An Easy Soup Recipe Thats Done In 30 Minutes

Because I like to try and use what we have in the house, I opened the freezer, the fridge and all the cabinets to take stock of what we had on hand. Sometimes going back out to the grocery store is just not something I want to do.

I grabbed some ground beef from the freezer, cream cheese from the fridge, onions, basil and garlic from the cabinets and got to work.

Beefy Tomato Soup has become one of our most popular recipe on our site and for good reason. Its really easy to make, its done in less than 30 minutes and its so creamy and comforting, everyone gobbles it up.

This soup recipe is another way I like to use spaghetti sauce in recipes as a short cut and a boost of flavor. And probably one of my favorite ways, too. Also a jar of spaghetti sauce is usually something we have in the pantry so its an easy ingredient to use in recipes like this.

This beef and macaroni soup gets so thick its almost like a beef goulash. Some people have said that its similar to a homemade hamburger helper once the noodles soak up all the broth.

In fact, there are only four ingredients in this chicken casserole, and one of them is cream of mushroom soup.

Besides the cream of mushroom soup, the onion soup mix also makes this an easy recipe to quickly pull together.

The recipe calls for long-grain white rice, but you can easily substitute brown rice in this recipe. Be sure to take into account that brown rice takes just a little longer to cook.

Simple Steps For Making Low Carb Tomato Soup

Get out your favorite medium sized soup pan and start heating it up. Add in your butter, crushed garlic, and diced onions so that you can sauté them until theyre nice and fragrant. This takes maybe three minutes, but adds such a rich flavor!

You dont want to burn the onions or garlic, so keep your heat around medium and stir frequently.

Next add in the bone broth, diced tomatoes, tomato sauce, and basil. Keep it over low heat and bring to a simmer .

Once its simmered for a moment or two, pull out a few cups from the pot and place them in your blender to get a smooth base for your low carb tomato soup. You could also use an immersion blender if you wanted to puree the entire pot of soup and have it all nice and smooth.

This is when you add the cream cheese, just before blending. That way it mixes in fully, giving you that creamy tomato basil soup thats just the right texture.

    How To Make This Soup:

    This soup is extremely easy to make. Since all of the ingredients are already cooked and ready to use, theres not much to do except throw everything into your soup pot. Heres how I do it!

    Pour the vegetable stock and the canned diced tomatoes with the liquid, into a soup pot. Over medium-high heat, bring to a low boil.

    Add the cream cheese and stir into the soup. Continue to boil and stir until the cream cheese has melted into the liquid. Next, add the tomato soup, Italian seasoning, and ground black pepper. Stir to combine and bring the soup back to a boil.

    Reduce heat to medium. Add the frozen tortellini and stir. Continue to cook, stirring often so that the pasta does not stick to the bottom of the pot. Once the pasta is cooked through, turn off the heat.

    Add in the parsley and stir into the hot soup. Ladle the soup into shallow bowls. Top with a good amount of parmesan cheese and garnish. Serve immediately.

    This roasted tomato soup recipe is really pretty easy to make. Heres a quick rundown of the process, but for full instructions, reference the recipe card at the bottom of the post.

  • First, roast the tomatoes. Place tomatoes cut side up on sheet pan, drizzle with olive oil and sprinkle with salt and pepper. Roast for about 30 minutes.
