How I Lightened Up This Mushroom Soup Recipe:

  • First the cream and butter had to go, they are delicious thats for sure but the fat content, yikes!
  • For added flavor, I fried 2 slices of bacon drained them on a paper towel and reserved 1 T. of the grease. Next I sauteed the onions, garlic and mushrooms in the bacon grease.
  • Used my Parmesan Chicken Broth for added flavor .
  • For a deeper level of flavor, I added 1 T. white truffle oil at the end
  • Added cannellini beans to help give it bulk and a smoother texture if you cream it.
  • For more flavor I added a bit of Parmesan on top as a garnish to bring it all together.

Can mushrooms actually help with weight loss?

Besides providing a source of many nutrients, fiber and protein, mushrooms may have other benefits for weight loss, but research is still clarifying the relationship.

A 2015 study a traditional Chinese mushroom, Ganoderma lucidum, and gave this as an extract to mice who were being fed a high fat diet.

Researchers found the mushroom extract changed the gut bacteria in the mice and may hold future promise for helping people fight obesity.

Recent research with gut bacteria has shown that the type of bacteria in the digestive system may have an effect on weight regulation. Diet also influences what kind of bacteria line the digestive tract.

Weight loss may be further encouraged by shifting gut bacteria associated with obesity, and it looks like certain mushrooms may encourage shifting gut bacteria.

Researchers from this study conclude these results may suggest Ganoderma lucidum mushroom extract may have similar benefits in humans, but more research is needed.

It is also not clearly known if eating a diet high in other types of mushrooms would have a similar effect in these mice and even people.

The diet on mushroom dishes is wonderful! I took care of myself when the extra pounds already was about 10 and thanks to the mushroom diet I restored the former ideal parameters of the figure. Yes, I lost weight in one day, I achieved such results for 4 weeks, but I did not feel hungry, I was always full, ate favorite foods and effectively lost weight.

    The ingredients are very flexible. Try green onions at the end rather than sweet Vidalia in the beginning, add sugar snap peas rather than broccoli, use carrots rather than zucchini. Clean out your produce drawer.

    The amount of salt you add to this soup will vary based on how salty the brand of broth and soy sauce are. I added about 2 1/2 teaspoons total 1 teaspoon in the beginning and 1 1/2 at the end.

    Mushrooms have many health benefits and can often get overlooked because of their dull color. A diet rich in brightly colored fruits and vegetables is advised for many health benefits, and eating all the colors of the rainbow is encouraged.

    Just because mushrooms are pale in color doesnt mean they lack nutritional value. Mushrooms are low in calories, fairly high in protein and can provide a good source of fiber and many nutrients. Because of this, mushrooms can be considered good for weight loss.

    Mushrooms have gotten fanfare as a weight loss agent because some celebrities follow a diet known as the M-Plan. The M-Plan diet focuses on eating meals rich in mushrooms, and some celebrities claim to have weight loss success with this diet.

    However, nutrition experts suggest there is nothing extraordinary about mushrooms and weight loss. Rather, like other vegetables, it can take the place of higher calorie foods and help you feel full long after eating them.

    How Do You Make Mushroom Soup

    Making this Mushroom Soup could really not be any easier! Simply gather all your ingredients and slice and dice your veggies and get ready to make one of the yummiest soups you’ve ever had.

    The first thing I do is add my large soup pot to the burner and turn it up to medium-high heat. I add both the olive oil and butter and let the butter melt. Once it’s melted, I add the garlic and saute until it’s nice and fragrant.

    To the garlic/oil/butter mixture, I add the mushrooms, herbs, and Worcestershire sauce. I cook this all together for about 15 minutes or until the mushrooms are cooked through and have sweated out most of their moisture.

    At that time, I pour in the vegetable stock and let it simmer, cooking for another 10 minutes. I add the nutmeg, salt, and pepper .

    Finally, I add in the evaporated milk and skim milk and bring the soup back to a simmer. It’s done! That’s all it takes to make this fabulous, deep, rich-tasting Mushroom Soup.
