How To Develop Great Flavor
- Add medicinal and culinary spices at the beginning. Black pepper and tough, woody herbs like dried bay, and dried roots like astragalus need time to release their flavor so add them to the pot with your bones.
- Add roasted garlic and onions at the beginning. You can toss onion halves and garlic in with your bones when you roast them, and they’ll give your broth fantastic flavor.
- Add vegetables at the end. Vegetables like carrots and celery can give broth a lovely flavor. But, they can also make your broth taste overly sweet, tinny or like overcooked vegetables. And no one wants that! Add them in the last 20 to 30 minutes of cooking for the best flavor.
- Add leafy herbs at the end. Leafy herbs like parsley, savory and basil can give it a beautiful punch of flavor. Unfortunately, they’ll lose all their vibrance if added to early. So add them in the last 10 minutes of cooking, or right when you take the pot off the heat.
How Do You Use Bone Broth
Bone broth is incredibly versatile. Here are just a few ways to use it in the kitchen:
- Drink it: Bone broth is great by itself, but make sure its hot. Add a pinch of salt, black pepper, ground ginger or even nutmeg to boost the flavor.
- Make it the base of a soup: Take a cue from this recipe for Vegetable Orzo Soup and toss in pasta, protein and plenty of vegetables.
- Intensify other dishes: When it comes to adding flavor, dont stop at soups. You can cook grains like brown rice in bone broth, too.
When in a pinch, bone broth can be used in pretty much any recipe calling for stock or broth. Just be sure to frequently taste throughout the cooking process and adjust your seasonings as needed.
Now that youve mastered homemade bone broth, take a look at how to make chicken broth like a kitchen pro.
How To Make Chicken Bone Broth
If you dont have chicken stock or if you want to make your own bone broth its actually quite easy! My preferred way to make chicken bone broth is with a pressure cooker. You can make chicken bone broth in as little as a few hours with this method. With a slow cooker it would take you a few days to get the same consistency and nutritional value as you can with a pressure cooker.

How Much Bone Broth Should You Drink Daily
As much as you want, honestly. Id start at one or two cups a day, and see how that makes you feel. When Im in the depths of a Lyme Disease flare-up, I switch to consuming almost entirely bone broth. I tend to lose my appetite, and bone broth nourishes me enough to give me energy without taxing my body to digest foods it really doesnt want to eat anyway . Since bone broth is a food-based medicine, its really hard to O.D. on the stuffenjoy regularly!
The Best Bones For Bone Broth:
- High Cartilage Bones Knuckles, joints, chicken feet, and even chicken wings can help broth gelatinize and extract rich sources of protein. I prefer chicken bones or beef bones, but pork bones are great, too.
- These are loaded with satisfying fats!
- Meaty Bones Oxtail, shank, or short ribs work well
- Entire Carcasses Use leftover bones from a whole chicken to make a richer chicken bone broth recipe.
- Bones From Other Animals No need to stop at beef or chicken! Try bones from lamb, bison, veal, turkey, fish, or game animals.
For deeper flavor, you can mix and match bones from the same animal just make sure they can all fit into your stock pot ahead of time.
Whether you make a beef bone broth recipe or chicken bone broth recipe , its important to use high-quality ones since were extracting nutrients directly from the bones. I recommend free range chicken or grass fed beef at possible, and getting them at your local butcher, or even a local farm, is a good way to source them.
That said, if you have a tough time finding bones from animals that are pastured or humanely raised, try Paleovalley Bone Broth Protein instead it uses 100% grass-fed and grass-finished beef bones, and tests for over 40 pesticides and herbicides.

Making Your Own Bone Broth
The bone broth we make at home is pretty minimalist. You can certainly go to more effort as youll see in the recipes below. Or you can save time and buy it pre-made.
Heres how we make our own broth for this roasted garlic chicken bone broth soup.
Save the bones from chicken over the course of a few weeks in paper grocery bags, wrapped up with a rubber band and stored in the freezer. Once theres enough to fill the crock pot or Instant Pot, you can add the washed bones plus filtered water and about 1/4 cup Braggs Apple Cider Vinegar, along with onions, salt and pepper, and any vegetables you have on hand.
In a crock pot, we keep it on a low setting for 2 days. In the Instant Pot, we run the manual setting for 120 minutes then usually let it slow cook for a few hours. Then we let it cool and separate it into mason jars for the fridge and silicone trays for the freezer.
Here are some other recipes / options for bone broth.
Slow Cooker Bone Broth
Bone broth is a staple of my familys diet. As with healthy fats, heirloom vegetables, grass-fed meats and a good old-fashioned cod liver oil, we consume a lot of bone broths usually aiming for one quart per person per day, at the recommendation of our nutritionist. Broth, you see, is a nutritional powerhouse. It is extraordinarily rich in easy-to-assimilate minerals, amino acids and goodies like glucosamine chondroitin. Its gelatin helps to heal the gut, which is why it plays such an integral role in the GAPS diet, and it provides powerful medicine particularly in combating colds and flus.
And, you did read that right: we do aim for one quart per adult per day . Thats a lot of broth. Let me do the math for you. Thats between two and three quarts per day, averaging to about four and a half gallons of broth each week for our family. Yes, as you might imagine, soups and stews are a big part of our day, more so in the winter than in the summer. When I serve breakfast, I serve it with a mug of broth and another mug of broth sits at my desk as I work.
Its a beautiful thing, really, and I credit good broth, cod liver oil and of fermented foods with the resilient immunity my family enjoys each flu season.

How To Prevent Nutrient Loss
You can add herbs and spices for extra nutrition and a delicious soup base. It is important to only add your vegetables and herbs for the last 2-3 hours of your total cook time.
If you have them in longer, they cook into mush and give you a starchy taste. This maximizes the nutrition and prevents nutrient loss.
Turmeric adds color and anti-inflammatory properties to the soup. Making bone broth can be time consuming, but using a pressure cooker can shorten the cooking time.
Also, if you have time to roast your bones before you start your simmer, you’ll get great results. Roasting bones before making bone broth gives a richer, more robust taste.

Bone broth has been the darling of the health and wellness world for a few years now, with gurus touting the multiple benefits of expensive designer bone broths, like detox, gut healing, relieves arthritis, youthful skin, energy boosting, sleep better, immune support, improve your memory, blah, blah, blah. In reality, no one food is a cure-all, and all of these claims certainly are not true. Why? Because science. There is no scientific evidence that bone broth can do most of these things. BUT! Broth is a highly useful ingredient in the kitchen and adds tons of flavor to anything you cook, so I always keep some around. Bone Broth Has Worked Wonders For Me
When I started making and consuming broth from Bison marrow bones, my body started changing in miraculous ways. Within a couple of weeks my digestion improved dramatically and everything started coming out normal. I also noticed my skin improved and I was also losing weight. My hair had become shiny and my nails were stronger. The collagen in bone broth worked wonders for me. I continue to include bone broth as a staple in my diet.
Blanch And Then Roast Or Cook The Bones
The key to getting the best flavor from any bones from any animal is to make sure they are roasted or cooked first. If you prefer, you can also blanch your bones to remove impurities that can make the taste go off by submerging them in boiling water for 10-15 minutes and then roasting. Ive done the blanching step a handful of times, and Ive noticed with chicken, the difference is negligible, and not worth the extra time. With beef bones, however, I always blanch my bones before roastingit really does result in a tastier broth. Ive also noticed the better quality the bones , the less important the blanching step is, but thats just my personal experience. I highly recommend trying it out both ways to see what works best for you.
Either way, you then want to roast your bones. If you are using bones leftover from cooking a whole chicken or making a roast, you can skip this step, since the bones were technically already roasted during your initial cooking process, but for any raw or blanched bones, I highly recommend a trip in the oven to get better flavor. I roast bones at 425°F for 25-30 minutes, or until quite brownedits really hard to over-roast bone broth bones.

How To Store Chicken Stock
To store chicken stock in the refrigerator or freezer, you first need to bring it down to room temperature. The easiest way to do this is by adding a couple of handfuls of ice to your stock or by adding your pot to an ice water bath in your sink.
Once cool, you may either transfer your pot directly to the refrigerator or divide the stock into containers of various increments. For example, ice cube trays are great when needing only a few tablespoons, whereas small jars are perfect for recipes that call for between 1/2 cup-2 cups of stock or broth.
- To store chicken stock in glass jars: Never place a hot liquid in a glass jar and then place it in the freezer. Any fault in the glass and it will break. Also, avoid filling it to the top. Liquid expands when frozen. I love Ball Mason Jars with reusable lids.
- To store chicken stock in freezer bags: For best results, always measure and label how much stock youre placing in each bag. Remove as much air as possible and freeze flat on a baking sheet. Once frozen, double bag to help protect against leaks.
