What Can You Make With Gluten Free Cream Of Chicken Soup

A few months ago my sister-in-law called me because she was making dinner for a friend who had a kiddo with a gluten-intolerance and wanted to know what she could substitute for canned cream of chicken soup.

I’ve been thinking about developing this recipe ever since.

It is perfect for using in all of your favorite creamy casserole recipes.

I love using this gluten free condensed cream of chicken souprecipe in my gluten free tater tot casserole and gluten free green bean casserole.

You can make any flavor that you want by sautéing chopped mushrooms, celery, or cooked chicken in the butter before adding the rice flour.

Vegan Condensed Mushroom Soup

Casserole fans get ready because today Im bringing you my Vegan Condensed Mushroom Soup recipe! How fun is that? When I made my cream of mushroom soup recipe I received several questions asking if it could be used to make green bean casserole or other casserole type dishes. That recipe is too thin, so I decided to make a recipe designed specifically for casseroles. That said, you can totally use this recipe to make a delicious creamy soup too!

To thicken the soup I used regular old all-purpose flour but if you are gluten-free, check my recipe notes for an alternative. I also used vegetable broth powder as a hack to add that brothy soup taste without watering down the mixture. I like to keep it simple, but if you like you could also add other spices such as dried thyme, chili flakes, or even a tiny pinch of nutmeg.

Use the soup right away , or you can store it in the fridge for a few days, or even freeze it so you have it ready to go. This recipe makes just one batch but feel free to double or triple the recipe so you have multiple cans on hand.

All You Need For Homemade Condensed Cream Of Chicken Soup

  • Chicken Broth
  • Milk or dairy-free alternative
  • Seasoning like parsley, garlic and onion.

Yup, thats all it takes!

You can make a whole ca of cream of chicken soup for the cost of one tiny canned package. Ditch the cans and make your own.

The reason that inspired this discovery? I didnt have the ingredients on hand for our Gluten-Free Green Bean Casserole. I make this vegetarian by using Vegetable Broth.

Why Make Your Own

Dairy

The allure of a casserole is the whole dump and stir nature, it’s just so quick and easy! The problem is that casseroles seem to always call for a can of cream of ‘something’ soup! And as we know, those canned condensed soups are not gluten-free.

Sure, there are gluten-free versions you can buy, but there are a few good reasons to just make your own:

  • Cost: Gluten-free versions of anything are usually much more expensive than regular. This gluten-free condensed soup is much more economical. Why spend several dollars on something that you can make yourself for less than a dollar? For that reason alone it’s worth making it yourself!
  • Taste: I’ve made the mistake of buying a gluten-free condensed soup and the taste was so awful it completely overpowered the dish and ruined it. You can make this as simple in flavor or as jazzed up as you like! And this one tastes so good, you’ll want to eat it with a spoon.
  • Ease: Making your own condensed soup substitute will only take about 5 minutes, which is quicker than a trip to the store! The extra few minutes won’t really take anything away from the ease of making your casserole.
  • Customizable! If you’re buying a can of gluten-free cream soup from the store, you’ll probably only have a couple of options. Or, you can take this basic recipe and switch it up in many ways! You can go from basic cream of chicken to cream of mushroom or cream of celery. You can make this dairy-free or grain-free.

The first time I made this recipe for vegan condensed cream of chicken soup was this past summer. It happened by complete accident as I was initially testing some blender soup recipes that could be served cold.

As soon as I tasted it though, I was shocked how much it tasted like those cans of Campbells Cream of Chicken Soups. And, side note: Kinda funny since we just posted Ts veganized version of Campbells vegetable soup this past weekend. As it cooled, I noticed it even thickened up exactly like the condensed soups. Food magic!

Immediately, I began dreaming of alllll the cozy soups, stews, and casseroles I could make with this fantastic creation. That is, until I snapped back to the humid, sweaty reality that was my sweltering NE Philly kitchen on the hottest day of the year.

How To Make Homemade Cream Of Chicken Soup

  • Measure the milk and be sure it is COLD. Then, add the flour to the milk, right in the measuring cup. Whisk until the two are fully combined and no flour lumps remain. This will not work if you have warmed the milk. For flour or cornstarch to incorporate into a liquid, smoothly, the liquid must be cold.
  • Crush the bouillon cubes between your fingers and add them to the flour/milk mixture.
  • Add the salt, pepper, onion, powder and garlic powder. Stir to evenly distribute the ingredients.
  • Pour the seasoned flour/milk mixture into a saucepan. Heat the mixture over medium-high heat, whisking continuously. The mixture will thicken quickly. Whisking will prevent scorching and keep the soup smooth.
  • Once your homemade cream of chicken soup is thickened, remove the sauce pan from the heat and whisk in the butter.
  • Divide the mixture between two containers. Each half can be used as the equivalent of one can of cream of chicken soup.
  • Leftovers can be refrigerated or frozen . When thawing soup from the freezer, if you note that it separates as it thaws, simply whisk it back together and use as usual.
  • How does it get any simpler? In less time than it would have taken me to drive to the store one way, I have fresh, creamy homemade cream of chicken soup. Its my perfect time-saving solution on hectic days. Enjoy!

Does Regular Cream Of Chicken Soup Contain Dairy And Gluten

Recipe: Condensed Cream of Chicken soup GF

YES! Regular canned condensed cream of chicken soup has cream and butter and wheat flour . Those are the easy ingredients to understand! Theres also modified food starch which could contain gluten, and whey, which is most likely dairy based.

Plus, regular canned cream of chicken soup falls into the category of foods that I believe people should avoid simple because it has several ingredients that are highly processed and are hard to understand.

    How To Make Dairy

Heat the avocado oil over medium-high heat in a large skillet. Add the onion and sauté, stirring occasionally, until the onion is translucent, about 5 to 8 minutes.

Stir in the mushrooms and garlic and cover the skillet with a lid.

Cook, stirring occasionally, until the mushrooms have leached out much of their water, about 8 minutes. Remove the lid and continue cooking until most of the liquid has evaporated.

Pour in the canned coconut milk, dried oregano, nutmeg, and sea salt and stir well. Bring the mixture to a full boil, then add the flour and whisk well.

Continue cooking and whisking, leaving the mixture at a full boil, until it thickens to the same consistency as a very creamy soup.

Remove the cream of mushroom soup from the heat and set aside to allow it to cool.

Once cool, either use the soup in a recipe, or transfer it to a jar. Seal and refrigerate for up to 1 week.

Do note that the cream of mushroom soup becomes thicker as it sits. For most recipes calling for a can of condensed cream of mushroom soup, you will want the mixture to be very thick. Allowing it to boil long enough to thicken and also allowing it to sit and cool is what will give it that thick consistency.

    Can I Buy Dairy

In my research, Ive only been able to find one brand of cream of chicken soup that is dairy-free. Vivans Live again offers a cream of chicken soup and gravy mix option that is both gluten-free and dairy-free.

This is a dry mix that you add water to create a soup you can use in recipes to replace traditional cream of chicken soup.

You can look for it locally in the dry soup area of your grocery store, or find it on Amazon.

Its hard to believe that Thanksgiving and Christmas are right around the corner. The change in weather is a bummer, but darn it am I a sucker for a good hand cutout turkey craft, plus I got the most darling copper jingle bell garland that I cant wait to hang above our stockings when the time is right.

In the meantime, Im making soups. Thick and creamy, no-can-required cream of chicken and mushroom soups that are not only gluten-free but easily made dairy-free, and concocted from 100% fridge and pantry staples. The holidays are filled with reasons to create casseroles green bean casserole and Party Potatoes Deluxe immediately come to mind which usually call for store bought, canned creamy soups. A few problems though:

  • Store-bought condensed creamy soups are usually not gluten-free, and the GF ones can be hard to find/expensive.
  • They are PACKED with sodium. Ben has to watch his sodium intake and the canned stuff is a hard no for him. Theres 36% of your daily value of sodium in 1/2 cup of the leading brand of cream of mushroom soup!
  • Even the gluten-free store-bought condensed creamy soups contain dairy, which is a no-go for my dairy-allergic dude Lincoln.
  • We are a mess.

So we go homemade because not only is making these popular creamy soups at home a cinch, but its so much healthier and unbelievably delicious. This was the first of tens of dozens of spoonfuls of Homemade Cream of Mushroom Soup I ate straight from the jar. You guys will flip.

Can I Use A Different Milk Beverage

Coconut milk beverage is the drinkable version in large cartons, not classic fatty coconut milk in cans. So technically, yes, you can substitute another unsweetened plain milk beverage. BUT, I highly recommend coconut milk beverage. Something about coconut and cashew together seems to work to create a more neutral, appealing, creamy flavor. Other milk beverages will affect the flavor differently. And keep in mind that some milk alternatives, like oat milk, taste sweet. Try to avoid any added sweetness for the best results. Also, some milk beverages could separate or curdle. If it does, dont panic. Just whisk away.

Why Are There Cashews In This Dairy Free Cream Of Chicken Soup

If youve looked around at some of the other recipes on my website, then you may have noticed that I like to add cashews to certain recipes.

    Heres why

Cashews can add more body to the consistency and they contribute to a richer flavor overall.

This is especially helpful when youre making dairy free versions of recipes that are traditionally creamier and richer.

For example, in this Dairy Free Creamy Potato Vegetable Soup, I could have made a perfectly fine soup without using cashews, but by adding the pureed cashews, it makes the soup extra rich and creamy.

Its the same for this Dairy Free Cream of Chicken Soup. I first tried making the recipe without using cashews at all, but I wasnt satisfied with the flavor or texture. I had to use a lot more of the thickener , and the texture didnt turn out like I wanted. The flavor was lacking too.

Once I added the pureed cashews , it turned out just like I wanted!
