What Kind Of Mushrooms For Cream Of Mushroom Soup
This recipe is unique in that I used three different types of mushrooms.
The most important mushroom in this recipe are dried porcini. Not only are they super flavourful umami bombs, they make a deep mushroom stock when rehydrated thats then added to the soup.
In terms of fresh mushrooms, I used a combination of white button and cremini / baby bella mushrooms.
But if you want to simplify, you can use just white or just cremini for this recipe.
How To Store Leftovers
- Refrigerator: Store leftover soup in the refrigerator for up to 4 5 days, stored covered.
- Freezer: To freeze mushroom soup, let it cool completely. My favorite way to store soup is in serving size portions using freezer safe containers or baggies. Will last 2 3 months. Let thaw in the refrigerator before reheating.
- Reheat: Warm your leftover soup on the stove over medium low heat until warmed through. Or heat it in the microwave for a few minutes, stopping to stir every so often.
What Do You Serve With The Vegan Cream Of Mushroom Soup
This recipe doesn’t need much to make it a meal to remember, but serving a crusty French bread on the side won’t hurt at all. And a green salad would take it over the top.

How To Make Vegan Cream Of Mushroom Soup
Wash whole baby bella mushrooms.
In several batches, dice mushrooms.
In a large saucepan add oil, mushrooms, garlic, salt, and pepper. Sauté over medium-high heat for 10-15 minutes.
Cook until mushrooms have released their juices and mostly evaporated.
Meanwhile in a medium bowl, combine soy milk, onion powder, and cornstarch. Mix well, making sure there are no lumps.
Add milk mixture to mushrooms and reduce to medium-low heat. Cook until desired thickness is reached, probably about 5 minutes.

What Are The Best Kinds Of Mushrooms To Use For Vegan And Gluten Free Mushroom Soup
My favorite kind of mushrooms to use for mushroom soup are brown Cremini mushrooms also known as button mushrooms. They have a very neutral and light flavor and are healthier than white button mushrooms. If possible buy the ones that have been pre-sliced and washed. Prepping the mushrooms is by far the most tedious step of this recipe. If you can avoid it, why not?
If you cant find Cremini mushrooms you can also use Portobello mushrooms. Theyre also light in flavor.

Vegan Cream Of Mushrooms Soup Ingredients:
extra virgin olive oil – Feel free to use your favorite oil of choice. I personally love the rich flavor EVOO brings to the table.
mushrooms – I have always used classic white button mushrooms or baby bellas for this recipe. In my mind, there’s no need to get fancy or expensive mushrooms, but you if wanna, hey knock yourself out!
shallot – These are in the onion family, but are considered milder in flavor and aroma. If you don’t have shallots, my second favorite option is the almighty green onion.
fresh garlic – I highly recommend fresh garlic but garlic powder would work fine too.
chickpea flour – also called garbanzo flour is how we roll for this gluten-free mushroom soup recipe. If you’re not gluten restricted, you can use all-purpose flour, you’ll need to cut the amount in half.
dry sherry – Optional ingredient, but highly recommended. I love the flavor and aroma dry sherry brings to this mushroom soup recipe.
unsweetened almond milk – you can use any non-dairy milk for this recipe. My readers have offered testimonials for various types of milk and they all win! You can also do 1/2 milk and 1/2 vegetable broth for a lower calorie option. It won’t be quite as creamy but it will still be delish!
nutmeg – This is optional, of course, but nutmeg is a classic ingredient in any cream of mushroom soup, in my book.

Do I Have To Use Almond Milk Or Can I Use All Vegetable Stock In This Vegan Mushroom Soup
For this dairy free mushroom soup, you dont have to you the almond milk at all. We did test with only vegetable stock and we loved the flavor even more, but it did make the cream of mushroom soup darker and not a creamy like color that you would expect. If you arent worried about the color, then you can just do the stock.

This vegan cream of mushroom soup is dairy free.
Other similar recipes call for blended cashews or plant-based milk thickened with flour, but my favourite creamy soup base is coconut milk .
Coconut milk is cheaper than cashews and creamier than any thickened plant-based milk.
You may be worried that you can taste the coconut in this soup, but its not enough to give it a strong coconut flavour.
But if youre worried you can add it little by little while tasting until you reach a point that its creamy enough without tasting of coconut.
Additionally, this recipe calls for blending a few ladlefuls of the soup, which not only brings out more mushroom flavour, it also thickens the broth and makes it extra creamy.

Saut The Mushrooms And Aromatics
Start by sautéing the shrooms over medium-high heat until golden. Try and avoid stirring to often to ensure they get a really good sear. This will help some of the water cook off, which concentrates their flavor.
Adding adequate fat is also crucial in achieving golden goodness. You want to start with at least 3 Tbsp. of olive oil, and add more if needed.
Next, stir in the aromatics, herbs, salt, and pepper. Its important to wait to add salt until the mushrooms are cooked, otherwise salt will draw out excess water and hinder browning.

Vegan Mushroom Soup Instructions
- In a large pot, heat oil or water over medium heat, saute the onions and garlic for 5 minutes. Add the mushrooms, thyme and wine, cook for 5 minutes.
- Add the veggie broth, bring to a boil, cover, reduce heat and simmer for 15 minutes. In the last five minutes, add the coconut or plant milk, continue cooking for five minutes.
- Mix the cornstarch with cool water. Add to the soup and stir frequently for 1 2 minutes until soup slightly thickens. If the soup is too thin, add more cornstarch slurry as needed until desired consistency is reached.
- Remove from heat and stir in the parsley. Season with salt and pepper.
