Use Condensed Soup If You Can Get It

So for these photos, I used a different manufacturers can of cream of chicken soup for these pictures. .

However, the soup I used here was not condensed so the sauce is slightly different and less thick than usual. So as I mention in the recipe, if you use a non-condensed can of soup, you may want to thicken the sauce before serving, using the optional cornflour mentioned in the recipe.

So my recommendation is, if you can get your hands on some Campbells condensed cream of chicken soup, please do use that. It is just better, and will give you a thicker and tastier sauce in your casserole! Their soups really are the best!

Chicken and rice casserole

I have used chicken breast in this recipe, but if you wish you can also use chicken thighs and cook the chicken on the bone if you prefer. It is up to you.

The secret to getting the nice fluffy rice in the photos is to rinse and soak your rice before you cook it. Check out some tips in my pilau rice recipe, just leave out all the added ingredients and add only a pinch of salt, but follow the same process of rinsing and soaking.

Crockpot Chicken And Rice Casserole

What youll need to do in the morning for this dump and go recipe is quite simple. Get everything out and just stir it together. If youre looking to leave for the entire day though, this probably isnt one to make.

You do have to keep a bit of an eye on it when its done so the rice doesnt overcook.

  • Add uncooked rice, frozen vegetables, diced onion, and garlic salt into your pot. In a bowl whisk together broth and cream of chicken soup until smooth, pour this into your slow cooker and stir everything together.
  • Put cubed chicken on top, sprinkle with salt and pepper
  • Cover and cook on high 3.5-4 hours until chicken is cooked thru and rice is tender, low for 6-7 hours is an option as well.
  • Fluff rice in pot and serve in bowls with shredded cheese on top.

If it does it will get a bit mushy vs. making our Crockpot pulled pork recipe that can stay on low for quite some time.

I suppose you could use noodles instead, that is on my list of to trys soon. I will add that alternative if and when I get around to it too.

    We eat a lot of this white meat. It is fairly inexpensive and my 3 girls would choose it over many others, so theres that.

    Yes, I have time and time again. The most important part is to check the internal meat temperature once it is done.

    As long as it reaches the min. temp. in the thickest part then youre safe. It wasnt cooked in many of our other Crock pot chicken recipes here either.

    Is it better to cook chicken on high or low in Crockpot?

    I always recommend low and slow, no matter what protein youre using. You do want to ensure that the inside is done before the outside is overdone and dry.

    How do I keep chicken from drying out in the Crockpot?

    If theyre alone youd have to add broth. Personally I think it is best cubed and cooked with a sauce like our slow cooker chicken parmesan recipe. That one is amazing. Thick sauces bring flavor and tenderness to the table when cooked this way.

    How do I choose what I am going to use? I am pickier with chicken than I am with beef. I personally think organic free range has a much better texture and far less fat so that is where I start.

    From there, I see whether chicken breasts or thighs are cheaper per pound. Im frugal so I typically choose the cheaper version and there ya go..

    Add chopped carrots and celery to the stock and bring to a simmer. Then add chopped chicken breast or thighs and bring to a simmer again. Then add dry noodles. When the noodles are done, add seasonings like parsley, salt, pepper, and thyme, and youre done!

    This recipe is one of my late Grandma Mollys special recipes. My Granny used to live alone in Forest Hill in South London, and as a kid, I used to visit her by train whenever I was around.

    My Gran was not really a great one for cooking, but she always made this simple recipe for me when I was visiting, as she knew I loved it.

    I believe her version did not even have any garlic or shallots in it, and I do not think she even pre-fried the chicken, as I sometimes do. It was that simple!

    For the quick chicken soup below, I buy boneless skinless chicken thighs. Boneless and skinless is really helpful because you dont need to ever spend time removing skin or bones. Using thighs instead of breasts adds a ton of flavor, and the chicken is so moist in the soup.

    You can use chicken breast if you really love it and thats your thing, but it wont be nearly as good.

Making chicken and rice casserole is SO easy you wont believe it! Her are the basic steps that you will take to make this chicken casserole .

    • Pre-heat your oven to 375 °F.
    • Whisk together all of the ingredients except for the chicken pieces and the cheddar cheese. Pour into the prepared pan.
