Pick up Pacific’s organic option over Campbell’s if you don’t want to sip on the same contents that are found in a food scientist’s test tube.

Easy Low Carb Keto Beef Stew

Are you the only one in the family on a special diet? That can be tough.

Often you end up making two separate dishes- one for you and one for everyone else.

This beef stew is one that your whole family will love- picky eaters included.

To keep it low in carbs, youll be using celery root. Celery root is a great low-carb alternative to potatoes.

It has the same texture as potatoes and makes the stew really hearty.

Besides being low carb, celery root is also rich in fiber. So, it helps you feel full.

It is also a rich source of Vitamin K and contains Vitamin C and potassium too. So, eat up that celery root.

Low Carb Crock Pot Stuffed Pepper Soup

Want to enjoy stuffed peppers but dont enjoy the hassle of making them? Make this Stuffed Pepper soup instead.

Its deconstructed stuffed peppers but in soup form. Youve got your browned ground beef, marinara sauce, bell peppers, cheese, and Italian seasonings.

To keep it low carb, youll be using cauliflower rice instead of rice. Besides being low carb, cauliflower rice is low in calories.

It is also rich in Vitamin C. Also, since it is high in fiber, its quite filling.

To save time, you can simply use prepackaged cauliflower rice like this. Or you can make it from scratch.

To make it, cut some cauliflower into pieces. Then place them in a food processor, and process until rice-like. Easy peasy.

The combination of juicy sausage and spinach in a creamy broth is so divine- your kids will be licking their plates. And thats a good thing.

Want another bright soup? Have some of this Red Lentil Soup with Lemon.

Its popping with color and flavor. The peppercorns and green chili add some kick.

The coriander and turmeric add some Bollywood flavors. Lets get those saris out.

And talking about Bollywood flavors, youll be adding carrom seeds. These are actually seed-like fruits that add complex flavors.

The flavor is quite strong, so you dont want to use too much. So make sure you measure it well using some good measuring spoons like this.

Besides adding flavor, carrom seeds are very nutritious. Theyre rich in fiber and antioxidants.

They may even prevent coughing. If you need to stock up on carrom seeds, you can get some here.

Cauliflower is another nutrient-packed food. One cup of raw cauliflower contains just 25 calories.

Yet, it provides 77% of your daily Vitamin C requirements. It also provides 20% of your daily Vitamin K requirements.

But lets face it, cauliflower is quite tasteless. You just want to add tons of cheese to make it taste decent.

But then your cauliflower becomes loaded with calories.

This Creamy Cauliflower Soup makes cauliflower so yummy. Thats because youre adding seasoning like sage, mustard, and celery seed.

Youre also adding vegetable broth for extra flavor. Finally, youre pureeing your cauliflower soup.

So you cant even tell it was cauliflower. Now thats a win in my books.

What Kind Of Cheese To Use

This recipe is great also because it traditionally calls for either shredded Swiss or Gruyere cheese. Both of which are some of the lowest sodium cheeses I have been able to easily find. There is also a Swiss Gruyere shredded mix that I use quite often. See pic below.

Both types of cheese melt quite well in the soup or over top of a piece of low sodium bread. Though I have found broiling the cheese on the bread and then placing that in the freshly ladled soup is easiest. I hate trying to balance soup bowls in and out of a hot oven. The bread will soak up the soup in just a minute, just as if you did the whole thing in the oven.

The cheese used in this recipe is 55mg of sodium per ¼ cup. And using ¼ cup per serving of soup is just the perfect amount. I use the Trader Joes or Aldi brand Swiss + Gruyere and I have seen Kraft shredded Swiss at 55mg also. Be sure to check your labels.

You of course have the option of leaving the cheese out and the soup would only be about 90mg of sodium for a cup and a half. I do this also when I want to use the soup as more of an Au jus or just for dipping bread.

Instant Pot Pumpkin Soup

Wondering what to do with all your leftover pumpkin from Halloween? Make this Halloween, er, Pumpkin Soup.

Its hearty and full of flavors and textures. Theres the crunchiness of the toasted pepitas and the creaminess of the coconut milk.

Youve also got sweetness from the pumpkins and warmth from the spices. Thats because youre using nutmeg, ginger, black peppercorns, and red pepper flakes.

This is definitely a soup youll want for those cold fall nights. So dig out your Instant Pot.

Serve with a bit of crusty bread or this low-calorie/high-protein flatbread.

What To Put In Vegetable Soup

Broth I prefer beef broth in this soup for flavor, you can use homemade stock or broth or vegetable broth if you prefer. Canned tomatoes add great flavor to this recipe too.

Vegetables I love the addition of all kinds of veggies and anything goes in this recipe.

Cabbage in this soup adds bulk and fills your belly. If youre not a fan of cabbage, you can most certainly substitute kale or spinach. Keep in mind that kale will add more bulk and spinach will shrink down quite a bit.

  • Low Carb Veggies Cabbage, beans, bell peppers, tomatoes, zucchini, broccoli, celery
  • Starchy Veggies Carrots, potatoes and sweet potatoes , corn

Keep In Mind The Amount Of Sodium Per Serving

There are many soups labeled as “low sodium,” “reduced sodium” and “light in sodium“. According to the Food and Drug Administration, products that can carry an “official” low-sodium label should have less than 140 milligrams of sodium per serving.

The “reduced sodium” label means that the products contain at least 25 percent less sodium than the regular versions. And the light in sodium designation indicates that the products have 50 percent less sodium compared to what the regular products have.

So, it’s important to check the nutrition facts for the actual sodium content per serving to ensure that it meets your dietary needs. When it comes to canned soups, it’s not easy to find ones that meet the definition of low-sodium set by the FDA.

For the sake of this article, we are defining low-sodium as being under 500 milligrams per serving. Consult with your doctor to find out exactly how much sodium you should include in your diet. You may need to avoid sodium in your other meals or have a smaller portion of the soup to meet your daily goals.

Kale And Cauliflower Soup

Kale is one of the most nutrient-packed foods in the world. One cup of raw kale contains a measly 33 calories.

Yet, it provides more than 200% of your daily Vitamin A requirement. It also provides almost 700% of your daily Vitamin K requirements.

But kale on its own can be pretty bitter and thats a tough pill, ahem, veggie to swallow.

This Kale and Cauliflower Soup lets you eat your cake and have it too. The sweetness of the carrots balances out the bitterness of the kale.

And the cauliflower makes this Soup super creamy. Whats more, this Soup uses just 8 simple ingredients.

So you can whip up this Soup anytime you want.

Green Enchiladas Chicken Soup

Heres another Mexican-inspired soup. After all, you can never have enough Mexican food, right?

On the menu is tender, juicy chicken in a creamy, cheesy broth. The green salsa, green enchilada sauce, and Monterey Jack cheese add tons of Mexican flavors- its pretty much enchiladas but in soup form.

Making this soup is quite easy. Start by placing your chicken, green enchilada sauce, and chicken broth in a slow cooker, and cook for about 7 hours on low.

Next, take out your chicken and shred it with a fork. To make it easier, you can just use some meat shredders like this.

Once youve shredded your chicken, add it back to the slow cooker. Then add Monterey Jack cheese, cream cheese, heavy cream, and green salsa and stir until the cheese melts.

Finally, add some hot sauce to taste. Bon appetit!

Low Sodium French Onion Soup

Low Fat Low Sodium Mushroom Soup

Low Sodium French Onion soup is at the top of the list for classic savory soups. It can be eaten by itself with a piece of crusty bread or full on with melted cheese topping. It also can be paired with a side salad or as an Au Jus to many pork and beef entrees. I love heating a coffee cup of the soup for a quick warming snack in the winter. Though this recipe is a great all year round soup and low sodium side dish.

It does take a fair amount of time to make but there is really very little hands on time involved. Most of the time is spent rendering the moisture out of the onions and then letting all the ingredients to meld together in a simmer.

This onion soup may taste different if youre just starting a low sodium diet as you will still be missing or craving the salt. But it is by no means bland and still retains a rich, savory taste not covered and hidden by salt. I can only imagine eating a canned version now would taste incredibly salty to me with all the sodium packed into one serving and for what really?

Typical sodium amount per 1 cup servingno cheese 1580mg
Calories per serving 295

The regular sodium laden onion soups can easily have your whole days sodium content in just one cup. Many recipes are 1200+mg of sodium per cup. And the famous name brand canned soup is 1580mg of sodium per cup and no cheese!

If you include my Low Sodium Artisan Bread or any of my breads the additional sodium is hardly even worth counting.
