Chicken And White Bean Soup
A store-bought rotisserie chicken offers incredible versatility at mealtime. Here it makes a quick and flavorful homemade chicken soup. Instead of traditional noodles, this soup is made with protein-packed beans. Choose a rotisserie chicken with mild seasoningboth plain and lemon-pepper work well. Adding the wings and some bones to the broth adds richer flavor. For a burst of green, add a few handfuls of baby spinach or 2 tablespoons chopped fresh parsley right before serving. For classic chicken noodle soup, substitute ½ cup of egg noodles for the beans.

Senior Dietician Dr Krishna Priya gives us three soup recipes to help us cope with some side effects of cancer treatment.
Some cancer patients complain of loss of appetite. Sometimes, this can be a side-effect of the cancer treatment itself. Other times, it is related to tiredness and lack of activity. No matter what the cause, loss of appetite can lead to lower intake of nutrition and calories.
To keep yourself healthy and to give your body a chance to recover, you need to continue to eat sufficient amounts of food. Even if you are unable to eat large meals like you used to before, stick to eating a larger number of smaller meals.
- Forget dietary restrictions when you have lost your appetite. Eat whatever you crave, even if it is full-fat food.
- Try and exercise a little to improve your appetite. A short walk might do the trick.
- Try and have fruit juices and soups when you dont feel like having a full meal.
- Soups can be a great way to improve your nutritional intake when you are suffering from side-effects like a reduced appetite. They are easy to consume and to digest and can be packed with important nutrition.

Soups For Friend Undergoing Chemotherapy
My nice friend Amy has both Hodgkins and non-Hodgkins lymphoma. Her prognosis is excellent, but the treatment is horrible it seems that treatment for “liquid” cancers is much more awful, I guess because it’s not like they can do surgery to remove a tumor first, so the chemo has to do all the work? Anyway, she has to have 12 sessions and they really do take it out of her.
Everyone is pitching in, of course, and since my response to every crisis is usually soup, I decided to take her soup every week. I already brought vegetable soup, matzo ball soup, and chili at least once each, and I tonight I made a really kickin’ butternut squash soup. I also like to include a little extra with each batch, too.
I want to vary the choices a lot. I know how to make lots of soups, but I also know you will have really good ideas and recipes, too, and I know you like to help.
The chili was a mistake: she said acidic things like tomato and citrus irritate her mouth , and spicy is probably a bad idea, too.
And she needs LOTS of calories. I put cream, honey, and maple syrup into the soup tonight.
My kitchen is kosher, so I can’t use anything with pork or shellfish. I can’t mix meat and milk/butter/cheese, either, but I can often substitute meat stock with vegetable stock and milk with soy milk.

Why I Love This Recipe
My wife was diagnosed with Breast cancer in July of 19, and the chemo doctor suggested that if she’s having a hard time eating, she should load up on as much “chicken soup” as I can get in her. This is why there’s no potatoes or noodles in this, it is strictly Chicken with veggies. She has to avoid carbs.
But every time I make this, my family says it’s the best soup they’ve ever had. So give it a shot. Play with the amounts of spicing and even amount of veggies.
For instance a lot of times, I don’t take off 5 or 6 stalks of celery, I take the whole bunch, cut the top off about an inch down and thinly slice the whole bunch at the same time, green leafy stuff and all. It works nicely. Anyway, I hope you like this soup, and if you’re sick, it will help you get better!

Chicken With Ginger Broth
When its cold outside, this chicken dish will keep you warm. Chicken With Ginger Broth is not only delicious, its an ideal meal for those in cancer treatment. - 4 chicken breasts, skinless, bone-in
- 1 piece fresh ginger, peeled and thick sliced
- 3 leeks, white parts only
- 2 cups daikon radishes or turnips, cut into large cubes
- 3 dried shiitake mushrooms, soaked in hot water
- 2 cups spinach, washed

Creamy Potato And Leek Soup
- 12 tsp olive or vegetable oil
- 2 leeks, sliced
- 1 kg potatoes, peeled and chopped
- 5 cups vegetable or chicken stock
- ½ cup cream
Method: Heat oil in a large saucepan and cook leek until soft. Add cumin seeds and cook for 2 minutes. Add potato and stock to the pan and bring to the boil. Simmer for 2530 minutes until potatoes are tender. Puree in a blender or food processor until smooth. Stir in cream.

The key to the complex flavor is to saute the aromatics to kick-start their flavor and then to season every step of the way.
Another tip is to chop all of the vegetables about the same size so they cook evenly and are bite-sized. Its actually a pet peeve of mine when vegetable soup contains pieces that are too big to enjoy in one bite. Its worth taking the time to chop them perfectly. Best Soup Recipes For Preventing Lung Cancer

Lemony Chicken Soup Directions
Heat olive oil in a heavy bottomed pan on a medium heat, stir fry crushed garlic, onions and carrot until softening, add chicken stock and simmer for 20 minutes.
Meanwhile cook barley pearls drain and set aside
Add chicken, cannellini beans, and lemon rind to soup cook for 5 minutes and add cavolo nero and barley pearls simmer for another 5 minutes
Take off the stove and add chopped parsley and lemon juice stir through and serve immediately
Serve with crusty wholemeal wholegrain sourdough bread

How To Make Ahead And Freeze Cancer
This soup is perfect for making ahead and taking to a friend. If you want, just change the name to Immune-Boosting Soup if your friend has a cold. It has now been tested from fresh, reheated from the fridge as leftovers, and reheated after being frozen. It delicious and works great in all these situations!
If you want to deliver it to a friend as a fresh meal or freezer meal, you can deliver it in one of these freezer containers, including a freezer container with lid or mason jars . I love using mason jars, since the soup can be divided into single servings. Just be sure to leave at least 1 inch of headspace at the top if freezing.
My hope is that you can make this recipe for yourself and/or take it to anyone else who is battling cancer or an illness. This Cancer-Fighting Soup fights inflammation in the body and provides warmth and comfort when healing.
You may even want to add a word of encouragement to the container you deliver it in, too. I quickly scribbled out a few favorite encouraging Bible verses in sharpie on the freezer containers of the soup for Darcie.

How To Make Grandma’s Chicken Soup
Note: For this easy chicken soup, you can use homemade chicken stock or a good quality broth or stock from the grocery store.
2. When the chicken is done, remove it from the pot and coarsely chop, then add the chopped chicken back into the pot.
Note: You can purée the chicken right in the pot using an immersion blender, or use a food processor to purée the chicken before putting it back into the pot. Or just use a knife and chop the chicken very finely so there are no bite-sized pieces.
3. Stir in half-and-half, cream, butter, and salt and pepper. Using an immersion blender, carefully purée the soup until there are no chicken chunks.
4. Turn heat to low and simmer for a few minutes. Grandma’s Chicken Soup can be served immediately or will keep in the fridge for 3-4 days.
Tip: I have not frozen this soup and I don’t think it would freeze well due to the amount of cream.
If you love to cook and experiment with food, I caution you that this soup is difficult to make. You will be so tempted to add something. Celery, carrots, onion, thyme, whatever…you just want to put something else in that pot. But if you’re making Grandma’s Chicken Soup for someone who’s not feeling well, then don’t do it.
That’s it. Velvety, mellow easy chicken soup for the soul.
