometimes we make it with mashed potatoes, sometimes with carrots and potatoes cooked with the roast. Either way, it is always delicious. Because I sometimes forget to put the roast in the oven or slow cooker in time, I find myself scrambling to get dinner ready. Ive walked in the door from church and thought, SHOOT! I never put the roast in! If you are like me, this Instant Pot recipe is a lifesaver especially on those days.

How To Store And Reheat

Store leftover pot roast in the refrigerator in an airtight container. The flavors deepen and are actually better the next day! The pot roast will keep for 3 to 4 days.

If you need to store the roast for a longer period of time, you can freeze it in an airtight container or freezer safe bag to keep the favors perfect for next time.

Reheat individual portions of the roast and veggies in the microwave. For larger portions, you can reheat the pot roast and vegetables in the oven.

Slow Cooked Chuck Roast Recipe

Oh man, was this good. I mean, mouth-watering, melt-in-your-mouth delicious roast and gravy good. Make this now. I command thee.In all seriousness, this is the perfect dish for when company is coming, you have no time to cook, but you want one heckuva tasty, large meal at the end of the day. The ingredients arent fancy at all, but the taste IS!

I made this when my brother was over for Sunday dinner as I know he loves a good pot roast. That kid is a meat and potatoes kinda eater and the weather was so cold and cruddy I went into cold weather cooking mode and that always means a good roast beef.

Crock Pot Roast With Onion Soup Mix Recipe

Heat up a large skillet on high. Add oil to hot skillet. You want it really hot here to brown or “sear” the beef quickly. Note: I have one of those nifty new Ninja slow cookers that has a “stovetop” option, which means I can brown the meat all right in my crock pot and not dirty up any other dishes. However, if you are in a rush, just skip the browning step altogether.

Take a paper towel and make sure you dry both sides of the pot roast Then season with a little bit of salt and pepper. Once the skillet is nice and hot, add the roast. Allow the roast to cook for about 2-3 minutes until it is golden brown. The browning of the outside of the meat just adds flavor. Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.

Transfer meat to slow cooker. Sprinkle packets of dry ranch dressing and onion soup mixes over pot roast. Top with a stick of butter. Then place peppers on and around roast.

Note: This butter is a Kerrygold garlic & herb butter. The sticks were on sale at Kroger so I had picked up a bunch. That was the first time I had ever seen the butter in sticks. I absolutely LOVE Kerrygold butter. Irish butter just can’t be beat in terms of flavor. Must be that yummy Irish grass. But a regular ole stick of salted butter will still work perfectly in this. Cover and cook on low for 8 hours. You don’t add any other liquid to this. The meat will create it’s own juices at it cooks. Just cover and let it do its’ thing.

Slow Cooker Pot Roast With Potatoes

If you add vegetables like potatoes and carrots in the beginning, they will become very soft by the time your roast is ready. They would still taste great!

However, if you want to prevent vegetables from becoming over-cooked and mushy, add them halfway through cooking and they will have the perfect texture!

How To Meal Prep This Pot Roast Recipe

Here are a few tips on how you can meal prep this chuck roast recipe:

  • Prep the ingredients the night before in the slow cooker insert. This recipe is already so easy to prepare, but if you dont want to fuss with it in the morning, get it ready before bed. Then, get the slow cooker started before you head for work in the morning.
  • Cook on the weekend. If you want to make sandwiches during the week or just heat and eat, you can make this pot roast on the weekend and then store it in the fridge for dinners during the week.
  • Prep sides to have ready. When I know we will eat these as sandwiches during the week, Ill make the onions and peppers ahead of time to put together the sandwiches at dinner time quickly. Or, Ill make mash potatoes, rice, or other sides to have ready to heat up for dinner during the week.

How To Make Crock Pot Roast With Creamy Mushroom Gravy

  • Season the chuck roast and brown it in a little oil in a skillet. Add it to a 6-quart slow cooker.
  • Briefly cook the onion and mushrooms and then the garlic in the beef drippings. Add them to the slow cooker.
  • Mix together the condensed soup, onion soup mix, water, Worcestershire sauce, thyme, and pepper in a bowl and pour over the chuck roast.
  • Cook on LOW for 8 to 10 hours.
  • If the gravy is not thick enough, mix together some cornstarch with cold water and add it to the crock pot. Cover and cook on HIGH for 15 to 20 minutes. Note: or you can transfer the gravy to a pot and do this step much faster on the stove.

  • This uses up all of my favourite cheats dry onion soup and canned mushroom soup. You can totally use homemade condensed mushroom soup but really, try not to skip that dry onion soup mix. You can replace it with some onion powder and some garlic powder, but its just not the same. Besides, everyone needs a good cheat meal once in a while!

    This makes the BEST gravy I have ever tasted. The fresh mushrooms cook for hours and release all their moisture into the gravy, the real onion cooks and mostly disintegrates.I am drooling just thinking about it. This chuck roast is absolutely happening again this winter!

    How To Make Perfect Slow Cooker Pot Roast

    Place 4 lb Chuck Roast in Slow Cooker. I used my Casserole Slow Cooker, a regular standard slow cooker will work fine.

    Salt and Pepper to taste.

    TIP: You may be asking Why a chuck roast?. Thats a really great question. See all the beautiful marbling in the piece of Roast pictured below? That marbling will make the roast tender as it reduces down during cooking time. It also infuses the meat with amazing flavor.

    Sprinkle the top of the roast with One envelope of Beefy Onion Lipton Soup Mix.

    Now this next part might be where some of you disagree with my preparation of this dish. I know a lot of you prefer to add your vegetables about 2 hours before serving. Thats okay, Im not offended.

    I just need a true dump and go dish at this Nest on Sundays. I need a meal that is ready in about 5 minutes after we walk in the door from church. So, I add my carrots and potatoes right from the get-go!

    Youd think my bunch had been placed in a starvation camp during church. They seriously come home ravenous! Its totally insane! If they just carried chocolates in their purse like I dololokay that may not work for the men in the family!

    Add one can of Beef Broth to bottom of the pan. Cover and cook on low for 8 hours!

    Sunday, after church, when you pull into the garage, the family can break into a combined unified chorus of Mmmmmmmms!

    How To Make Crock Pot Pot Roast With Cream Of Mushroom Soup

    Season chuck roast generously on all sides with salt and pepper.

    Place roast in slow cooker and cover with sliced onions. Cook on high for 4 hours.

    After 4 hours

    slide the onions into the juices.

    Then add two cans of cream of mushroom soup

    and mix with the juices. Do your best not to disturb the roast. Cook for another two hours on high. Check for fall-apart fork tenderness. If necessary, cook for another hour or so. Then switch to warm setting. Its pretty difficult to overcook it.

    • Pot roasts can be made using many different cooking methods. If you dont have an Instant Pot, you can try our recipes for making pot roast in the slow cooker or in the oven .
    • To avoid mushy vegetables just add them later! 10 minutes before your cooking time is up, release the pressure and add the carrots and potatoes. Press cancel and then re-set to high pressure for 8 minutes. If you have bigger potatoes or potato dices, cook for 10 minutes.
    • If you have leftovers, roast can easily be shredded and frozen to eat at a later date. Just remove any vegetables and place in a Ziplock bag to freeze. When ready to re-heat thaw in the refrigerator overnight and reheat or add to your favorite shredded beef recipes.

    Tips For Best Slow Cooker Pot Roast Recipe

    -For an enhanced flavor, my mom does this: Heat oil in a nonstick pan over medium-high heat. Add the chuck roast and season one side with salt and pepper. Sear it until golden brown. Then, flip it over and season the other side with salt and pepper. Sear it. Sear and brown the sides of the roast too. Then, place it in the slow cooker and follow the rest of the steps, as explained below in the recipe card.

    -Use low sodium cream of mushroom soup so as to prevent the roast from becoming too salty.

    -Adjust the amount of seasonings, based on your preference.

    -NO additional liquid or broth is required in this recipe.

    -You can add vegetables of your choice. Typically, carrots, celery, onion and potatoes are added but if you are not fond of vegetables, you can omit them entirely. I only used carrots and onions this time.

    -I really dont think there is a very good substitute for cream of mushroom soup but some people have tried cream of celery soup and said it wasnt bad.

    Slow Cooker Pork Roast

    I tried this cut of meat when it was on sale, and for lack of any other ideas I took suggestions from the back of the label, with a few tweaks . This is a very popular dish at our house, and it could not be easier! Instead of rubbing the roast with the onion soup mix and then adding the cranberry sauce, you can also just mix the onion soup mix with the cranberry sauce and pour the whole mixture over the roast.

    1 package dry onion soup mix
    1 can whole berry cranberry sauce
    2 tablespoons butter, or to taste
    2 tablespoons all-purpose flour, or as needed
    salt and ground black pepper to taste


    • Rub pork roast all over with onion soup mix and place roast in the slow cooker. Pour cranberry sauce over roast.
    • Cook on Low for 8 to 10 hours. Remove roast to a platter, reserving juices in the slow cooker.
    • Melt butter in a saucepan over low heat. Whisk flour into melted butter to form a paste. Pour reserved juices from the slow cooker into the butter mixture, whisking constantly, until gravy lightens in color and thickens, about 5 minutes. Season with salt and black pepper to taste. Serve gravy alongside roast.
