This is a quick and easy way to prepare chicken stock.
- 1 teaspoon of salt
- 2 bay leaves
Chop chicken parts into small pieces. Heat the oil in stockpot. Add onions and cook until they are transparent. Remove onions, add more oil if necessary, and brown chicken parts. Remove chicken from the pot.
Lower heat to low and add ½ cup of white wine, vermouth, or water to the pot and deglaze the bottom.
Return meat and onions to the pot, cover, and cook on low for about 20 minutes. This is called sweating the meat. This process allows the meat to slowly release its maximum juices.
Return heat to medium high and add boiling water, salt and bay leaves. Water should just cover the chicken and vegetables.
Return stock to a simmer, cover and simmer the stock for 30 minutes.
Use a slotted spoon to remove the larger pieces of ingredients. Strain the stock, cool, and refrigerate. Defat the stock before using.
The stock should be used within 2-3 days. Freeze any remaining stock.

Size: Soup pots typically come in sizes ranging as small as 4 qt. to as large as 20-qt. before getting into commercial sizes. Although a soup pot doesnt have to be as big as a stock pot because you typically dont make as big a batch, you dont need to have one pot for soup and anther one for stock.
Im recommending you look at a 6-qt. 12-qt. range so it will be versatile for your other cooking needs.
Shape: As show in the picture on the left, a soup pot usually has a round base, deep straight sides and a cover. Although this shape is more important when making stocks and stock reductions, it works well for making soups too.
Could you use a shorter, smaller, wider pan for making soups? Of course and depending on how much you are making you just may want to use a large sauce pan instead.
Structure: No matter what type of pan you buy, you want it to have a thick, heavy bottom to prevent burning. This is especially true with soup pots. Soup requires time to cook so the pan will be sitting on the stove tip for long periods.
You dont want the ingredients to scorch and stick to the bottom because it is too thin or made of cheap materials.

Black beans ~ Canned black beans are always in my pantry. Theyre inexpensive and convenient. Be sure to drain them and rinse them well before adding to the soup.

Vegetables ~ Besides the aromatics, onion and garlic, the only other vegetable I use is a red bell pepper. This recipe is meant to be kept simple. You can certainly bulk up the nutrient content by adding a few more veggies if you like. Corn, diced sweet potato, zucchini, or even leafy greens, like kale or spinach, would all be great options.
Diced tomatoes ~ Canned diced tomatoes are a pantry staple and so convenient in this soup. I like the chunky texture of the diced tomatoes, but crushed tomatoes or tomato purée would also work.
Vegetable broth ~ I almost always opt for low-sodium vegetable broth. This allows more control over the salt content of the dish.

Extras ~ I like to keep the soup fairly simple and set out several garnishes so everyone can customize their own bowl to their tastes. You can, however, add some of these to the soup itself.
If you like it spicy, try adding a can of diced green chiles, a diced jalapeño pepper, or several shakes of hot sauce.
Add a squeeze of fresh lime juice to the pot after simmering.

What Do I Use
Personally, most of my pans are older Calphalon hard-anodized aluminum pans that are no longer on the market. I called Calphalon and spoke with an knowledgeable customer service person who told me these pans are still around in some specialty shops if I really wanted one.
But I dont and thats because Ive tried a couple of their new Calphalon One, infused anodized pans that are are not nonstick but because of the design have many of the qualities of nonstick but all the versatility of heavy gage aluminum.
These pans are great and I highly recommend them. You can use them on the stove top, in the oven, use metal utensils, deglaze, sear foods and best of all they clean up fast and easy. They are also dishwasher safe and have a lifetime warranty. What more can you ask.
Other brands: There are many other excellent brands on the market. I started with Calphalon years ago and just stuck with them but I speak with other home cooks and they tell me they like All-Clad, Anolon, Circulon, Emerilware, Le Creuset, Farberware just to name a few.
Buying Sets or Individual Pots: Some people like to buy the whole set at once and get it over with. When I started buying cookware, I couldnt afford to do it that way so I started with one 4 1/2 qt. sauce pan and added on.
I had some really cheap pots that I bought right out of school but they didnt hold up very well and were awful to cook with. Theyre most likely buried in some box in the garage somewhere. Just cant seem to throw them out.
What Kind Of Vegetable Any Kind
Nearly any vegetable will make tasty soup, Sweet potato, zucchini, squash, turnip, tomato, celery, mushrooms, onions, leeks, cabbage, kale, chard, potatoes, rutabaga, celeriac, cauliflower, broccoli the list goes on.
The only caveat is that you need to like the flavor of the vegetable. You can tone down turnips bitterness with cream or yogurt, and you can offset cabbages aroma with creamy white beans or tart lemon, but you cant entirely erase the taste of a vegetable in soup, so dont put something in that you really dont like.
Also, nearly any texture of vegetable will work, from tender greens to hard squash, but the cooking time will change. A big pot of chard will cook down quickly, while butternut squash will need more time.
